Mustard Vinaigrette Recipe • A Must Have! | Club Foody

 

Way before I realized that I’ve always been a foody, I started making my own vinaigrettes and salad dressings. It wasn’t by choice. I was going to university 👩‍🎓, working part-time and living on my own. My budget was very tight and I could only buy one of them at a time…
 
When push comes to shove, I thought that the easiest way to have more selection than one dressing or vinaigrette was to make 👩‍🍳 them from scratch. Quickly, I was making one almost every week. That is when I created this one… Mustard Vinaigrette!
 
With its beautiful taste along with some sweetness, this is a great condiment for your salad but also delicious to drizzle over roasted vegetables 🍆🥕. Its bold flavor is perfect for winter but I’m sure you’ll be using it all year round!
 
In the ingredient amount section, it says 1 tablespoon 🥄 from each mustard. David likes it that way. Personally, I prefer a little more intensity therefore I like to go for 1 ¼ tablespoons each instead of 1. Like I always mention, adjust the recipe to your liking… I also use my Sweet & Spicy German Mustard but whole grain is another option.
 
On the site, I’ve already posted over a dozen vinaigrettes and dressings. Although I like them all (obviously, otherwise I would never share them), I feel that certain of them are more suitable according to the season. As an example… I love my Raspberry Vinaigrette but prefer enjoying it during the summer versus winter ⛄ or the opposite when it comes to my Rosemary Balsamic Vinaigrette.
 
It takes less than 5 minutes ⏳ to make and here you have an incredible condiment! I like using this Mustard Vinaigrette on my Roasted Winter Vegetable Pasta Salad… it pairs marvellously! Versatile, it can be used for diverse applications such as marinades, dips, or even to enhance toast or crostini

Zucchini Pancakes Recipe • A Tasty Bite! | Club Foody

 

Don’t you like when there’s a recipe that can be enjoyed for different meals. I think of omeletsquiches, and other egg 🥚 recipes like scrambled and crêpesbaked beansCroque-madamebread pudding, etc. Of course, I ate cold pizza 🍕 leftovers many times in the morning especially the day after a night out…
 
One that we both, David and I, really like is Zucchini Pancakes 🥒! Loaded with deliciousness, these little guys can be enjoyed for brunch as well as a light lunch or an appetizer! They can be paired with either sour cream or tzatziki.
 
Tomorrow is Chinese New Year 🎊 and to highlight this important event, what better idea than showcasing this popular savory dish also called hutazi (糊塌子)! Although popular in China, these little guys are also a favorite in other countries such as Turkey, Israel, and Korea.
 
This Zucchini Pancakes recipe is super easy to make. What takes the most time is to extract the moisture from the grated zucchinis. I normally start early and let them sit in the colander for 4 to 5 hours ⏰ but if you don’t have that luxury, 30 to 45 minutes is sufficient.
 
From there, I scoop them in the middle of a large cheesecloth or muslin, gather the corners, and squeeze out the excess liquid 💦 until barely anything comes out. If you want nice crispy pancakes, that’s the way to go. The rest is easy peasy…
 
There’s a lot of yummy ingredients that go in the mixture. I add garlic, onions, roasted red peppers, some dill, lemon zest, eggs, cheese 🧀 and freshly ground black pepper. After the flour is added, if you think the pancake mixture is too wet, add some flour… not too much… maybe a tablespoon at the most.
 
To cook these little guys, very little oil is added to a skillet. It needs just enough to cover the bottom of it. To make them even, use a portion scoop – mine is about 2-inches in diameter – and flatten them slightly on top. Don’t overcrowd the pan. It should take 2:30 to 3 minutes per side… it’s quite fast ⏳.
 
These Zucchini Pancakes are so yummy! They’re easy to make 👩‍🍳👨‍🍳 and you can enjoy them pretty much anytime. Serve them with a dollop of sour cream or tzatziki… delish!

Bourbon Onion Jam Recipe • A Tasty Condiment! | Club Foody

 

Sweet jams and jellies are a condiment that we all have in our fridge. I think of ApricotRaspberryPlumMarmaladeStrawberry, and so on. They’re amazing on toast, English muffins or croissants 🥐 in the morning but also a good ingredient to add to sauces or marinades.
 
Now let’s talk about savory ones…
There’s a long tasty list of them. There’s Bourbon Maple Bacon Jam, Tomato Chili Jam, Mint Jelly, Jalapeño Jelly, Fig Balsamic Jam, Apple Rosemary Jelly 🍎, Spicy Red Pepper Jelly, etc. Another one that should be added to this list is my Bourbon Onion Jam!
 
This condiment is extremely flavorful! It’s great on pork, chicken, steak, as well as on burgers, hot dogs 🌭, and even in sandwiches. It can also be a delicious addition to a charcuterie board. It’s a fairly quick recipe – 40 minutes all together.
 
There’s a variety of onions 🧅 that can be used for this recipe. If you want “sweet”, it can be Vidalia, Walla Walla or Maui. The second best is yellow onions or white… your choice. If you prefer a sharper flavor, red onions are the way to go.
 
The onions are cooked slowly, bringing out their natural sugars. When they’re nicely caramelized, bourbon 🥃 is added and then simmered gently until the liquid is almost evaporated. The result is a nice smoky and savory flavor with a note of sweetness in the background.
 
I like my Bourbon Onion Jam soft but not jammy. If you want yours softer and almost spreadable, cook them longer ⏰ before adding the alcohol. One important thing is to taste and adjust seasoning if needed and it will need more at the end…
 
As the onions cook 🥘, the volume decreases enormously. Even when starting with 2 cups of onions, the more the mixture simmers, the less quantity you’ll end up with. By the time this recipe is done, it yields only a ¼ cup so if you want more then you’ll have to increase the amounts of the ingredients.
 
This Bourbon Onion jam is a delicious garnish. It can be spooned over pork, chicken, steaks, etc. or as a topping for burgers, hot dogs or even in sandwiches 🥪 as long as you don’t start eating it right from the skillet!

Italian Poutine Recipe • A Tasty Take on a Classic! | Cub Foody

 

I’m originally from Québec also known as “La Belle Province”. Besides being the largest province in Canada by area with its countless lakes and rivers, it’s also known for its French culture, its love for hockey 🏒, being the largest producer of maple syrup, its arts and that includes Céline Dion, and its food!
 
Québec is recognized for its rich and diverse cuisine with its unique dishes. There’s pâté chinois (shepherd’s pie), creton (meat spread), tourtière (meat pie), soupe aux pois (pea soup) and soupe à l’oignon gratinée (onion soup) 🧅, fèves au lard (baked beans), grand-pères (maple syrup dumplings), and so on…
 
One food item that is internationally 🌍 known is poutine! From its original ingredients which are simply French fries topped with cheese curds and gravy, it got transformed into other delicious versions. I created a few on my own like Eggs Benny PoutineCajun, and this one… Italian Poutine!
 
To me, this is comfort food to the max! With a rich tomato sauce 🍅 made with hot Italian sausage and ground beef along with vegetables and seasonings, ladled over fries and cheese curds, this original version is totally an OMG 🤯!
 
I use “hot” Italian sausage in this recipe. It gives a little spiciness to the dish without overwhelming it. If your tolerance to “heat” is low, I guess mild is another option otherwise, I highly suggest sticking with hot. Making Italian Poutine is fairly easy 👩‍🍳👨‍🍳. The only thing that is important to do is to cook the meat-vegetable mixture long enough so the liquid is evaporated and the fat is melted. This step can take anything from 25 to 35 minutes.
 
When this step is done, the marinara sauce is added and then seasoned with my Italian seasoning. After being blended nicely with the meat mixture, it simmers for another half an hour ⏰ so it gives time for the flavors to develop. It also reduces the acidity and helps thicken the sauce.
 
When 30 minutes is up, it’s time to assemble the dish. French fries 🍟 are added to a bowl and covered with cheese curds… don’t be shy! From here, we top with a few ladles of that delicious sauce we just made and sprinkle on some fresh chopped parsley… Voilà!
 
I serve this amazing Italian Poutine as a main course. It’s incredibly tasty and certainly a delicious change from the original recipe. It’s another way to enjoy this well-known Québécois dish and I’m sure it will become a family favorite 💖!

Garlic Soup Recipe • A Healthy Bowl of Yumminess! | Club Foody

 

January is a naughty month for colds and flus. Although we take supplements, eat oranges and try to keep warm, many will end up getting sick this month. If you’re like me, I don’t like relying on pills 💊. Just like our ancestors, I prefer using foods to treat this ailment.
 
There’s a lot of them that are good to have when dealing with the common cold. It can be a cup of hot water with either ginger, honey or freshly squeezed lemon juice, vegetable juice, some oatmeal, leafy greens, fish 🐟, etc.
 
Another one that, in my opinion, is the best is garlic! Being a superfood, these little guys have antimicrobial and antiviral properties plus many other healthy benefits. My grandmother 👵 used to drink hot water with garlic cloves in it… she rarely got sick.
 
As many will reach for a nice bowl of chicken soup, including myself, you should try this delicious one… Garlic Soup! It’s loaded with yumminess and a great alternative when feeling under the weather. It’s a lovely recipe to enjoy during the colder months ⛄ of the year.
 
When I’m sick, I can get blasé eating strictly chicken soup so what I do is to alternate between these two. They both bring their own antioxidants to boost the immune system and fight this bug. Frankly, I don’t have a preference… I like them both 💖!
 
My version is probably pretty similar to the French “Tourin à l’ail” which is a soup commonly served to the bride and groom early on the morning following the wedding. Apparently, it brings back some strength, lol! It’s also a great way to get rid of a hangover 🥴 the day after the party…
 
Making Garlic Soup is pretty easy. The first thing to do is to roast 3 large garlic heads 🧄. We need about 30 to 35 cloves. I have different methods of doing it so choose your preferred one by clicking on this link… Roasted Garlic
 
While roasting, we start the soup. The onions and more garlic cloves (10 large ones) are cooked in a large pot over medium-low heat. Cooking low and slowly not only brings back the onions’ natural sugars but also prevents the chopped garlic from burning 🧯.
 
From there, the rest is kiddy play! I use Yukon Gold potatoes 🥔 and leave their skin on which contains nutrients such as fiber, vitamin C, potassium, etc., plus antioxidants. Another kind that can be used is red potatoes. I like using chicken broth but vegetable broth is another option.
 
When it comes to seasonings, there’s Herbes de Provence, hot paprika which has capsaicin and also antioxidants (I’m telling you, this soup is super healthy), lemon juice 🍋 with its vitamin C, plus the two usual suspects… salt and pepper.
 
There’s heavy cream that goes in. Some old beliefs were saying that milk 🥛 or any other dairy products might increase mucus production. After many studies, there’s no scientific evidence that any dairy products cause more secretions. Each time I had a cold, I never stopped drinking milk…
 
When the soup is done, I like to garnish each bowl with my Herb Garlic Parmesan Croutons. Can you use regular ones? Of course, but you’ll be missing out on more flavor. For the finishing touch, parsley is sprinkled on top. It has antimicrobial properties, rich in vitamin C plus it strengthens the immune system 💚.
 
You don’t have to be indisposed 🤒 to enjoy this tasty Garlic Soup! With a bunch of healthy ingredients including garlic that is a superfood, this is a recipe to have on hand during the winter.
