Greek Salad Dressing Recipe • Tasty & Versatile! | Club Foody

 

When the weather warms up, it seems like everyone is happier. We want to be out and about, enjoy the outdoors, being more physically active and eat healthier. Salads tend to be eaten more so during the warmer months. I totally understand why with the abundance of fresh produce during that time.
 
Depending on the salads, we might use vinaigrettes or dressings. So we eat better and healthier but some will go ahead and buy these condiments at the store instead of making them from scratch. It takes a few minutes to make homemade and they definitely taste better than the commercial ones. A few more good reasons to make them in the comfort of your kitchen is you’ll be saving a lot of money plus you’re in control of the ingredients – less salt, add more zip to it, etc. Also the ingredients are fresh and there are no preservatives or artificial colors & flavors… healthy bonus!

This dressing is so earthy as well as wholesome! With great ingredients, you can enjoy this flavorful condiment anytime you want! When making this recipe, I use my Greek seasoning. Same thing here… By making your own spice blend from scratch, you can recycle your spices before they go off plus there’s more intensity in the blend without the insane amount of salt added in the commercial ones. It’s a win-win situation all the way!
 
For my dressings or vinaigrettes, I like to make them in a 2-cup measuring cup because when it’s time to serve, it’s easier to pour over the salad. Of course, if you have guests over, I’m sure you’ll be transferring this healthy Greek Salad Dressing into a decent serving boat.
 
I love eating salads because they’re so good for us. With the appropriate condiment like this Greek Salad Dressing, it will make this healthy meal even healthier. Besides greens, I use it on my Greek Tuna Pasta Salad as well as my regular Greek Salad. Tasty and versatile, this condiment can also be used as a marinade for pork or chicken…

Baked Salmon with Dill Sauce Recipe • Quick, Easy & Tasty! | Club Food

 

Who doesn’t like a 30 minute or less meal? Of course we all do! With our crazy busy schedules, many nights it can be a challenge when it comes to preparing dinner. I have a wide variety of delicious recipes like my Zucchini Pork PenneOrzo with Chicken & AsiagoChipotle Chicken Tortilla PizzaPrawn Saganaki, and many more including a bunch of salads and sandwiches.
 
One protein that is usually pretty quick to make is fish. I’m thinking of Mediterranean Fish Fillet with TapenadePacific Coast Salmon on the BBQPanko Breaded Fish FilletGrilled Fish TacosRed Snapper en PapilloteSole Almondine or MeunièreTarragon Limoncello HalibutFilet-O-Fish Sandwich, etc. as well as this featured one… Baked Salmon with Dill Sauce!
 
This recipe is just fabulous! I season the fillet with lemon pepper and salt then transfer it to the oven for 15 minutes although it can also be grilled on the BBQ. While it’s baking, I make the sauce… see, that’s how fast it is. It’s a nice recipe to enjoy when time is in short supply or when we just feel lazy and don’t want to spend too much time prepping and cooking.
 
Of course, what really makes this dish is the sauce. I use a few ingredients including Miracle Whip. I’m always surprised when people lift their noses to this particular ingredient. Yes, mayo is good, but Miracle Whip adds some extra zip to the recipe. Can you make it and substitute mayo? Sure but don’t blame me when your Baked Salmon with Dill Sauce still needs more oomph…
 
Flaky, light and so flavorful, this is the perfect quick recipe to make. I like to serve my Baked Salmon with Dill Sauce along with Herb & Butter Rice, some steamed vegetables and a few lemon wedges… yummy!

Michigan Hot Dogs Recipe • Definitely A Must Try! | Club Foody

 

When I was a child, my family loved going to Lafleur Restaurants. It was and still is a fast food chain. Their menu is pretty abbreviated; hot-dogs, burgerscorn dogsfriespoutines, pops, and water… that’s all. There’s one item from the menu that I made for David a few years ago and it actually became one of his favorites… It’s Michigan Hot Dogs!
 
What? Michigan???
It’s basically a regular beef hot dog in a nice warm bun topped generously with a beautiful meat sauce and for garnish, a generous drizzle of yellow mustard and some chopped white onions. It’s a tasty finger food! It’s similar to a Coney Island Hot Dog but with different ingredients.
 
Summer is about picnics and backyard parties. As much as hot dogs are fun to make, they can get old in a hurry! Making a tasty meat topping changes the whole experience of having what we call in French “un chien-chaud”. It’s different and soooo delicious… I kid you not!
 
Obviously the sauce is what makes the dish. If I can describe it the best, I would say it’s sweet, tangy and tomatoey with a little zip to it. The secret for this flavorful sauce is to cook it down slowly until the liquid is all evaporated and it turns into a thick consistency. It’s easy to make and also freezes very well.
 
Technically, real Michigan Hot Dogs are not served on regular hot dog buns but rather on New England buns, the same ones used for Lobster Rolls. In Québec and Ontario they are easy to find but here on the west coast, I can’t find them anywhere. When I filmed this recipe last year, I didn’t have any on hand – my mother became my supplier – so I had no choice but to go with the regular hot dog buns. If you’re in the same situation as me, it’s okay, it’s not a big deal…
 
As much as I try having a good diet, once in a while, it’s nice to have some “junk” food and these Michigan Hot Dogs fit the bill. This summer, bring your favorite finger food to the next level by making this delicious recipe…

Greek Lemon Rosemary Potatoes Recipe • Simply Delicious! | Club Foody

 

It’s rare when there’s no side dish served with the main course. It can be anything from vegetables, rice, pasta, bread and so on. When it comes to veggies, there’s a popular starchy one that is used often worldwide because it’s so versatile and can be prepared in many different ways. I’m talking about potatoes…

Today’s featured recipe is a favorite of mine and it’s Greek Lemon Rosemary Potatoes! Since I can remember, I’ve always enjoyed Greek potatoes. The first time I made it, of course I had to enhance the dish by adding extra ingredients. I have to say that my version definitely has a boost of flavor!
 
First, I soak the potato wedges for 1 hour which makes them crispier after cooking. I also make a seasoned dressing that is poured over them before being transfer to the oven. I also add some fresh rosemary which gives an amazing taste to the dish. Can you use dried instead? Sure but cooking with fresh ingredients makes everything taste better. To achieve crispiness with a nice golden brown color, we have to remove the potatoes from the heat, flip them, return the dish back to the oven and repeat again later. This tedious task is done about 5 times but it’s so worth it! For the last 5 minutes when they’re under the broiler, you can let them bake longer but keep an eye on them as they burn easily at this point.
 
These Greek Lemon Rosemary Potatoes are so flavorful! I like to pair them with my Greek Ouzo Pork Kebabs but they’re also a great accompaniment for other proteins like Rotisserie Chicken, steaks, Lamb, and others.
 
Crispy on the outside and tender and moist on the inside, these Greek Lemon Rosemary Potatoes are sure to please everyone. It’s an easy recipe to have in your folder and I guarantee you they’ll be a “hit” every time you serve them…

Deli Burgers Recipe • Deli-cious Grilled Goodness! | Club Foody

 

When May finally gets here, I have a simple equation: nicer weather = BBQ season. David and I love grilling and every chance we have, we fire up the barbecue to make one of our delicious recipes like Greek Ouzo Pork KebabsGrilled Tuna SteaksFire Roasted SalsaRotisserie ChickenLamb KoftaCreole Shrimp & Andouille Skewers, and so on.
 
Of course, there are the popular ones like burgers and hot dogs but if I have to pick between the two of them, I’ll definitely go with the first one. I really can’t stand the fast food ones and prefer making my own. I think of my CaliforniaHawaiian TeriyakiBlue CheeseItalian or Mexican ones, Bronto and Smoky Porky! Let’s add another mouthwatering one to this list… my Deli Burgers!
 
What?
This comfort food is made with three kinds of meat; beef, Montréal smoked meat and Black Forest Ham! Believe it or not, the combination is absolutely “bang on”. It also comes with a beautiful mustard sauce made with mayo, prepared mustard and horseradish. You might think these Deli Burgers are odd but let me tell you that the results are amazing!
 
When I make them, I usually form 4 patties – they’re big boys! They’re over half a pound each but you can always make them smaller… your call! I chill them for about 1 hour to let the flavor blend together. When 60 minutes is up, I bring them back to room temperature – they cook more evenly that way – and turn the barbecue on until it reaches 500ºF. Grill them 6 to 7 minutes per side, add my hamburger buns a few minutes before the burgers are done and top the patties with processed cheese… voilà!
 
With three different kinds of meats along with a nice mustard sauce, these Deli Burgers are deli-cious! This is an incredible and original recipe perfect for BBQ season. They are sure to please your guests at your next backyard party…

Fish Rub • Homemade Blend - Tips & Tricks | Club Foody

 

BBQ season is finally here and I like to get myself ready for it. I make sausages like Hot ItalianMerguezGarlicChorizo, and so on that I freeze for later use. I also make my Teriyaki SauceBBQ Sauce for Chicken, the Caribbean one and others. Another thing I make sure to have on hand is my homemade blends. It can be my Old El Paso Taco SeasoningCreole SeasoningZa’atar Spice Blend and many others including this one… my Fish Rub • Homemade Blend!
 
This is so easy to make and will definitely enhance your fish. With a gorgeous combination of spices such as chipotle chili, cumin, paprika, ginger and others, this is certainly a nice recipe to have on hand. I use it when I grill any white fish, salmon, swordfish or even trout. It’s also delicious on prawns. I use this when I make my Grilled Fish Tacos… yum!
 
This Fish Rub • Homemade Blend is an excellent one for this season. After mixing the ingredients very well, it can be stored in an airtight contained for 5 to 6 months or more in a cool, dry area. The beauty of this spice mix is it doesn’t have to be limited to just fish… Turn it into a multi-purpose blend by experimenting with other proteins as well as potatoes or corn…

Here are the ingredient amounts for Fish Rub
– 2 tbsp. chipotle chili powder
– 1 tsp. brown sugar
– 1 tsp. ground cumin
– ½ tsp. mild paprika
– ½ tsp. ground ginger
– ¼ tsp. ground Himalayan sea salt
– ¼ tsp. freshly ground black pepper
– 1/8 tsp. cayenne pepper, or more to taste
 
Mix all the ingredients together and store it in an airtight container. Makes about ¼ cup
