Chicken Biryani Recipe • Delicious South Asian Dish! | Club Foody

 

Ever since my 20s’, I’ve been enjoying Indian cuisine. I like its vibrant colorful dishes and its food is very tasty 😋 – there’s nothing boring about it! Using different spices and ingredients, it can be spicy as well as mild and anything in between.
 
Known for its complex flavor, there’s a wide range of dishes that are my favorites 💖! I think of Butter ChickenSamosasLamb KeemaBunny ChowPork VindalooAloo Gobi, and more. There’s another one that is incredibly popular in India and it’s Chicken Biryani!
 
It’s a comforting meal 🥰 that has serious layers of yumminess in it! The combination of ingredients and spices creates this unique savory dish!
 
This delicious curry rice 🍚 recipe can be paired with other proteins besides chicken, such as beef, lamb, goat, or even fish. There’s no “right or wrong” recipe because it differs so much from one place to another. It can also be a vegetarian dish as well.
 
I won’t lie, there are a lot of steps to make Chicken Biryani…
The marinade is made first. I like using full-fat yogurt because it has less sugar than the reduced ones. With the added meat, it’s chilled from 4 hours to overnight 🕓. When ready to cook, it’s removed from the fridge an hour prior so the chicken gets to room temperature.
 
From there, timing is really important. While the oil for the fried onions is heating up and the water to cook the rice is brought to a boil, we make the saffron mixture and set aside. Next, we fry the onions which takes 2 to 3 minutes ⏳ at the most, and set them aside as well. Then, we move on to the rice.
 
Let’s talk about the fried onions 🧅…
I normally fry the onions from scratch until recently. When shopping 🛒 in Bellingham WA, I came across a bag of fried onions. I bought one and used it in my Chicken Biryani recipe. It was actually not too bad! I won’t religiously do that every time but it’s nice to have as an option!
 
The rice is easy peasy to make! In the boiling water 💦 mixed with lemon juice, there’s some whole cloves and cardamom pods that go in along with bay leaves, star anise and a cinnamon stick. These ingredients give such a gorgeous aromatic flavor to the rice. It’s so mouthwatering!
 
After 6 minutes, the rice mixture is drained into a colander. I like to place a bowl under it just in case some of the ingredients go through. Of course, the water from the bowl is discarded. The rice and all the other spices are set aside to cool while we start cooking the chicken 🐓.
 
To finish the dish, the meat is cooked is a large pot or Dutch oven. After the chicken (in this case) is done, half of the fried onions and cilantro is added before being topped with the rice and the saffron-broth is drizzled. The pot is transferred to the oven and baked for 30 minutes then rested for 10 minutes ⏰ before serving.
 
Tomorrow, Ramadan starts and Chicken Biryani is one of the traditional dishes eaten during that time besides Harira, ShawarmaFalafel 🧆, Haleem, etc. Honestly, this is an involved recipe but the results are outstanding! To me, this is the perfect comfort food to enjoy along with a side of yogurt… yum!

Blue Cheese Butter Recipe • Versatile Condiment! | Club Foody

 

Most of us grew up eating garlic bread. It was usually served along with a bowl of pasta 🍝. My mother was buying it already pre-made. It was good as I didn’t know any better but that soon changed. When I moved out on my own, one of my girlfriends was making it from scratch… the rest is history!
 
I’ve been making compound butter for God knows how long! I love the freshness of it plus it’s so easy to make 👩‍🍳👨‍🍳. When it comes to savory ones, I think of Chive Butter, Tomato, Garlic Herb, Creole, Basil Lemon, Chipotle, Whipped Tarragon, etc.
 
Another one that I really like is Blue Cheese Butter!
This flavorful condiment is a classic! It’s so perfect to top on grilled steaks 🥩! Although this match is made in culinary heaven, it’s still amazing on roasted vegetables, in mashed potatoes, scrambled eggs, or simply spread it on bread, sandwiches or use it when making crostini!
 
The possibilities for using Blue Cheese Butter are immense. Whenever butter 🧈 is in a recipe, switch to this one instead. I put some on my baked potatoes or when I want to elevate my Mac and Cheese. Another plus about it is other flavors can be added like parsleybasilItalian seasoning, and so on.
 
There are many choices when it comes to this particular cheese 🧀. I use Smokehaus Blue which is an Applewood smoked cheese with a sweet flavor in the background… it’s very nice! Besides this one, there’s Roquefort, Gorgonzola, Bleu d’Auvergne, Stilton, Danish Blue, and many more.
 
Next time you’re having a nice juicy steak or want to elevate your vegetables 🌽 and other dishes, this Blue Cheese Butter is definitely a tasty option!

Meatballs in Creamy Mushroom Sauce Recipe | Club Foody

 

I don’t know if you’re like me but when I hear the word “meatballs”, I get hungry! Besides being an incredible comfort food, they can be made with different proteins. They can be served over pasta, in a sandwich 🥙 or just as is with some mashed potatoes and veggies.

Oh my, gosh 🤩!!!
These well-seasoned little guys are simply fabulous! Added to a lovely creamy mushroom sauce, the combination is magical! It’s incredibly tasty and an amazing weeknight recipe! This is another great satisfying meal to add to your folder!
 
It’s a big batch so you can always adjust the amount you need. After mixing all the meatball ingredients, the mixture is covered with plastic wrap and chilled for a couple hours ⏰. It gives time for the flavors to get to know each other!
 
When forming the balls, I keep a bowl of water 💦 right next to me to wet my hands so the meat mixture doesn’t stick to them. The size of the portion scoop I prefer using for this application is a 2-inch diameter but if you prefer yours smaller, choose your tool accordingly.
 
It takes about 40 minutes to bake the meatballs at 425ºF. During that time, we can start 👩‍🍳👨‍🍳 the sauce which takes about the same time to make. I normally start the mushroom sauce after I flip the meatballs halfway through cooking.
 
The sauce for this Meatballs in Creamy Mushroom Sauce recipe is easy to make. After the liquid from the fungi 🍄 is mostly evaporated, cooking sherry, heavy cream, and chicken broth are added. You can substitute heavy cream for half-and-half but the sauce won’t be as creamy.
 
The seasonings are pretty simple: Italian seasoning, hot paprika to give a little kick to it, and the two usual suspects… ground sea salt 🧂 and freshly ground black pepper – actually, it’s mixed peppercorns, not black! Now, click here to make your own Italian Seasoning.

Aïoli Recipe • Tasty Garlic Sauce! | Club Foody

 

There are many food items that I grew up with which suddenly became fashionably “hip”! I think of Croque-madame, seacuterie board instead of charcuterie served with crostini along with plenty of dipping sauces, steak tartaresmoothies, herbal water 💦, floats, French eggs, etc.
 
One that people went “ooh and aah” at the beginning of the 21st century was Aïoli! The women on both sides of my family were making it forever! The applications for this garlic sauce are very versatile plus incredibly easy to make 👩‍🍳👨‍🍳. Its texture is similar to mayonnaise.
 
This sauce is so multipurpose!
First, it makes a great dipping sauce on its own. It’s great for onion ringsregular or sweet potato fries, vegetables like zucchini sticks, artichokes, chicken fingers, and so on. Its flavor can be altered with other ingredients. I think of chipotle, pesto, sun-dried tomatoes 🍅, or herbs and spices like Creole seasoningItalian, etc.
 
Second, it’s a lovely spread! Smear some on your favorite sandwiches or burgers, wraps, or even bread and crackers! Instead of tzatziki sauce, I like using it when making my Zucchini Pancakes… it’s totally an OMG 🤯!
 
Third, there’s no doubt about it that Aïoli is the perfect fit for fish and seafood 🐟🦞! Pair it with crab cakes, fried shrimp or mussels, lobster rolls or cakes, and the list goes on. When I make Bourride Provençale or even one of my pasta sauces, I add this French sauce to them… it’s so yummy!
 
Lastly, it’s an amazing condiment!!!
Just think about a nice steak medium-rare with Aïoli served right next to it! I say steak 🥩 but frankly, any other meat goes well with it. Use that instead of garlic butter. When making an omelet or simply fried eggs, put a dab of it in lieu of regular butter…
 
This recipe is simple… Mash garlic cloves with some sea salt 🧂 to form a paste. Next, mix together egg yolk, mustard (depending on your recipe), and freshly squeezed lemon juice. Add the oils, gradually, in a slow stream.
 
Contrary to other recipes, the main oil I prefer using is grapeseed and then some extra-virgin olive oil. The reason why I don’t use all olive oil is because I find it tastes heavy, even extra-virgin. After these two are well incorporated, you should end up with a nice thick and creamy garlic sauce 🧄!
 
If you are a garlic lover 💖, this Aïoli is the ultimate sauce! Besides being insanely tasty, it can be stored in the fridge for 10 days. Take the 5 minutes to make this Mediterranean sauce. I won’t be surprised if it becomes one of your favorites!

Panko-Crusted Lobster Cakes Recipe | Club Foody

 

When I want to highlight a special occasion such as birthdays 🎂, dinner parties or events, I like to serve seafood. I find it’s so delicious, most cases, easy to make and it also brings a touch of elegance. It can be as an hors d’oeuvre, an appetizer or the main course.
 
Serving seafood 🍤 as an appetizer is light and doesn’t stuff your guests prior to “la pièce de resistance”. There’s a vast choice of recipes to choose from on the website like Shrimp MartiniMoules MarinièreCrab Stuffed MushroomsOysters BienvilleBay Scallops ChowderEscargots à la Bourguignonne, etc.
 
Another one that is always a crowd pleaser 👨‍👧‍👦 is my Panko-Crusted Lobster Cakes! Extremely easy to make, these guys are incredibly flavorful! With a gorgeous combination of ingredients and seasonings, this is a great recipe to have in your repertoire.
 
The mixture is simply amazing! I add mayo – homemade, of course! -, green onions, roasted red peppers and celery. For the seasonings, there’s paprika, tarragon, the two usual suspects which are salt 🧂 and pepper plus my Old Bay seasoning blend.
 
The star ⭐ of this appetizer is simply a can of minced lobster meat. This recipe was created by accident. When I bought the can, I didn’t read properly and was expecting chunks of meat, not minced, to make my Seafood Stuffed Crêpes. Knowing it was the wrong texture, I, therefore, made these Panko-Crusted Lobster Cakes instead!
 
One important tip I want to mention…
Normally, the can of minced lobster meat will be frozen and kept that way until ready to use. It’s thawed out in the fridge for 12 to 24 hours. However, this process creates some condensation and makes the lobster meat wet. When forming the patties, gently squeeze out the extra liquid 💦 until mostly gone.
 
The cooking time is just a charm! After rolling the patties in breadcrumbs and bringing the oil and clarified butter 🧈 to a sizzle, the cakes only take 3 to 4 minutes per side or until golden brown. A word of warning… take your time when flipping them as they’re a bit on the fragile side.
 
These Panko-Crusted Lobster Cakes 🦞 are amazingly tasty! Served with Rémoulade, Aïoli, Russian or Thousand Island dressing, this is a delightful appetizer to enjoy for any special occasion!
