Mint Jelly Recipe • Homemade Jelly for Savory & Sweet! | Club Foody

Every April or early May, depending on the weather here on the West Coast, David and I start our herb garden along with some fruits and vegetables. We don’t start them from seeds but buy them in those little containers with the herb already growing. From there, we transplant them… it’s much easier. There is one that we can leave outside all winter and it comes back each spring; it’s mint.
 
I have a wide selection of homemade condiments; from Sweet & Savory Homemade KetchupThai Yellow Curry PasteMornay Sauce to Strawberry Butter and many more… These really help to enhance the flavor in recipes or a great accompaniment for dishes such as my Mint Jelly!
 
As you know, Mint Jelly is typically paired with lamb and in particular with Lamb Chops or Roasted Leg of Lamb. I also like to mix some jelly with my horseradish and rub it on pork roast. Another great use for this condiment is to make Mint Thumbprint Cookies along with Strawberry Thumbprint Cookies for the Holidays. It is such a beautiful festive presentation… You can bake other cookies like linzer and sandwich.
 
While making it, many of you will expect to see that green color in the jars at the supermarkets and restaurants. Don’t be surprised to see a golden honey color instead. The simple way to achieve that “commercial” green color is to add a few drops of natural food coloring.
 
Making your own Mint Jelly is quite easy plus you’ll be avoiding the “commercial food coloring”. Also, it is quite economical to make from scratch and these little jars are a great gift to give to your friends and family this Christmas…

Dulce de Leche Cupcakes Recipe • Simply Scrumptious! | Club Foody

Overall David and I don’t really have a sweet tooth but we do have our moments. It usually comes as a surprise, as a wave and an intense craving… When it does, we simply need our sugar fix. The problem is it’s just the two of us in our house so when it happens, I have to make something on a smaller scale.
 
I’m more of a “muffin” person but once in a blue moon I don’t mind baking some cupcakes with the icing on top. I already have a few recipes like Red Velvet, Maple Bacon, Chocolate with Strawberry Icing, Mango Vanilla, and the one I’m sharing with you today… my Dulce de Leche Cupcakes! OMG! These cupcakes are so d-e-l-i-c-i-o-u-s!
 
The first thing to make is the dulce de leche. Although quite close to each other, caramel and dulce de leche are not the same. One is made with sugar, heavy cream and butter, while the other one is made with sweetened condensed milk and simmers for hours to achieve that thick consistency that caramel has. Are they similar in taste? I would say “yes” with a minuscule difference in flavor but not enough to be detected unless your palate is sharp like David’s…
 
It’s also safer to make Dulce de Leche than caramel. A few years ago, I shared my Salted Caramel Sauce with you. If the sauce is left on a couple minutes too long, it would have a burned taste to it. To make Dulce de Leche, the can has to simmer gently for hours… that’s all!
 
Without taking all the credit, these Dulce de Leche Cupcakes were initially my mother Nicole’s idea. She baked a few recipes in the past using simmered sweetened condensed milk. She made amazing pies, cakes and cookies with this ingredient. While we were on the phone talking about it, she suggested that I should try making cupcakes. That was a great idea!
 
With a beautiful buttercream icing and a touch of “dulce”, these Dulce de Leche Cupcakes are just sublime! It’s a delicious way to enjoy this popular Latin American flavor in cupcake form… Thanks Mom!

Tuna Tataki with Avocado Slaw • Tasty Japanese Dish! | Club Foody

I’m a huge sushi, sashimi and tataki fan, I just love it! After years of encouraging him, David slowly started enjoying it more as well. I am very happy because it gives me the chance to make my own recipes. Next year, I’ll be posting more of them on the blog but meanwhile enjoy this incredible one… my Tuna Tataki with Avocado Slaw!
 
This appetizer recipe is so delicious! The star of the dish is definitely the avocado slaw. It has a great balance of flavor which compliments the tuna. The ingredients blend together so well making it fresh, creamy and spicy all in one bite. This Tuna Tataki with Avocado Slaw is also quick and easy to make… a great dish to serve when entertaining.
 
Now let’s talk about one specific ingredient; the Kewpie mayonnaise…
Can you use regular mayo? Of course but here’s the difference between regular mayo and the Japanese one. We use white vinegar and an entire egg to make our western mayonnaise – that is how I make mine from scratch – while the Japanese mayo uses only egg yolks and rice vinegar. The taste of Kewpie mayo is sweeter and a little tangy with a rich egg flavor. I find that theirs compared to ours (Western) is much creamier. As this blog is published, I’ve been trying to reproduce Kewpie mayo from scratch and I’m not quite there yet… I’m working on it so I might surprise you one day with a homemade Japanese mayo recipe… stay tuned!

Note: You can mix the tuna (cut into smaller pieces) and slaw together instead of serving it separately like I did on the picture. This would make a nice fresh, cool tuna tataki salad.

Asparagus Summer Salad • Healthy, Bright & Colorful! | Club Foody

Each summer, starting at the end of June, I buy asparagus almost every week. They are small, crunchy and sweet; just the way I like them. In my opinion, when the stems are too big, they are “woody”. Some of my favorite asparagus dishes include my Cream of Asparagus Soup, Pancetta Vegetable Frittata, Pickled Asparagus, Mediterranean Pasta, Asparagus Fish Fillet plus a few sides like my Bacon Wrapped Asparagus, Grilled Asparagus, Asparagus with Maltaise Sauce or Baked Asparagus with Cheese, as well as the featured recipe… my Asparagus Summer Salad!
 
With a mix of fresh seasonal ingredients, drizzled with a light dressing, this Asparagus Summer Salad pairs wonderfully well with any protein. Citrus Marmalade • A Tasty Breakfast Spread! | Club Foody

I enjoy canning and when I start to run out of my preserves, I roll up my sleeves (that depends on which season it is) and make a new batch. Homemade Dijonnaise Recipe • Great Versatile Condiment! | Club Foody

Living in Toronto, I was used to cooking with certain ingredients but since moving to the West Coast, there are certain ones that can be hard to find or even worse… not available at all! Tired of feeling like I was looking for a needle in a hay stack, is when I decided to make them myself such as Red Jalapeño Peppers Stuffed with Cream Cheese & FetaMerguezCretonHomemade Mixed Spice ~ Épices MélangéesTourtière as well as my Homemade Dijonnaise!
 
I never thought that making this condiment from scratch was so easy. The flavor is definitely much better than the commercial ones. It elevates your recipes just from the freshness of the ingredients especially when making your Mayonnaise from scratch. Like my ChutneySweet & Savory Homemade Ketchup and others, this Homemade Dijonnaise is another great condiment recipe…
 
I use my Homemade Dijonnaise recipe in many dishes such as my Caesar SaladCreamy Bacon Potato SaladChicken à la Dijonnaise, sauce for pork, Deviled Eggs, and many more. It’s also a nice ingredient for marinades and salads dressings or even using it as a sandwich spread.
 
You don’t have to live in the middle of Timbuktu to force yourself to make this lovely condiment. It’s so worth it to take that little extra step and make your own. It’s a great condiment to have on hand because it’s so versatile plus you’ll be saving a lot of money by making it from scratch. Extract the Most Juice from Citrus Fruits • Tips & Tricks | Club Foody

All year round there are citrus fruits in our kitchen. One of the first things I drink in the morning is freshly squeezed lemon juice in hot water… it’s so refreshing. From savory to sweet, in many of my recipes I use citrus juice which gives such a great flavor to the dish. I also use some in beverages such as my Homemade Lemonade.
 
Today I’m not reinventing the wheel! We all know how to extract juice but if you want to Extract the Most Juice from Citrus Fruits, here are some kitchen tricks for you…
  • First, the fruit has to be at room temperature.
  • A method I like to use is placing it in a bowl of hot water from the tap (not boiling) and let it sit for about 1 minute.
  • Another one is the microwave. Place your citrus fruit in a microwave-safe bowl and microwave for 15 to 30 seconds on High (depending on the size of the fruit; i.e. lime is about 15, lemon between 20 to 25 and orange about 25 to 30 seconds). This is great especially when making Key Lime Pie and you need to extract as much juice as possible.
  • The fruit can also be rolled back and forth on the counter, applying heavy pressure with the heel of your hand. This helps to burst the segments inside. I like to use this classic technique if I just need a little bit of juice and don’t use a juicer.
  • Of course, here’s the obvious method… a juicer! There are three to choose from; one is a manual citrus juicer with the reamer. There’s the hand held press juicer and the other is a power juicer. You can find them in the “SHOP” section of Club Foody.
  • And last but not least is using a fork on the flesh of half of fruit and moving back and fork twisting the utensil.
 
When cooking, you definitely want to extract the most juice from citrus fruits and with these tricks, you’ll definitely be able to get more out of it!

Croque-monsieur Montréal Style • French Sandwich | Club Foody

A sandwich is a sandwich you might say but depending on which country you visit, each has their own favorites. For example if you land in Cuba, you’ll have to taste their Medianoche or the famous Tripleta in Puerto Rico. When going to Italian bars, don’t be surprised to see Tramezzino served while enjoying a fine glass of “vino rosso”. In Asia, there’s the popular Báng mì from Vietnam, Katsu in Japan or Rou jia mo in China.
 
I can go on and on but if we focus on one specific country such as France, there are a few famous ones you’ll find like Croque-monsieur or Croque–madame and Jambon beurre. There’s also a Club Foody twist on one of them… my Croque-monsieur Montréal Style!
 
What’s different from the “original” one? Not much except I add one more deli meat; Montréal smoked meat… yeah baby! Also some chef’s use butter… I use béchamel sauce – inside and outside… (you’ll understand when watching the video). I know, I know! It’s not conventional and that’s why I said that I put a spin on this classic…
 
This Croque-monsieur Montréal Style is so flavorful and with the added ingredients, it makes this sandwich taste even better. When the weather is pretty warm and you don’t feel like cooking a complicated meal, this is the perfect recipe for you. I like to serve it with a nice salad and drizzle on some lovely homemade vinaigrette.
 
This summer don’t compromise on flavor and try this Croque-monsieur Montréal Style sandwich. As simple as it may sound, you’ll be pleasantly surprised by its flavor and understand why this is a popular item at most of the French Bistro’s in Paris, Québec or… at Club Foody (now I have to open up a resto…)

Piña Colada Ice Cream • Tropical Delight | Club Foody

When we go on vacation to tropical destinations, we like trying cocktails that we would have never had back home such as Mai Tai, Piña Colada, Blue Hawaii, Singapore Sling, etc. They are delicious, packed with flavor and set the tone for a relaxing and fun vacation!
 
I like them all and although I enjoy them when we are away, back home I usually drink the same old stuff. To break the pattern, I wanted to take one of them and create a recipe with it. The one I chose was Piña Colada because that’s the one I’d most likely end up drinking when I’m at a tropical destination. After many, many, many – did I mention “many” – attempts, I finally got it right!
 
In this episode, I’m sharing my Piña Colada Ice Cream with you! Well, I can go on and on about how tasty, creamy, velvety and beautiful this ice cream is, which by the way it is, but the most important factor I really wanted to share is this cold treat tastes exactly like a Piña Colada!
 
This original cold treat is perfect on hot summer days. It is also a delicious change when entertaining. Instead of the same old flavors of a banana split which are chocolate-strawberry-vanilla, make it different with this Piña Colada Ice cream and other original flavors like my Passion Fruit Ice Cream recipe…
