Frostbite Cocktail Recipe • Colorful & Refreshing! | Club Foody

Like many people, I have my favorite drinks according to my mood and/or the season. Besides martinis 🍸, my two regulars are CC (Canadian Club whisky) with ginger ale and dry red wine. On a hot summer day, I like having a Bloody Caesar or a Red Eye which is clamato juice mixed with light beer, similar to a Michelada.
 
Although these are pretty much what I drink regularly, there are others that I also like sipping. The ones I like breaking the routine with during the winter is Blueberry TeaBoozy Mexican Coffee, Buttered Rum, and Hot Toddy.
 
The Canadian winter 🍁 as well as upper parts of the states is pretty cold with lots of snow. Where I live, near Vancouver • British Columbia, it’s not too bad. Most of the time, the temperature is above 0ºC/32ºF but it rains a lot. There are not much outdoor activities we can do when it occurs.
 
There’s a chilling drink I couldn’t resist showcasing not just for its appearance but also for its name. It’s the Frostbite Cocktail! With its gorgeous, vibrant blue color, the combination of ingredients is so tasty! Mixed with heavy cream, this beverage is sure to warm you right up 🥰!
 
Like 99% of drinks, making this Frostbite Cocktail is very quick ⏳. Pour all the booze in the glass of the Boston shaker along with heavy cream and ice cubes, put the metal tumbler on top, tap to secure it, and shake it vigorously for 20 to 30 seconds. Strain the mix into a rock glass with 2 to 3 ice cubes… done!
 
In this recipe I use white Tequila but if you’re not a fan of this particular liquor, simply switch for plain Vodka. The rest of the ingredients stay the same: Blue Curaçao, white Crème de Cacao and heavy cream. If you want to make it prettier, garnish with a maraschino cherry 🍒 or rim the glass with blue sanding sugar.
 
When I see Frostbite Cocktail, this is exactly what winter looks like to me; arctic cold, icy and frosty! This refreshing mixology is perfect to sip by the fireplace 🔥 as a casual drink or for after-dinner just like my Chocolate Grasshopper Martini

Moroccan Harira Soup Recipe • Hearty & Healthy! | Club Foody

 

When the holidays are over, we’re pretty much back to our schedules except, it’s cold 🥶! January and February are no picnic especially if you live above the 49th parallel. Besides stews, another favorite here in Canada is a hot bowl of soup. There’s nothing more comforting when the mercury hits below zero!
 
After nearly 10 years, I posted over 3 dozen incredible soup recipes on the website and they keep coming. It can be a nice Creamy Tomato Basil & Parmesan Soup 🍅, Corn ChowderGarlic SoupCauliflower Cheese SoupFrench Onion Soup Gratinée, etc.
 
In my book 📗, soup with meat in it is a full meal and besides Slow Cooker Beef Barley SoupAvgolemono Chicken SoupLasagna SoupAlbóndigas • Mexican Meatball SoupSplit Pea & Ham Soup, here’s the latest one… my version of Moroccan Harira Soup!
 
Like I say in my video 🎥 intro – “this soup really sticks to your ribs!”. With beef cubes, vegetables, legumes, an array of spices and herbs simmered in a lovely beef broth and topped with vermicelli, this is a bowl loaded with deliciousness!
 
Originating in North Africa, this Moroccan Harira Soup can be made with either beef, lamb 🐏 or chicken. If you decide to go with lamb shoulder, switch the broth for chicken and besides cilantro and parsley, add fresh chopped mint… a ¼ cup at the most!
 
As I mentioned above, there are a lot of ingredients that go into this hearty soup. When it comes to celery, the leaves can be added to the dish. My celery heart 🥬 was lacking them but if yours has some, add them as they are packed with more vitamins and minerals than the stalk itself.
 
This one-pot recipe is one of my winter favorites 💖 not only because it’s robust but also because of its gorgeous seasoning! It doesn’t lack spices as there are a lot going in. It’s so worth it because it gives that deep flavor of richness in this soup!
 
As we know, legumes are very good for us 💚. They’re packed with fiber, vitamins, and minerals. They’re also low in fat, help with blood sugar control, digestion and weight management. They’re chickpeas and green lentils, both great food items to add to your diet.
 
To thicken the soup 🥣, I use a cornstarch slurry instead of the flour for a few reasons. First and foremost, it’s gluten-free. Second, it doesn’t need much to get the thickening result, and last, it gives a smooth texture to the soup without clouding it.
 
On the other hand, using flour will give you a slight earthier flavor while the cornstarch won’t. It’s a matter of preference. Either you go for a cornstarch or flour slurry, they need to be mixed in cold water 💦 to prevent lumps.
 
There are a couple options when it comes to the final main component. You can use vermicelli or spaghettini, broken into ½-inch pieces. Rice 🍚 is also another option. Long-grain rice is probably the most common ingredient but if using short-grain, the soup will be creamier.
 
Last but not least is adding herbs and lemon juice 🍋 at the end. As both herbs (parsley & cilantro) lose the flavor due to the heat, by adding a couple tablespoons at the end, it brings back their freshness. Also, I find that adding lemon juice gives a nice finishing touch by brightening up the soup.
 
During the harsh months of winter, Moroccan Harira Soup is exactly what we need. There’s nothing more comforting than a hot bowl of soup to deal with our cold Canadian 🍁 weather. Served with crusty bread, this is a delicious, filling and nourishing meal to enjoy…

Fattoush Salad Recipe • A Tasty Middle Eastern Dish | Club Foody

 

The first recipe of the year I like posting is a “salad”! As many of us like to begin a new chapter with resolutions, the most popular one is probably losing some weight. The best way to stick to the program is eating healthier by integrating more vegetables and fruits 🍒…
 
To continue Club Foody’s yearly tradition, here’s my version of this famous Levantine recipe… Fattoush Salad! With a healthy combination of fresh produce 🥒 along with a lovely homemade vinaigrette and some pita crisps, this can be served as an appetizer, a main course, or as a side.
 
There are certain salad recipes that are meant for a certain season like Cantaloupe Cucumber Salad or Salade Niçoise that are perfect for summer while Pear Pomegranate Blue Cheese and Buffalo Chicken Salad are suited perfectly for colder months ⛄. This featured salad is a great one to enjoy all year round!
 
One thing that is very distinctive about Fattoush Salad is the fried or toasted pieces of pita bread… I prefer toasting them. After cutting 🔪 a couple rounds in triangles, brushing them with olive oil and then liberally sprinkling Za’atar on top, they’re baked in the oven for 10 to 12 minutes or until golden.
 
These pita crisps remind me of Man’oushe but the quicker version of it. Both from Lebanese cuisine, these flatbreads use Za’atar. This Middle East spice blend is becoming more popular in the Western Countries 🌎 but if you can’t find it, here’s my homemade recipe… Za’atar Spice Blend
 
Another Middle Easter spice used in this featured recipe is found in the vinaigrette and its sumac. This ruby-red spice is made from ground sumac berries and other ingredients. It gives a nice lemony flavor 🍋 with a hint of fruity background.
 
These berries grow here in British Columbia and also Eastern Canada like Ontario, Québec, and the Maritimes. They’re often found along roadsides but some varieties are poisonous. As I’m not an expert to identify which kinds are safe, I simply buy the final product from any specialty store or online 💻.
 
When it comes to the salad, the beauty of it is to use whatever you have on hand. Of course, because I was filming it, I used different colorful produce like orange peppers but if instead, there’s green in your crisper, throw it in. For the crisps, it’s not necessary to use pita… other leftover bread 🍞 will do.
 
Colorful and tasty, this healthy Fattoush Salad is a great way to start the New Year! It’s loaded with yumminess 🥰 and an amazing recipe to enjoy anytime! David and I like it as a main course but nothing is stopping you from serving it as an appetizer or a side…
