Kir Impérial Recipe • An Elegant Drink! | Club Foody

 

Another year went by and it’s time to say goodbye to 2024! New hopes are ahead of us! Perhaps some dreams we had for this year didn’t come true but they’ll continue on for next year. As of tomorrow, each of us will individually start writing the first page of a 365-page book 📚!
 
If you’re hosting a party tonight or even want to celebrate the New Year ✨, there are many cocktails to make such as Holiday Punch, Negroni, Manhattan, Oaxacan Punch, Moonwalk Cocktail, 25th Hour, Blood Orange Martini, Pomegranate Punch, Aperol Spritz, Orange Sherbet Punch, Chocolate Martini, etc.
 
Another one that deserves its spot for any celebration is Kir Impérial! Similar to Kir Royal which is made with crème de cassis (blackcurrant liqueur) and topped with champagne 🍾, this featured recipe is made with Chambord (raspberry liqueur) along with champagne.
 
I remembered my first Kir (see below for other variations). I didn’t have a big budget 💰 and used sparkling wine instead of champagne with the blackcurrant liqueur. This version is called Kir Pétillant. It was okay but not being a big fan of crème de cassis, I never gave it another try.
 
One year, my late friend Brigitte was hosting a New Year’s Eve party and didn’t know what to make with Chambord. I asked my fellow workers who were bartenders like me and one of them suggested we make Kir Impérial. Tada 👏!
 
The amount of raspberry liqueur used varies from one person to the next. I prefer ½ ounce while David likes 1 ounce. Sparkling wine can be used in lieu of champagne. I like to garnish each flute with a couple raspberries but orange 🍊 twists can be cute too!
 
Elegant 🥰, this super quick and easy tasty cocktail is incredibly smooth! It adds a nice touch to any festivity but can also be served at your next brunch. Raise your glasses to 2025 with this delicious Kir Royale! On behalf of my team , I wish you and your family a fabulous New Year!

Cranberry Eggnog Bread Recipe • Tasty Holiday Treat | Club Foody

 

I would have never thought that one day, I would be making bread. I remember the first quick bread I made which was classic banana bread . My mom 👵 was making it so I did the same. Eventually, I started venturing out more by using other ingredients…
 
I have a long list of quick bread recipes and here are some that are already posted; Apple CinnamonPumpkin ChaiStollenZucchini, and Peanut Butter Banana along with two more with that fruit 🍌… Pineapple Banana Bread with Coconut & Macadamia and Marbled Chocolate Pecan Banana Bread.
 
Here’s one that fits perfectly for the Holidays and it’s my Cranberry Eggnog Bread! Super moist, colorful 🌈 and delicious, this scrumptious bread is great to serve for breakfast or brunch as well as a mid-afternoon snack. Easy to make, this is certainly another great baking recipe to enjoy this season!
 
The beauty of quick breads is they don’t require kneading or rising time ⏰. It’s actually a good introduction to bread making for beginners. While other breads need yeast, the leavening agents used in quick bread making is baking powder and/or baking soda.
 
As the title refers, there’s cranberries and eggnog in it. I use frozen cranberries. When it comes to the eggnog, you can either buy it at your supermarket or make it at home 🏡. Here’s the link for my delightful recipe… Homemade Holiday Eggnog
 
There’s also real rum that goes in the batter. You can use rum extract instead but if don’t have any, simply use vanilla. If you don’t have that either then it’s time for you to go grocery shopping 🛒!!!
 
Let’s talk about alcohol and children 👧👱‍♂️…
Many parents won’t bake or cook with it as they don’t want their children to have any. Did you know that while it cooks/bakes, the alcohol evaporates out of the food, leaving you with only the flavor. Heat 🔥 burns off the alcohol so it’s safe to have these little munchkins eat some…
 
I use my Eggnog Glaze as a finishing touch for this Cranberry Eggnog Bread 🍞. After being mixed, I transfer the glaze to the fridge to thicken it up while the bread is cooling off. It will take a good 2 hours before glazing it so start the recipe early.
 
This festive Cranberry Eggnog Bread is moist, colorful and so scrumptious! It’s a delicious snack to enjoy during the Holidays 🎄. Stored in an airtight container, it keeps well for up to 3 days in the fridge. To freeze it, wrap tightly in plastic wrap and then foil. It will be good for up to 2 months…

Nutella Fudge Recipe • A Delicious Holiday Treat! | Club Foody

 

The Holidays is the time of year when we deliberately indulge ourselves! We drink more 🥂 and eat a lot too. When it comes to January, most of us go on a diet due to the overdose of yumminess we enjoyed the month before plus returning to our normal routines…
 
Back to December…
When it comes to sweet treats, there’s a long list 📜 of them. I think of Gingerbread Cookies, Bûche de Noël, Chocolate Rum Snowballs, Pfeffernüsse, Fruitcake, Chocolate Peppermint Bars, Cranberry Orange Bundt Cake, etc.
 
Another treat perfect for the Holidays that I like making year after year is my Nutella Fudge! Oh my, what a crowd pleaser! Smooth and creamy with some crunch from the chopped walnuts, this is the elevated version of my mother’s 👵 chocolate fudge recipe.
 
As I mentioned on the Gingerbread Coffee Creamer blog, here in Canada, our sweetened condensed milk cans read 🧐 300 ml or 10 oz. while Americans say 14 oz. Actually, both have the same amount in the can which is 1 ¼ cups. Why aren’t both countries labelling it the same? No idea but that should be rectified!
 
It’s just the two of us and despite the fact that we like Nutella on our toast in the morning or using it as an ingredient for desserts, this spread can be sitting in the pantry for too long. To salvage it, this is how I came up with this recipe and has been a favorite 💖 ever since!
 
It’s fairly easy to make 👩‍🍳👨‍🍳 as long as you ensure that all the chocolate chips are melted. The other tip is to stir continuously even after the chocolate is melted for an extra 3 to 5 minutes. If not, the sugar crystals will remain large and as a result, the texture will be hard and grainy. Also, use a heavy bottom saucepan.
 
Nutella Fudge is super yummy as is but if you have kids at home 👧👱‍♂️ – mine is over 60 years old -, and if no one has allergies to nuts, adding some walnuts or hazelnuts gives a bit of crunch to the treat. It’s not just a big block of sugar lacking texture…
 
After our arm is numb from stirring 🥄 constantly for 15 minutes, quickly pour the mixture into a square pan lined with parchment paper. As it cools off, it will start to harden so do this fast and don’t forget to spread it out and level it out evenly as well. What takes the most time is to let the fudge set up in the fridge for 3 to 4 hours. When ready to serve, cut it into small cubes. I like to have them in 1-inch square as it’s easier to eat. For a neater presentation, clean your knife 🔪 in between cuts.
 
Being one of my favorite Christmas 🎄 treats, this delicious Nutella Fudge is a perfect confection to make. With gorgeous layers of flavor combined with some crunch, be warned because these little guys won’t last long!

Cod in Puttanesca Sauce Recipe • Neapolitan Classic | Club Foody

 

By the time we’re done putting up the decorations 🎄, baking and cooking, and with our shopping lists although there’s always last-minute gifts to buy, we’re exhausted! We still have to wrap the presents, clean the house and finish the last details before the 24th of December.
 
Being less than a week from Christmas, our energy level can be low 🥺 so we might not feel like spending too much time in the kitchen. Without compromising on delicious meals, we still want something quick and easy to make plus it’s even better if it’s a one-pot recipe like this one… Cod in Puttanesca Sauce!
 
This is incredibly tasty! Far from being bland, in 30 minutes, you can have this flavorful dinner that can be enjoyed with crusty bread or if you like, spoon the fish and sauce over rice 🍚 or pasta. It’s a great Italian recipe to add to your folder!
 
Despite the fact that I use cod, this Neapolitan sauce can be simply served over spaghetti 🍝 which makes the cooking time even shorter. Made with anchovies, tomatoes, olives and capers along with onions, garlic and wine, this sauce is very flavorful!
 
I use 4 large fillets in my Cod in Puttanesca Sauce but there’s enough sauce for 6. Depending on the thickness, it can take from 12 to 15 minutes ⏰ to cook them. To see when they’re done, the fish will get opaque and become white plus the internal temperature should read between 140ºF to 145ºF. Another way is to use a fork at its thickest part of the fish and if it flakes easily, it’s cooked.
 
This Cod in Puttanesca Sauce is a perfect 30-minute recipe to make when time is in short supply or just want something delectable quick! I like to serve it as is with crusty bread 🍞 such as ciabatta or artisan. It’s a lovely one-pot meal to have on hand!

Orange Ricotta Cookies Recipe • A Festive Treat! | Club Foody

On Christmas’ Eve, it’s important to have a plate of cookies and a glass of milk near the tree for Santa 🎅! It’s a delicious way to show him gratitude… No, really joking aside! Christmas without any cookies is not the same. It’s a worldwide tradition!
 
The most well-known traditional cookies are Gingerbread, Sablé Breton, Biscotti, Alfajores, Thumbprint, Krumkake, Pfeffernüsse, Spitzbuden or Linzer, Rugelach, Sugar Cookies, and many, many more! One that I love 💖 baking for the Holidays is Orange Ricotta Cookies!
 
These are light, fluffy and so yummy! They’re easy to make and set the tone perfectly for the Holidays! The orange glaze gives a nice citrus 🍊 tone to those little guys! This recipe makes 36 cookies but I’m warning you, there’s never enough around!
 
The recipe is easy but it takes time to make them…
First, they’re chilled for 30 minutes which improves the flavor and also prevents the cookies from spreading too much. After they’re baked, it’s very important to allow them to cool to room temperature before icing, about 1.5 hours ⏰. When they’re glazed, they have to dry completely, giving another 3 hours of passive time. All that anticipation is sooo worth it!
 
I’ve been baking 👩‍🍳 these Orange Ricotta Cookies for years therefore I had time to experiment with different temperatures and baking times.
– I tried 350ºF with the rack positioned in the middle of the oven – the bottom of the cookies was way too dark even when rotating the sheets halfway through.
– I reduced the heat to 325ºF and they took much longer to bake, 20 minutes, still with a darker bottom.
 
What I find works the best is to position the rack on the top 3rd of the oven and bake for 15 minutes, rotating the sheets halfway through cooking. These delicate cookies are far enough from the heat source 🔥 therefore giving a beautiful end result!
 
They can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. They also freeze very well for up to 2 months 📆.
 
Incredibly light and tasty, these festive Orange Ricotta Cookies are perfect for the Holidays 🎄! With a delicious citrus glaze, these little guys are a nice change from other traditional cookies. Make sure to bake a couple batches as they disappear pretty fast…

German Gingerbread Spice • Lebkuchengewürz - Tips & Tricks | Club Foody

 

I like making my own spice blends. There are a few reasons why. First, I can recycle my spices by making other blends. Second, I portion enough for what I need therefore it doesn’t lose any potency over time. Lastly, it’s cheaper 💰 to make them from scratch.
 
I have a bunch of spices in my drawer so to prevent them from expiring by losing their flavor and aroma, I mix 👩‍🍳 them to create other blends. It can be Herbes de ProvenceItalian or Greek SeasoningMontréal Steak SpicePumpkin Pie Spice, etc.
 
When my mother-in-law gave me one of her cookie recipes which was Pfeffernüsse, first, I had to make a spice blend. It was German Gingerbread Spice • Lebkuchengewürz! After making it, I was transported straight to the Holidays 🎄.
 
It’s interesting that simply from a smell 👃, it can take you to a place you’ve been, remind you of a person, an event or put you in a certain mood. This spice blend does it! It smells like Christmas! The beautiful fragrance of it is so Holiday-ish!
 
When shopping 🛒 for German Gingerbread Spice • Lebkuchengewürz either online or at specialty stores, the price is outrageous plus who knows how long it has been sitting on the shelves! You probably have all the spices on hand to make this quick blend recipe.
 
German Gingerbread Spice • Lebkuchengewürz is a great one to have on hand. Besides making Pfeffernüsse and Lebkuchen cookies with it, this can be used as an ingredient for Gingerbread Spice Cake or Stollen. Enhance your hot cocoa or sweet potato casserole 🍠 by sprinkling some on top!

Recipe for German Gingerbread Spice • Lebkuchengewürz…
– 2 tbsp. ground cinnamon
– 2 tsp. ground cloves
– 1 1/4 tsp. ground ginger
– 3/4 tsp. allspice
– 1/2 tsp. ground coriander
– 1/2 tsp. ground cardamom
– 1/4 tsp. ground mace
– 1/4 tsp. ground nutmeg
 
In a small bowl, combine all the ingredients and whisk until nicely blended. Store in an airtight container, in a dark, cool place. It makes roughly 1/4 cup.
