Curry Chicken Salad Sandwich Recipe • So Tasty! | Club Foody

 

I think sandwiches are underrated! There are many delicious sandwiches out there and they deserve some serious recognition! They’re easy to prepare, quick to make, and quite frankly, versatile! Sandwiches are one of the most popular finger foods we all love 💖!
 
There’s such a wide variety to choose from. I think of Croque-madame, Reuben, Monte Cristo, a simple tomato or cucumber sandwich, the East Coast fav… Lobster Rolls 🦞, Italian, Sloppy Joe, BLT, Egg Salad Sandwich, Grilled Cheese, Po` Boy, Montréal Smoked Meat, Club Sandwich, and the list goes on…
 
Another one that is underestimated is a chicken salad sandwich 🥪. When there’s chicken leftovers, David likes to make these sandwiches. I enjoy them too but one day I decided to go a step further and I ended up making this recipe… Curry Chicken Salad Sandwich!
 
My first attempt was bang on but the chicken meat 🐓 was too coarse for my liking therefore I poached and shredded the protein. Bingo! It was perfect! Either the chicken is cut into small pieces or shredded, both ways are delicious!
 
What makes this Curry Chicken Salad Sandwich amazingly tasty is the dressing. The combination of ingredients marries so well together. I tried replacing some of them but in the end, I always go back to the initial list.
 
One ingredient that surprisingly adds another flavorful dimension to this sandwich is mango chutney 🥭! Sweet, spicy and tangy, this condiment brings this recipe to the next level. You can find it at your supermarket but it’s so easy to make. Click here to get the recipe… Mango Chutney
 
Let’s talk about the elephant 🐘 in the room… Miracle Whip!
Did you know that this condiment has a beautiful blend of spices such as mustard, paprika and garlic? It’s not as rich as mayo and has a lower fat content making it “healthier” than its counterpart. Go ahead, lift your nose to it and use all mayo if you want but you’ll be missing out on flavor!
 
Similar to a Coronation Sandwich, this quick and easy finger food is perfect for the summer months or when you don’t feel like investing too much time cooking. Besides being extremely mouthwatering, this Curry Chicken Salad Sandwich is a great food item to bring for a picnic, lunch, road trip 🚗 or your next backyard party…

Middle East Labneh Recipe • Deliciously Versatile! | Club Foody

 

If you ask 50 people what their favorite cuisine is, most of them will give you one or two. Ask me the same question and I’ll tell you that I like them all. Although, I lean towards French, Italian 🍝, Mexican and Moroccan, there’s another one that fascinates me and it’s Middle Eastern. Its food is so tasty!
 
Not only colorful but also bold in flavor, I’ve shared many of their recipes like ShawarmaPomegranate MolassesShish TawookShakshoukaFalafel 🧆, Shish Kebabs, and many others plus the ones that are in backlog that I’ll be posting in the near future.
 
When it comes to smaller dishes also known as mezemezze or mezé, there’s already a list to choose from on the site 😊. There’s Baba Ghanoush, Hummus either Red Pepper or Beet… both incredible, TabboulehKoftaDolma, etc.
 
There’s another one among the meze that is extremely popular and it’s Middle East Labneh! It’s basically yogurt that has been strained to remove the whey which in return becomes a thick, creamy, tangy yogurt cheese similar to cream cheese. It takes not even 5 minutes to make it ⏳ with just 2 ingredients!
 
I love it because it’s incredibly delightful, versatile and healthy 💚 as well! It contains calcium, good bacteria, a great source of protein plus low in fat, low-carb and low-calorie with no added sugar. It also keeps very well in an airtight container stored in the fridge for up to 4 days.
 
To successfully achieve this simple recipe is the kind of yogurt used. You need full-fat Greek-style yogurt or plain whole milk yogurt. Stay away from non-fat or low-fat… keep them for other applications. The reason is the dip will turn into a pasty, gritty texture with a sour taste to it… not appealing at all!
 
The other ingredient is salt 🧂 which helps to drain out the whey. The two combined ingredients are scooped into cheesecloths or muslin and strained for 24 hours. The hardest part of this recipe is to wait until the next day while Father Time looks after it!
 
When I make my Middle East Labneh, I line a colander with a couple cheesecloths, add the mixture to it, fold the cloths over and place in a bowl. If the colander touches the bottom of the bowl, you’ll have to tie the cheesecloths around a wooden spoon 🥄 and place the spoon across the top so the whey strains properly without making the bottom of the labneh wet.
 
From one country to another, container sizes may vary. Here in Canada 🍁, my Greek-style yogurt comes in 650 grams/23 ounces – not quite 3 cups – while in the states, grocery stores sell 32 ounces which is 4 cups. Because mine is a smaller size, I add ¾ teaspoon of ground sea salt. It’s roughly ¼ tsp. per cup therefore if your container is 32 ounces, use a full teaspoon of salt.
 
When the whey is removed, leaving you with a nice, thick, creamy texture, it’s ready to be served… well, almost! I like drizzling on extra virgin olive oil and sprinkle the top with Za’atar. There are other options to serve it; substitute honey 🍯 or pesto for oil, use other spices, add some chopped pistachios, lemon zest, etc.
 
Let’s go back to the whey…
After the yogurt is drained, don’t discard the whey and repurpose it for other recipes like in soups, smoothies or milkshakes, bread, cornbread, and muffins. Cook oatmeal, rice 🍚 or pasta with it. Reuse whey as a starter for another batch of yogurt.
 
Middle East Labneh is super easy to make with great results! This delicious creamy, tangy dip is perfect to serve with crostini, warm pitas, crackers, crudités or even man’oushe. In lieu of cream cheese, spread it over sandwiches 🥪, top pizzas with it or as an ingredient in salads. After making it a few times, you’ll find many other uses for this versatile strained yogurt cheese…

Coffee Cocoa Rub • Incredibly Tasty! - Tips & Tricks | Club Foody

 

When barbecue season 🔥 is in full swing, every grill master needs great condiments. At least a couple BBQ sauces if not more, different kinds of rubs, jars of spice blends, 2 or 3 hot sauces, and so on. Without them, the experience of grilling food is not fully accomplished.
 
When it comes to rubs, I have a few that I already posted like Smoky BBQ RubHomemade Fish Rub that goes amazingly well with all sorts of fish, and recently my Kansas City Dry Rub. Each of them has its own flavor for different proteins.
 
Another one that is totally an OMG is my Coffee Cocoa Rub! This is probably the most versatile one of them all. It goes so well with beef, pork 🐖, lamb including venison and wild meat plus it takes just a couple of minutes to make.
 
When we were in Edmonton last September, our hosts, Tracy and Kathy, had some venison 🦌 in the freezer. After thawing it out, I suggested Tracy use my Coffee Cocoa Rub. I mixed all the ingredients and generously applied it on the meat before grilling. While eating it, everyone was moaning in appreciation… a good sign that it was delicious!
 
This tasty Coffee Cocoa Rub is incredibly easy. It takes less than 5 minutes ⏳ to make and you’ve got yourself a freshly made blend. I guarantee you, this will really enhance your grilled food…

Coffee Cocoa Rub ingredients;
– 1 tbsp. coffee, finely ground
– 1 tbsp. brown sugar
– 1/2 tbsp. chili powder
– 1/2 tbsp. ground cumin
– 1/2 tbsp. mild paprika
– 1 tsp. dark cocoa powder
– 1 tsp. finely ground Himalayan pink salt
– 1/2 tsp. finely ground black pepper
– 1/4 tsp. onion powder
– 1/4 tsp. garlic powder

  • In a small bowl, combine all the ingredients; whisk until nicely blended.
  • Transfer to an airtight container and store in a cool, dark area. Yields 5 tablespoons.

    Garlic Shrimp Recipe • A Tasty Favorite! | Club Foody

     

    Many out there are trying to come up with new recipes combining different ingredients and flavors… which is totally fine and creative! Will they be something that people will still enjoy in 20 years or a century from now 🤔?
     
    Throughout the eras, there are many recipes that were created that we still make to this day. They’re what we call “classic” or “vintage”, if you prefer. They can go as far back as BCE (Before Common Era) 😮.
     
    I think of Meat Pie from Greece 1000 BC, Noodles in ancient China back to 2000 BC, 14th century Pain Doré or Pain Perdu (French Toast), Hummus from the 13th century, Tamales recorded back to 8000 BC, and many more including wine 🍷 (6000 BC) and beer 🍺 which is one of the oldest beverages (8500 BC).
     
    David and I are from Generation Jones aka Baby Boomers II while my brother is from Gen X. What was quite popular back in the 60-70-80s and still are include Cocktail Meatballs, Moussaka, Wedge Salad, Surf and Turf, Beef Wellington, Cheese Balls 🧀, Cowboy Stew, Trifle, Chicken à la King, and the list goes on.
     
    Another one that gained popularity by its taste and simplicity was Garlic Shrimp! Often referred to as Shrimp Scampi 🍤, this succulent dish was the new kid on the block with its amazing garlic-lemon sauce enhanced by butter giving it that lovely creaminess.
     
    The interesting part of this seafood recipe is it has been an iconic tapa of Spain. Known as gambas al ajillo, it’s found mostly in the central and southern regions of Spain. It’s typically served as an appetizer.
     
    Garlic Shrimp should by in anyone’s recipe folder due to its versatility. Stand-alone as an appetizer along with crusty bread to soak up that gorgeous sauce, it can also be served over a bed of pasta as well as paired with a side of mashed potatoes or rice.
     
    Traditionally, the shrimp or prawns are sautéed in olive oil. As a preference, I use canola oil. I’m not shy with the garlic… I use 8 huge ones 🧄! I also like adding red pepper flakes to it versus cayenne. Usually, sherry is added to the sauce. I go either way between this and dry white wine… it depends on how I feel.
     
    This Garlic Shrimp recipe is perfect when entertaining as it takes less than 15 minutes ⏳ to make. The blend of flavors gives an amazing taste experience. Although being around for a long time, this dish became a North American favorite since the 70s and it’s not about to disappear anytime soon.

    Strawberry Mango Margarita Recipe • Fresh & Tasty! | Club Foody

     

    As much as we enjoy entertaining our friends and family all year round, summer is our favorite time! Like us, there are a lot of backyard parties going on. The barbecues 🔥 are in full swing while guests are sipping on cold beverages and cocktails.
     
    Lemonade, Slushies, Iced Tea, Agua Fresca, non-alcoholic Spritzer, Lassi, Agua de JamaicaGranitaMilkshake, Fruit Punch, Floats, and others are great refreshing non-alcoholic beverages to enjoy when the mercury rises 😎.
     
    When it comes to cocktails 🍹🧉, the list of recipes is even longer. I think of Sangria… white or red, Piña Colada or Chi Chi, Mojito, Moscow Mule, Daiquiri, Tequila Sunrise, Bellini, Negroni, Paloma, and so on. Margarita is another summer favorite…
     
    I love Margaritas 💖! They can be plain, spicy, or fruity. I think of Mixed Berries, the classic one, Cadillac Margarita, Coconut Cottontail, Moscato, Spicy Jalapeño, Mezcal, etc. Another one I really enjoy is Strawberry but one day I decided to put a delicious twist on it and came up with Strawberry Mango Margarita!
     
    Both individual flavors are among the most popular drinks but when combined together, this cocktail becomes an OMG 🤩! The sweetness from those two fruits along with a slight acidity from the juicy strawberries makes this cocktail a crowd-pleaser!
     
    Making Strawberry Mango Margarita takes not even 5 minutes when using frozen fruits. Of course, it takes a little longer when prepping fresh ones. Strawberries 🍓 are pretty simple to do but if you’re not too sure on how to prep mangoes, here’s a tutorial on it… How to Cut a Mango
     
    There are a few options to choose from for the ingredients. For the orange liqueur, you can either go for Cointreau or Triple Sec – Grand Marnier is not the right way to go. I prefer blue agave when it comes to tequila but use the one you like. To add sweetness to the mix, simple syrup is excellent but so is agave nectar.
     
    Very quick to make ⏳, this refreshing summer cocktail is always a hit! Made with fresh ingredients, this delicious Strawberry Mango Margarita is much better than any pre-mixed versions. Like I always say, “drink responsibly”.
