Sweet Chili Chicken Bites Recipe • Tasty Thai Appetizer! | Club Foody

 

As I’ve been cooking up a storm at home due to Club Foody, I absolutely need to go out to restaurants once a week and let someone else cook, serve and clean. Yes David helps me a lot but still, I do the majority of the work, constantly having a camera between me and the preparation of the meal… not very convenient.
 
When we go out, I’m in no rush and like to order an appetizer. I find it social and it also calms our hunger before ordering the main course. I do the same when family and friends come over. It doesn’t have to be complicated. It can be a saladsmall tapassoupbread or other light fare.
 
There’s a dish that we enjoy a lot and it’s my Sweet Chili Chicken Bites! It’s absolutely delicious and very easy to make! Double dredged, the pieces are crispy on the outside and tender & juicy on the inside. It’s a tasty appetizer recipe to have in your folder although it can also be served as a main course along with some steamed white rice…
 
What makes this dish so mouthwatering is the sauce. I use my homemade Sweet Chili Sauce that I posted a couple of months ago. This is a great condiment that I use often for different recipes like Sweet & Sour Pineapple PorkChinese 5 Spice Spare Ribs, Ginger Beef, Triple Chili Wing SauceVietnamese Summer Rolls, and others.
 
The first time we had Sweet Chili Chicken Bites was in a popular pizza chain here in Canada. We liked it so much that it became our favorite item to order each time we went there. One day, David suggested we should give it a try and make it at home. Score! From that day on, we’ve been enjoying these tasty little bites whenever we want…
 
With a succulent sauce that brings sweet and spiciness to the dish, these Sweet Chili Chicken Bites are amazingly flavorful. It’s quick to prepare and a delightful appetizer to enjoy with your guests. It’s certainly a nice recipe to have on hand…

Creamy Tahini Sauce Recipe • A Tasty Middle Eastern Sauce! | Club Foody

 

When I think of Levantine cuisine, I think of Baba Ghanoush, Fattoush, Challah, Manakish, Falafel, Shawarma, Tabbouleh, Hamin, KebabsHummus, and so on. The group of countries and regions representing the Levant region gives this specific cuisine a beautiful array of flavors, colors and aromas. There’s Lebanon, Jordan, Egypt, Cyprus, Israel, Palestine, Turkey, Greece, Syria, Iraq, and Libya.
 
Like any other cuisine, Levantine has many sauces to complement their meals like Tzatziki, Shattah, Muhammara, Sahhawiq, Toum, and more. Here’s another exotic sauce recipe that I enjoy making… Creamy Tahini Sauce!
 
This is a versatile condiment that pairs so well with many Levantine dishes. I like to serve it along with my shawarma, Falafel, grilled chicken or fish, Shish Kebabs, roasted vegetables, Hawawshi or other sandwiches, and more. It can also be used as a dressing for your green salad.
 
This delicious sauce requires a primary ingredient… Tahini Paste which is made with ground sesame seeds and grapeseed oil with a pinch of salt. This is a great condiment I use for my Roasted Red Pepper HummusTahini Mango Peanut Butter SmoothieEasy Baba Ghanoush, Broccolini Gomaae, and Halva as well as in the making of my Yogurt Sauce for my Lamb Kofta. It has a nutty flavor and creamy texture… perfect to use for a wide variety of dishes.
 
When I make my Creamy Tahini Sauce, garlic is another key ingredient. Unfortunately, the taste of raw garlic can be bitter. To remove it and make it milder, I blanch the unpeeled clove for 5 minutes in boiling water. This little extra step makes a huge difference in the sauce giving a nice garlicky taste without the sharpness of the vegetable. From there, I rinse it under cold water, peel it and make a paste with salt using my mortar and pestle. When this is done, I add a tiny amount of freshly squeezed lemon juice, about ¼ teaspoon, and turn my paste into a thick liquid so it’s easier to add to my tahini paste.
 
Many cooks make this sauce using water… it’s tasteless! I’m all about flavor and instead, I replace it with cold vegetable broth. I always have some on hand so why not use it. It’s still vegan, healthy and dairy-free with a slight boost of flavor.
 
I also add another unusual ingredient to make the sauce even better… Baharat! I love this spice blend from the Middle East and it’s perfect for this condiment recipe. You can easily find it at any specialty store or online. On the other hand, I’ll show you how to make it from scratch next year so stay tuned…
 
Nutty and slightly tangy, this Creamy Tahini Sauce recipe is simply amazing and can turn basic dishes into incredible! This lemony, garlic condiment is a great recipe to have on hand and it can be stored in the fridge for up to a week in an airtight container.

Moroccan Potato Salad Recipe • An Incredibly Tasty Side! | Club Foody

 

During the summer time, who doesn’t like picnics? It’s a great way to enjoy the outdoors plus it’s a nice change of scenery. It needs a little organization as we need to make a few dishes the day before and the next morning, we pack the cooler, grab the blanket and chairs, a Frisbee, football and other toys, a book and off we go to a nice park or by the water.
 
I’ve posted many recipes from savory to sweet that are ideal for picnics as well as potlucks like Texas CaviarClassic Pasta SaladPimento Cheese SandwichGreek SaladShrimp SandwichDulce de Leche CupcakesChickpea Corn SaladSausagesMediterranean Olive Bread or French BaguettesColeslawChocolate Chip Cookies, etc.
 
When it comes to potato salad, I have some wonderful ones; Creamy Bacon Potato Salad and this featured recipe… my Moroccan Potato Salad! The first one is the most common but the African inspired dish is very popular as well. It’s a beautiful combination of ingredients; sweet potatoes, Yukon Gold, etc. along with a lovely chermoula mayonnaise… yum!
 
This Moroccan Potato Salad is absolutely fabulous! When I bring this side dish that I created to a potluck or a picnic, it disappears just as fast as the traditional recipe. Everyone wants the recipe because it’s that good! What makes it so amazing is obviously the chermoula mayonnaise. There’s an incredible mix of spices that brings this potato salad to a whole new level of flavor!
 
As I mentioned above, I like to make a few dishes the day before going on a picnic… less things to do and worry about the morning of. This is exactly what I do with this recipe; I cook my potatoes the night before, cut into bite-sized pieces and season them, let them cool off to room temperature and transfer them to the fridge. The next morning, I just have to make the chermoula mayo, mix things together and they’re done!
 
At your next picnic, backyard party or potluck, you have to make this Moroccan Potato Salad! It’s an easy recipe, extremely tasty and definitely a delicious change plus it pairs so well with many dishes! After their first bite, watch your friends come to you asking for the recipe… it’s that delicious!

Hawawshi Recipe • A Tasty Egyptian Street Food! | Club Foody

 

Egypt has always been a country I wanted to visit ever since childhood. Years ago, I made a schedule and itinerary for a 4 week trip to Egypt including another two weeks in Jordan. With tons of books, maps, culture, information, sites and so on, I’m ready to go! This is a dream I’ve been looking forward to all my life and I know one day, I’ll be there exploring this captivating part of the globe.
 
When I was thirteen, my parents split up and my father moved to the downtown core of Montréal in one of those high rise buildings. He became friends with Ahmed, a gentleman from Egypt. The first time I met him, I was so thrilled… I was able to ask him all the questions I wanted about his country. He was better than any book providing me with more of his insights. Of course, we became very good friends!
 
Besides being bombarded with all my questions, he also let me taste their foods including Baba GhanoushFalafel with Tahini sauce, Kushari, Couscous, Ful Medames, HummusKofta, and many more. Another dish he introduced me to was Hawawshi! Apparently it was the newest street food in Cairo that became very popular across Egypt.
 
What is Hawawshi, you ask? It’s a sandwich that is amplified with tons of flavor! It’s a ground beef mixture with onions, peppers and garlic seasoned perfectly with aromatic spices and then stuffed into pita or baladi bread. From there, they are baked in the oven.
 
My version is slightly different from the traditional one. Instead of stuffing my bread with raw ingredients, I quickly sauté my vegetables for 1 minute and then add garlic which is sautéed for only 30 seconds. To this, I add ground beef that I break into small pieces before adding tomato paste. Again I barely cook everything, maybe 2 minutes at the most because the Hawawshi will finish cooking in the oven. I transfer the filling to a bowl, add a gorgeous spice mix to it, season with salt and pepper plus parsley and then, stuff the pita bread with it trying to leave any accumulated liquid behind so the bread doesn’t get soggy. I then transfer them to the oven and bake for 14 to 15 minutes. By sautéing my ingredients ahead of time, I give a quick jump start to the dish.
 
When it comes to opening pita bread, I like to place them in the microwave for about 10 seconds so they puff up a little which helps to separate them. Unfortunately, it’s almost the luck of the draw because half might open easily while the other half can tear. It seems like some have a mind of their own. Just be patient and try to open them slowly with a sharp knife… that’s all I can say.
 
Hawawshi is an amazing easy dish to make! It’s a delicious way to try something different than our regular North American sandwiches. Served warmed, I like to pair it with my Creamy Tahini Sauce. It’s a tasty Egyptian meal to enjoy anytime!

Cream of Asparagus Soup Recipe • Enjoy it Hot or Cold! | Club Foody

 

While I was growing up, my father loved his soup. It didn’t matter if it was winter or summer, he enjoyed having soup before a meal. I didn’t mind it from September to May but during the warmer months, I couldn’t stand it! Every time, I asked my mother to not serve me any.
 
Later on in life, I came across a few “chilled” soups like Gazpacho and Vichyssoise. That was it! I was hooked and delighted to have soup during the hot summer months. As I’m not the type of lady who likes routine, I simply had to create more cold soup recipes and this is how I came up with my version of Cream of Asparagus Soup!
 
This is an amazing recipe! It’s flavorful, smooth and so refreshing… perfect when the mercury rises. Another plus with this soup is it’s also scrumptiously delicious cold as well as hot therefore you can enjoy it all year round.
 
I love asparagus and when it’s in season, I buy it often. Besides this Cream of Asparagus Soup, I like to make other recipes with this vegetable like my Asparagus Summer Salad, Mediterranean Pasta, Bacon Wrapped Asparagus, Asparagus with Maltaise Sauce, Pickled Asparagus, and many others including using it as an ingredient for my Pancetta Vegetable Frittata
 
When prepping it, I like to set the tips aside for a nice presentation. Although this tasty soup is spectacular, visually it needs a little help. By drizzling on some heavy cream and garnishing with asparagus tips, it not only looks more appetizing but also gives an elegant touch to this dish.
 
This easy Cream of Asparagus Soup is quick to make. If you decide to serve it hot, bring it to a simmer otherwise spoon it into a bowl, cover and transfer to the refrigerator until chilled. Either way, after trying this flavorful recipe, you’ll be enjoying it all year round just like we do at our home…

Simple Syrup Recipe • For Cocktails and More - Tips & Tricks | Club Foody

 

When I was bartending, there were a few condiments I used often like Worcestershire sauce, grenadine, lemon juice, and more including Simple Syrup also known as Sugar Syrup. Because of its liquefied form, it was perfect for sweetening cocktails and mocktails as it mixed easily into cold drinks. Till this day, I use it for my Mint JulepsMojitos, Strawberry Daiquiris, Punches, etc.
 
Back then, one of our waitresses was studying to become a pastry chef and shared another way to use it with me – that is when I started thinking differently about Simple Syrup…
 
Yes, it’s definitely “a must” for your bar but it can also be used for other beverages like Iced TeaLemonade or Iced Coffee as well as your morning coffee, lattes, and so on. The big plus using syrup instead of granulated sugar is you won’t end up with a thin layer of grainy bits of sugar at the bottom.
 
Before going any further, let’s bring another aspect of Simple Syrup… It can be flavored! That’s right! When going to a coffee house, Vanilla Lattes are awesome and you might wonder how it’s made. Simple! It’s fresh brewed coffee with milk and vanilla syrup… voilà! Herbs, spices or fruits are other ways to enhance this condiment. I like making my Cherry Simple Syrup and use it when I make my Canard Montmorency or my Cherry Coke Float. I can go on and on with all the different flavors I make but let’s go back to the basic one for now…
 
When it comes to baking, here’s the tip I got from that waitress. To prevent the cakes from drying out, brush a thin coat of Simple Syrup on the cooled layers. It will keep them moist, spongy and fresh longer until you’re ready to put the icing or fondant on your cake. The same applies to brushing some on top of your cupcakes before decorating. Depending on which cake or cupcakes I bake, I like to brush on orange or lavender flavored syrup… Here I go again! Okay, back to the basic one!
 
Besides cakes, I use it for Baklava, cookies, Candied Fruits, or when poaching fruits. It can be drizzled on a Fruit Salad instead of using liqueur. According to the National Center for Home Food Preservation, adding Simple Syrup when canning fruits will help to retain their flavor, color and shape. This condiment can also be drizzled over WafflesIce CreamPancakes depending on which flavor has been added to it. During the Holidays, I like making Pomegranate Syrup while in the summer time, I pour Strawberry Syrup over sponge cake… yum! No seriously, I’m back again with the flavored options… gee whiz!
 
In the video, I show you the regular basic Simple Syrup where the ratio is 1:1 of sugar to water and put into a clean jar or glass bottle, it will keep for a month in the fridge. For richer and more concentrated thicker syrups, use a 2:1 ratio and chill for up to 5 months. When it comes to using other flavors to it especially fruits, unfortunately it doesn’t keep as long and has to be used within a week.
 
Another thing I would like to highlight is when making the basic syrup, as long as the sugar is melted, there’s no need to boil the mixture. On the other hand, when using the concentrated version or any other ingredients to flavor the basic one, then yes, it has to be brought to a boil…
 
There’s a reason why it’s called Simple Syrup. It’s not complicated and extremely versatile! It’s a great condiment recipe to have on hand. In the near future, I’ll show you a few different flavor recipes I use in many dishes…
