Caponata Recipe • A Delicious Healthy Sicilian Dish! | Club Foody

 

When we get to the end of summer, for us gardeners 👩‍🌾👨‍🌾 out there, it’s harvest time! Depending on your garden, you might have a mountain of tomatoes 🍅, zucchinis, peppers, herbs 🌿, and so on. From there, there are plenty of recipes you can make to use them up in like Stuffed PeppersMarinara SaucePestoStuffed Cabbage Rolls, etc.
 
There are a few yearly recipes I love making and it’s either my Pisto Manchego, Ratatouille or this one… Caponata! This Sicilian dish is incredible! Using eggplant 🍆, onions, celery 🥬, peppers, tomatoes, and other delicious ingredients, this is an amazing versatile recipe to have in your repertoire!
 
I say “versatile” because it is. It can be a light, healthy meal to enjoy but it’s also a great appetizer to serve along with crostini. This can be used as a side dish for fish 🐟, chicken 🐓, or pork 🐖. I also like to serve it with my charcuterie board… it’s wonderful! Spoon in a good amount of this deliciousness for your morning omelets… yum!
 
The first ingredient that really stands out in this Caponata is eggplant 🍆. This nightshade vegetable provides a great range of nutrients, fiber, and antioxidants which one of them is nasunin, a powerful antioxidant. Found in the eggplants skin, it helps to decrease the amount of iron in the blood – too much of it is a risk factor for heart 💔 disease – and also helps to protect brain cell membranes from free radicals. I always leave the skin on for these reasons…
 
In the video, I use Roma tomatoes 🍅 but depending on what you grew over the summer, other kinds such as San Marzano, Brandywine, Sungold, Beefsteak, and others are just fine. I wouldn’t use cherry tomatoes… they’re not the right kind for this recipe.
 
Which ever kind you decide to use, blanching your tomatoes makes the dish better. It’s not complicated and only takes a few minutes ⏳ to do. If you’re not familiar on how to do this cooking method, here’s a great tutorial on the subject… Blanching Tomatoes for Cooking & Canning • How to
 
I like using my stuffed Queen green olives for two reasons; I always have some in my fridge and second, I like the pimiento pepper inside… it’s a two for one kind of a deal 😉! On the other hand, feel free to use other varieties of olives such as the Italian Cerignola, Liguria, Castelvetrano, or from other countries like Picholine (France), Manzanilla or Gordal from Spain.
 
Caponata is the perfect “end of summer” recipe. It’s a flavorful and healthy 💚 way to savor your vegetables! It’s a wonderful Sicilian dish to enjoy as an appetizer, a main course, or as a side for your protein.

Blackened Grilled Fish Recipe • A Summer Favorite! | Club Foody

 

David and I love barbecuing but let’s admit it, we’re fair-weather barbecuers. If it’s chilly or wet outside ☔, we stay in and don’t venture on the patio to grill… plain and simple! Is it the fact that we’re getting older and enjoy being warm instead of cold? Perhaps…
 
Most of my grilled recipes can also be done indoors but there are still a few that strictly require the “barbie” – the BBQ 🔥 not the movie 🎬! I think of any of my rotisserie chicken recipes, Grilled Jalapeño PoppersFire Roasted SalsaPacific Coast Salmon, and more including this featured one… Blackened Grilled Fish!
 
This recipe is incredible! Brush with a butter-lemon 🧈🍋 mixture, the fillets are coated with my Creole Seasoning Mix and then grilled on a heavy cast-iron griddle or skillet over high heat for a few minutes per side… done! It’s a fast and easy way to enjoy your favorite fish and outdoor cooking.
 
As most grilled recipes can be done inside, I highly don’t recommend to make this Blackened Grilled Fish inside. It creates a lot of smoke so your kitchen will be filled with it plus the chance of the fire alarm 🧯 going off is pretty high. If you don’t own a barbecue, make this delicious recipe on your next camping adventure.
 
Most and foremost, to be successful with this recipe is to make sure you choose the right fish 🐟 for it. Any firm fish like red snapperhalibut, catfish, cod, mahi-mahi, grouper, tilapia, pollock, salmon, bass, and so on are a great option. I normally use 4 fillets of 6 ounces each.
 
Is it spicy?
Yes… but so flavorful! Using my homemade Creole Seasoning Mix, the fish fillets come out with a nice smoky taste with some zip! Depending on your heat tolerance 🥵, you might find them just right – I personally find it spicy but once in a while, I don’t mind it. To tame it down, I brush more butter 🧈 on my fish and make sure to squeeze some lemon juice on top. I serve it with potato salad or rice.
 
This Blackened Grilled Fish is a tasty outdoor recipe! Very easy and quick to make 👩‍🍳, enjoy your favorite fish at your next backyard party or when you go camping ⛺… it’s the perfect recipe for these occasions!

Fluffy Blueberry Pancakes Recipe • Berry Delicious! | Club Foody

 

David and I have moved on from strictly drinking just coffee ☕ in the morning to having some breakfast! It’s strange because both of us enjoy its food items… what’s not to like! There’s another popular dish that we really enjoy and it’s our nice and Fluffy Blueberry Pancakes! With a warm blueberry burst, these are incredibly delicious! They’re also quick and easy to make 👩‍🍳. This is another tasty way to enjoy these berries. On the same note, here’s a great way to have them last longer… Berries • How to Keep Them Longer
 
The recipe is pretty straightforward. After making my Homemade Pancake Mix recipe, blueberries and lemon zest 🍋 are added to the batter. As you know, lemon and blueberry go well together and just that little amount of zest wraps the mixture up nicely plus gives some freshness to it. This is something you won’t get when buying prepared mixes at the grocery store.
 
It honestly doesn’t take too much time ⏳ to make these Fluffy Blueberry Pancakes; 10 minutes to prep at the most and 5 minutes to cook them. What takes a little longer is to let the batter rest for 15 to 30 minutes – the longer, the better. Why? – you ask. To make the pancakes lighter and fluffier, it’s important to allow the flour to fully absorb the liquid plus it gives the gluten a chance to relax – it’s the same idea when making bread 🍞 or pizza dough.
 
Light inside and golden on the outside, these Fluffy Blueberry Pancakes are the perfect weekend breakfast to serve your family! Served warm with a knob of butter 🧈 and maple syrup, this is a scrumptious way to start your day!

New England Lobster Rolls Recipe • Simply Delicious! | Club Foody

 

During summer 1985 when I just bought my 1981 Dodge Colt 🚗, a friend of mine and I went to Ogunquit in Maine. We had a blast! We met so many great people and also savored some incredible food. This is when I had my first New England Lobster Rolls and have been making them ever since.
 
As a lobster lover, this sandwich is out of this world. With New England-style hot dog buns, a combination of ingredients and of course, lobster 🦞 which is the star of the show, this is the ultimate recipe to enjoy at the end of summer.
 
My late friend Brigitte (boy do I ever miss you, girlfriend!🙁) was from New Brunswick and used to go to the annual Shediac Lobster Festival. One day, I wanted to surprise her with these New England Lobster Rolls. When she arrived at home, there was a nice bottle of Pinot Grigio and soon after her arrival, I served them. She called them “guédilles au homard” which is the French Canadian name.
 
Whichever name you use, the best hot dog buns for them are the New England-style also known as top-loading buns or Frankfurt rolls. They’re ideal when toasted or grilled. The side-loading buns are what we mostly use when we have hot dogs 🌭 and are steamed.
 
Depending on where you live, you might have difficulty finding the New England-style buns. I couldn’t find any here on the West Coast therefore my mother Nicole, who lives in Québec, is my provider! If you don’t have anyone that can get you some, the next alternative is to make your own 👩‍🍳 by buying a New England Hot Dog Pan.
 
Let’s talk about Miracle Whip. For those of you who lift your nose at this ingredient, adding some will bring the mixture together. Mayonnaise is rich and tangy while Miracle Whip has a blend of spices such as mustard, paprika, and garlic 🧄 plus it contains sugar. By adding some to the lobster mixture, it gives another layer of flavor. Also, Miracle Whip has a lower fat contain versus its counterpart making it a “healthier version”.
 
Ready in 15 minutes ⏳, these delicious New England Lobster Rolls are the ultimate sandwich! With a beautiful mixture of flavor served in toasted buns along with potato chips, this is the perfect meal to enjoy this summer.

Prosciutto e Melone Recipe • Quick & Easy Appetizer! | Club Foody

 

I’m a gourmet not a gourmand. I enjoy eating fine food and take pleasure trying new dishes and ingredients while discovering new flavors. All my life I’ve been that way and it has been a nice culinary venture for my palate and creativity… 🥰
 
I started exploring many ethnic cuisines in my early 20s’. It was exciting discovering new taste sensations and soon this hobby became a passion. I’ve experienced sensational dishes but lots of boring ones as well. Without feeling completely disappointed, this is when I tried to figure out 🤔 a delicious way to elevate them.
 
Here’s something that might shock you…
I’ve never been a big fan of Prosciutto e Melone for one simple reason… boring 🥱! As you know, I’m all about flavor and I always thought it was “blah”. To make it more interesting, I had to think of something to elevate this super easy appetizer… Tada!!! I did it!
 
Prosciutto e Melone is the simplest and yet easiest Italian appetizer to make 👩‍🍳. The combination of prosciutto and cantaloupe isn’t bad; there’s saltiness and sweetness in one bite. Still, there’s never been something that I went “oooh and aaah” for until I made it more interesting…
 
The basic recipe is the same; wrap the melon wedges with slices of prosciutto… done! Where mine deliciously differs from others is the glaze that I drizzle over. I combined balsamic vinegar with honey 🍯 and a dash of cayenne pepper just to give some depth to it. Without changing the taste, it complements the fruit and pork.
 
I use Prosciutto di Parma but other times, I enjoy other prosciuttos such as Toscano or Di San Daniele. Another option is using Serrano Ham 🐖 which is leaner than the Italian prosciuttos. When it comes to balsamic vinegar, I don’t use my aged ones as it’s blended with other ingredients. It’s like using a Louis Roederer Cristal Brut Rosé Millesime 🍾 when making Aperol Spritz… okay maybe not as dramatic but you get the idea!
 
With a tasty dimension to the appetizer, try my version of Prosciutto e Melone! It’s an amazing summer recipe perfect for entertaining. With the added glaze, this Italian classic is sure to please your taste buds 😋.

Lemon Couscous Recipe • Quick & Tasty Side Dish! | Club Foody

 

Most of the time, we need a side dish to compliment our main course. It can be a saladbread 🍞, friesricevegetablesbeans, and so on. It doesn’t have to be complicated! What about a side that is probably the fastest recipe ever… intrigued?
 
Lemon Couscous!
This is my go-to recipe! Inspired by African cuisine, this side is light, bright, and so tasty! From start to finish, it takes less than 15 minutes ⏳ plus it pairs so well with many proteins. This recipe is quicker and easier to make than most commercial side dish brands out there.
 
To make it versatile, I like to play with the ingredients depending on what I’ll be serving it with. Instead of lemon, I use orange 🍊 – it’s amazing with fish or chicken. Swap parsley for cilantro, dill, or mint. Add some spices or nuts to it. When it’s time to serve, sprinkle a little bit of cheese on top.
 
Couscous lands somewhere between pasta and grain without being strongly categorized in either group. It has its own field. There are several types of couscous but the most common ones are Moroccan Couscous, Pearl Couscous also know as Israeli Couscous, and Lebanese Couscous. Although made of durum wheat and ground into semolina flour, they still differ from one another.
 
– Moroccan Couscous is the one I use most of the time and in this Lemon Couscous 🍋 recipe. This is the tiniest granules of all and for that reason, it cooks the fastest. It’s a great option when time is limited.
– Pearl Couscous aka Israeli Couscous falls more into the “pasta” category and very similar to fregula (also spelled fregola or fregola sarda). It’s chewier and larger than the Moroccan type therefore it takes longer to cook.
– Lebanese Couscous aka Mograbiah (also spelled Mograbia or Moghrabieh) has the largest granules of all of them. Roughly the size of a pea with a chewy texture, it takes the longest to cook.
 
Light, fresh with bright flavor and extremely quick to make, this easy Lemon Couscous is a delicious choice 🥰! It’s a tasty change from your typical rice, pasta or potato side dish. After trying it, I’m sure this will become your go-to recipe as well…
