Cauliflower & Celery Root Purée Recipe • Healthy & Delicious | Club Foody

 

It’s very rare when a main course doesn’t require a side dish. It can be some bread, vegetables, pasta, rice or simply a salad. It just completes the meal. The most popular sides are Mac and CheeseMashed Potatoes, a vegetable casserole such as Tian, steamed veggies like Green BeansRice PilafDinner Rolls or FlatbreadColeslaw or simply a green salad with Vinaigrette/Dressing.
 
When it comes to vegetable casserole, I like to diversify things by adding different produce according to the season. During the winter time, I like to use what Mother Nature has to offer and make side dishes from it like Carrot & Rutabaga MashOrange Glazed BeetsSquash à la CanadienneBrussels sprouts with Bacon and Onions, and many others including this one… Cauliflower & Celery Root Purée!
 
This is such a delicious change from mashed potatoes or even Mashed Cauliflower. It’s a great side dish to serve along many proteins. The celery root also known as celeriac has a lovely taste that is, likes its name suggests, similar to celery. When cooked, its flavor gets sweeter giving a nice dimension to the dish.
 
I really enjoy cooking with this tasty vegetable, using it in soups, sautéing with other veggies, adding it to my main dish or making this delicious Cauliflower & Celery Root Purée. If you’ve never tried celeriac, I highly recommend you buy it next time you’re at the supermarket… you won’t be disappointed!
 
Cauliflower is another amazing vegetable! This winter produce is so easy to cook with. Just like celeriac, this veggie is good in soups, steamed as a side dish, eaten raw along with a dipping sauce or even in a smoothie.. that’s right! I use it for many recipes like my Creamy Mashed Cauliflower, Cauliflower Pizza Dough, Aloo Gobi, Cauliflower Casserole, and many more…

Tuna Casserole Recipe • The Best Ever! | Club Foody


 Who doesn’t like casseroles? To me, it’s comfort food at its best! I’ve already shared a few of my casserole recipes like Frankie’s MacaroniMediterranean Eggplant CasseroleTurkey TetrazziniSouthwest Beef CasseroleHamburger Helper Copycat and now this one… my Tuna Casserole! There’s nothing fancy about it but boy is it ever delicious and comforting! This is not what you call an elegant dish and yet, this one is definitely one of David’s and my favorites… It’s extremely tasty and so easy to make.

 
I’ve had many Tuna Casserole dishes in the past and I have to admit that this one is the BEST! The delicious combination of ingredients makes this recipe far from boring. That’s the problem with this type of protein. Most of the time, this casserole is almost flavorless. With mine, I added just enough seasoning to elevate it without compromising the delicate taste of the fish.
 
A key ingredient that I use in this recipe is my Creole Seasoning Mix that I make from scratch. It doesn’t need a lot to enhance the dish. I also use other seasonings like hot paprika, basil and thyme. Another thing that helps make it more interesting is sharp Cheddar cheese. Once again, it has just the right amount to complement the casserole.

Pull-Apart Garlic Bread Recipe • Tasty Finger Food! | Club Foody

 

Who doesn’t enjoy finger foods especially when there’s a sporting event or simply a friendly gathering? When I go to restaurants with family or friends, I always enjoy sampling different menu items because everybody can order a different one and share them with each other.
 
There are so many popular finger food items to choose from like Nachos, Coconut Shrimp, Bruschetta, Samosas, Chicken FingersFocacciaCheese Sticks, and so on… There’s another one that is incredibly easy to make and the flavors are just awesome… Pull-Apart Garlic Bread! It’s a lovely recipe to make for a party, sporting event or simply as a side.
 
The first delicious step we have to make for this recipe is the Garlic Butter! The way I make it, it’s not just garlic… it also has a beautiful mix of herbs. This is my go-to garlic butter and when I cook a steak, I like to put a slice of this deliciousness on top. It’s the same recipe I use when I make Garlic Shrimp, Garlic Bread, etc.
 
Many home cooks like to buy a loaf of bread, cut a crisscross shape into it, spread some garlic butter on top and transfer it to the oven. I prefer making my own bread because it tastes so f-a-n-t-a-s-t-i-c! Of course it takes a little longer to make but I can guarantee you that this will be the best Pull-Apart Garlic Bread you’ve ever made!
 
Another big difference when making your own bread is it can be stuffed with a combination of mozzarella cheese and garlic butter – yeah, more of that butter please! When you take a bite of one of these little guys, not only is there garlic butter on top but inside as well… it’s a double delight!
 
When it’s time to serve them, another plus is having some dipping sauce. It can be pizza sauce (I’ll be posting my recipe soon) or Marinara Sauce. Either one is a great accompaniment for this recipe.
 
Either for pasta night, a get together with friends or simply enjoying a sporting event on TV, this Pull-Apart Garlic Bread is the perfect finger food to enjoy. It’s packed with so many flavors, you’ll be trying to find an excuse to make it more often…

Shepherd's Pie Recipe aka Pâté Chinois • Tasty Comfort Food| Club Foody


 We all have our favorite comfort food dishes. Some might like Burgers while others prefer ChiliPizzaMac & Cheese, and so on. David gravitates between MeatloafFrankie’s MacaroniOrzo with Chicken & Asiago and Southwest Beef Casserole. I’m sure if I ask him, the list would get longer… lol!

 
Mine is the first dish that I made when I moved out from my parents’ place and it’s Shepherd’s Pie! To me, this is my ultimate comfort food. It’s easy to make and so tasty! With a layer of meat mixture, cream style corn and topped with mashed potatoes, this is one of my all-time favorites!
 
Without knowing exactly how this dish was created, there are a few possible speculations. In Québec, we call it “Pâté Chinois” which translates to Chinese Pie. It’s obviously not a Chinese dish but it could have been introduced by the Chinese cooks for the Canadian railway workers in the late 1800’s. It could also be an adaptation of Hachis Parmentier or even Cottage Pie. Perhaps it’s a variation of the famous British dish. Regardless of where this Shepherd’s Pie recipe origin came from, it’s a delicious casserole!
 
For this recipe, I use my Mixed Mashed Potatoes recipe. It’s a combination of russet and sweet potatoes. Using regular mashed is fine but I’m telling you, this one is fabulous and gives such a nice taste to the dish plus it’s so colorful. Click here to get the recipe… Mixed Mashed Potatoes
 
Shepherd’s Pie is on the top my list for comfort foods and it should be on yours as well. I like to serve it with some ketchup on top, Bread & Butter Pickles on the side and a few slices of buttered bread… now that’s a satisfying meal!

Blanched Almonds • How to - Tips & Tricks | Club Foody

 

David and I enjoy different kinds of nuts like pine, Brazil, walnuts, almonds, pecans, peanuts, etc. I love to use them as often as possible for many recipes. One of them that I enjoy cooking with or munching on is almonds. Although they are pricey, we buy them in a large bag. Now when I use them in recipes or grind them into flour for baking, their skins have to be removed. Yes they sell Blanched Almonds at the store but the price is even higher than the ones with the skins on. In this episode, I’m showing you the easy method to remove their skins.
 
Blanched Almonds are used in so many savory recipes like Almendras Fritas, Ajoblanco Sopa, Romesco Sauce, Sole Almondine, and many more. They can be cut into slivers and be used as an ingredient for Salads, rice and Casserole Dishes or a nice topping for ice cream. When coarsely ground, it can be mixed with regular breadcrumbs for Crab CakesFish or even vegetables. Almond flour is a key ingredient for many baking recipes such as Cozonac (Romanian Easter/Christmas Bread), those delicious Polish Florentynki (Florentine cookies), etc. Turn your Blanched Almonds into butter or almond paste.
 
When it comes to storing your Blanched Almonds, place them in an airtight container in a cool, dry spot or refrigerate them for up to 3 months. I keep all my nuts in the crisper of my fridge as I can keep them much longer. Just remember that if you turn them into slivered almonds, they have a shorter shelf life compared with whole almonds.
 
The bottom line is why pay more for Blanched Almonds when you can quickly and easily do it yourself at home, saving money in the process.

Sticky Toffee Pudding Recipe • Decadent British Dessert! | Club Foody

 

When we start a relationship, we create new habits, find favorite spots, share our mutual likings, form a circle of trust with new friends, and so on. These are normal things we all do to slowly build a foundation with a new partner.
 
When I moved to Vancouver, we discovered a quaint little restaurant by the ocean and it became our go-to dining destination. The food was amazing, the prices were quite reasonable and the ambiance was perfect. There was a dessert that David and I loved so much that each time, we just had to order it even when we were full to the gills… it was that good!
 
Unfortunately, the owner sold the place and the next best thing I had to do was to duplicate this incredible dessert. Here’s my Sticky Toffee Pudding! This is definitely an “OMG”! The cake by itself has so many flavors due to a lovely combination of spices. Now top it off with a rich toffee sauce… This is heaven in your mouth!
 
At first, I used to pour the batter into a baking dish but David suggested making it in individual servings by portioning the batter into a muffin pan. That was cleaver! When I serve this Sticky Toffee Pudding to my guests, it makes the serving a lot easier.
 
There’s two ways I like to serve it. After the pudding is baked and I poke some holes in each “muffin”, I pour about 1 tablespoon of the toffee sauce on top. After it’s absorbed, I like to bring it up a notch higher by putting on a cream cheese icing. The other way is if I don’t feel like making the icing, I serve it with a scoop of Vanilla Ice Cream. Either way is equally delicious!
 
This cake is the perfect way to end a meal. Rich, moist, decadent, this is a great recipe to enjoy anytime. Next time you’re craving a delightful dessert, indulge yourself with this Sticky Toffee Pudding…

Chicken Tikka Masala Recipe • Flavorful Indian Curry Dish! | Club Foody


 Chicken is probably the most consumed protein worldwide. In our house, we eat chicken every week and I’m sure we’re not the only ones. It’s such an easy meat to cook with and many parts of a chicken can be used in a variety of different recipes; Chicken Française with breasts, Cognac Chicken Liver PâtéChicken WingsTandoori Chicken using drumsticks, Coq au Vin with thighs, use the entire bird for a nice Rotisserie Chicken on the barbecue, and so on…

 
All around the world, there are many incredibly delicious recipes using this protein. Among them, there’s an Indian dish that was created in Britain although some claim that it originated in India, and gained popularity since then. It’s Chicken Tikka Masala! This is an amazing dish packed with flavor! Marinated in spices and yogurt overnight then cooked in a spicy tomato sauce, this is a delicious meal to enjoy often.
 
Technically, the chicken is roasted in the oven. My version is slightly different; I sauté the marinated meat in a saucepan until browned. I could have used a cast iron skillet to mimic the roasting effect but I didn’t and believe me, this dish tastes amazing!
 
I use boneless, skinless chicken thighs which is my preferred choice. You could use breasts but the dish might be a tad different as thighs bring more flavor. It’s a cheaper cut, a little more “fatty” but they always deliver great results in a recipe. I use them in my North African Chicken Thighs with Dates & Pomegranate MolassesMughlai ChickenSouthwest Chicken Thighs, and more.
 
I also use ghee for my Chicken Tikka Masala recipe. There’s not a whole lot of difference between regular clarified butter and ghee which is an Indian clarified butter. Both don’t have any milk solids and are pure butterfat. What distances them from each other is clarified butter is cooked just to the point where the water evaporates and the milk solids separate. On the other hand, ghee is cooked until the milk begins to caramelize giving it a nutty flavor and a more golden color.
 
As I mentioned earlier, this Chicken Tikka Masala is so tasty! My version differs a little but with some added ingredients, it delivers great results! I like to serve it with a side of basmati rice, some Naan Bread to soak up the sauce, and a sprinkle of fresh chopped Cilantro… yum!
