Shrimp Bruschetta Recipe • Incredibly Tasty! | Club Foody

 

David and I entertain a lot and more so during the summer time. The weather is nice so we fire up the barbecue and eat outside on the patio. Unless it’s during the Holiday season 🎄, I tend to serve more hors d’oeuvres… small, bite-sized foods.
 
Depending on the occasion, it can be Cucumber Tea SandwichesKorean MeatballsCaprese SkewersKentucky Hot Brown SlidersCroquetas de Jamón • Ham CroquettesGougères aka Cheese PuffsCrab Stuffed Mushrooms 🦀, etc.
 
There’s one that falls in this category and its Bruschetta. This popular Italian finger food is always a crowd pleaser 👨‍👩‍👧‍👦! Besides my Duxelles Bruschetta and my Italian-Style one, here’s another amazing version… my Shrimp Bruschetta!
 
Deliciously different and original, this take on a roman classic is simply incredible! It can be served as is as a snack or canapé, along with a charcuterie board, or with a green salad 🥗. It’s quick and easy to make with fabulous results!
 
The most common bruschetta is the basic tomato salad made with basil, onions 🧅, garlic and oil with salt and pepper, served over crostini. Don’t get me wrong, I love it but I’m that type of person that likes to elevate recipes just like when I created my Duxelles one.
 
As the title indicates, this version is made with shrimp that have been grilled on the BBQ and basted with my gorgeous Garlic Herb Butter. The crostini are spread with goat cheese before being topped with a tomato salad 🍅. Grilled shrimp follow and then its finished with a drizzle of my Homemade Balsamic Glaze… yummy!
 
Let’s talk about the cheese 🧀…
I love goat cheese but in the past few years, the prices went up quite significantly. These Shrimp Bruschetta are loaded with deliciousness therefore cream cheese can easily be swapped in lieu. It’s less expensive 💰 and will still deliver in the flavor department.
 
Before grilling 🔥 the shrimp, it’s important to pierce them twice. It prevents them from spinning around, making it easier to flip as well as cooking them evenly. It also secures them, preventing them from falling off the skewer and into the BBQ.
 
These small bites are so flavorful and pair very well with a nice, crisp, dry white wine such as Sauvignon Blanc or Pinot Grigio. Additionally, one that is very refreshing and complements this featured recipe is White Sangria. It has a lovely citrusy note 🍋 that is a great match for shrimp!
 
With many events taking place during the summer season, this Shrimp Bruschetta is a wonderful appetizer to serve. With bold flavor, this is certainly a crowd-pleaser and you’ll certainly wow 😮 your guests with this classy finger food!

Caramel Frappuccino Recipe • Cold & Delicious! | Club Foody

 

Although I like sipping an Lemon Iced TeaLemonade 🍋, or Agua de Jamaica on a hot summer day, I’m a coffee lover and like reaching for the iced version. It can be either my Vietnamese Iced Coffee, Iced Mojito Mocha Coffee, Macchiato, or this one… Caramel Frappuccino!
 
My take on one of Starbucks’ popular coffee beverages is so refreshing plus it tastes better than the coffee shop chains! With simple ingredients, you can enjoy this delicious recipe in the comfort of your home 🏡 at just a fraction of the price without waiting in line to get it – win, win, win!
 
David and I own an espresso machine but for those of you who don’t have one, I show you how to make this Caramel Frappuccino without it. An appliance you do need though is a blender which helps break down the ice cubes 🧊, giving you that nice consistency.
 
This iced coffee treat is easy to make. What takes time is to truly chill the espresso coffee for a couple hours ⏰. When it’s achieved, it takes less than 5 minutes to whip everything up in the blender. If you can’t wait 2 hours to chill, at least let it sit for 30 minutes before mixing it.
 
What gives this cold beverage its delightful flavor is the caramel. It goes in the mix, as well as spreads inside the glass plus drizzled on top of the whipped cream. You can buy 🛒 the commercial brands from the store or simply use my Salted Caramel Sauce recipe. It’s quick to make and you’re sure not to run out.
 
This Caramel Frappuccino is pure indulgence! As a coffee lover ☕, this is a fabulous treat I like having during the summer! With this recipe, you can now recreate this amazing cold beverage anytime you want without stepping out!

Boti Kebabs Recipe • Indian Inspired BBQ Beef! | Club Foody

 

There are a couple food scents that trigger my appetite and they’re bread 🍞 as well as barbecue. The smell of bread baking in the oven or food grilling on the “barbie” simply triggers my “hunger hormone” known as ghrelin… whether my stomach is empty or not!
 
During the hot months of the year, our barbecue works almost every day. Besides the fact that we don’t heat up the kitchen and David is mostly in front of it, standing and cooking food 👨‍🍳 for us, anything grilled on it is super delicious!
 
Kebabs are among our summer favorites 💖! On the site, I have several recipes such as Yakitori ChickenCreole Shrimp & Andouille KebabsGreek OuzoTurkishHawaiian Teriyaki Shrimp Kebabs, and more. Let’s add another one to this yummy list… my Boti Kebabs!
 
Beef cubes are marinated for 24 hours in a gorgeous mixture made with an array of spices along with a papaya purée. The next day, red peppers, red onions 🧅 and beef cubes are threaded on and grilled for 12 minutes, rotating every 3 to 4 minutes or until the meat reaches an internal temperature of 145ºF.
 
This Boti Kebabs recipe is easy to make. There are a few quick steps to do first. Coriander and cumin seeds are toasted for a couple minutes or until fragrant and lightly brown. Typically, I don’t time it and rely on my nose 👃 – when I can smell it, it’s done!
 
From here, the seeds are ground into a fine powder and dropped into a large bowl. Plain yogurt, ghee, freshly squeezed lemon juice 🍋 and spices such as garam masala which is a lovely Indian spice blend, are added to the powdered seeds.
 
The next step is to turn papaya chunks into a smooth purée…
The fruit is processed in the blender with a little bit of beef broth. It takes 15 to 20 seconds to do. Then the fruit purée is added to the yogurt-spice bowl and blended together. Then the well-seasoned beef cubes join the party. After being coated, the bowl is transferred to the refrigerator for 18 to 24 hours 🕟…
 
The next day, the chilled meat is removed from the fridge and brought back to room temperature before being threaded which takes about 30 minutes ⏰. It’s an important step to do because it helps cook the meat uniformly.
 
When it’s time to thread, I chose red peppers and red onions however zucchini and yellow squash are great choices. Cherry tomatoes and mushrooms 🍄 are other options but I stay away from broccoli and cauliflower as they won’t hold their shape and become mushy if cooked too long.
 
The ideal BBQ temperature is between 500ºF to 550ºF. It takes about 12 minutes to grill, rotating every 3 to 4 minutes. When the internal temperature of the beef cubes reads 145ºF, the kebabs are ready to be enjoyed 😋!
 
If you don’t own a barbecue, here’s an alternative 😉…
Turn the oven to 400ºF and line a baking sheet with lightly greased foil. Place the skewers in a single layer and bake them for about 20 minutes, turning every 5 minutes, or until the internal temperature is reached. If you want a little char on them, turn the broiler on low and cook for 2 minutes, turning once.
 
After they’re grilled, I like serving the kebabs with yogurt on the side but a Creamy Tahini Sauce is also an alternative. There’s sliced cucumber 🥒 and cherry tomatoes I like adding to the plate along with naan bread… simple and yet so tasty!
 
These Boti Kebabs are so delightful! Extremely tender due to the yogurt as well as the papaya which both act as a meat tenderizer, this flavorful recipe is certainly a delicious item to put on the barbecue 🔥 this summer…

Watermelon Salsa Recipe • Colorful & Delicious! | Club Foody

 

Here in North America 🌎, when people see “salsa”, many refer to it as a dip, often spicy, served with tortilla chips. Actually, it literally means “sauce” in both Spanish and Italian. It’s commonly used as a condiment. These sauces are frequently made with a tomato-base along with onions, chilies and spices.
 
David and I like making 👩‍🍳👨‍🍳 salsa. It’s easy to prep and we enjoy its versatility. There’s Pico de GalloSalsa VerdeFire Roasted Salsa, and Spicy Tropical Salsa. Another one that joins this fabulous list is my Watermelon Salsa!
 
Like the Spicy Tropical Salsa, this featured recipe is not your typical sauce! Although most common salsa is a tomato-based 🍅 condiment known as “salsa picante”, it can also be a mix of different ingredients and spices.
 
Colorful, this Watermelon Salsa is incredibly tasty! I like serving it along with a nice grilled fish 🐟, octopus, shrimp, crab cakeschicken or pork. It can also be an addition to a recipe. Of course, the most obvious way to enjoy it is as a snack with tortilla chips or crostini.
 
After the salsa ingredients are well blended, the mixture is chilled for 1 hour ⏰ or until ready to serve to allow the flavors to mingle. If you’re running out of time, try to let it sit in the fridge for at least 30 minutes.
 
Meanwhile, there’s a little dressing I like making for it. One of its ingredients is agave nectar. I normally use just ½ tablespoon because watermelon and mango 🥭 already bring sweetness to the dish, and it doesn’t need more than that…
 
It keeps for up to 3 days, BUT the next day, you might have extra liquid at the bottom of the bowl due to the lime juice extracting the juice from the fruits and veggies. Simply stir 🥄 and drain the extra. Don’t worry, you’ll still have the flavor from the dressing.
 
As I’ve said many times – “we eat with our eyes first”, and this recipe delivers it perfectly! With a beautiful combination of ingredients, this original Watermelon Salsa 🍉 is a delicious dish to make this season while fresh produce is available!

It’s hot outside and after spending the day by the beach or the lake, getting back home at the end of the day to start cooking is not ideal. Most of us won’t feel like cooking or have the energy. The next best thing besides take-out 🥡 or ordering from our favorite restaurants is to make a sandwich…
 
On the website 💻, there are a lot of delicious ones to choose from. I think of Kentucky Hot Brown SlidersGrilled Cheese SandwichKorean Beef Lettuce WrapsNew England Lobster RollsCroque-madame, and more.
 
One that David and I make often because of its simplicity but also for its taste is Italian Pesto Panini Sandwich! In less than 10 minutes, from start to finish, this amazing finger food is ready to be enjoyed! It’s a light satisfying meal that can be easily paired with French fries, green salad 🥗 or just potato chips…
 
This sandwich has a great combo of Italian ingredients. There’s mortadella, sweet capocollo also known as capicola here in North America, and prosciutto. Of course, there’s more to it: tomato 🍅, red onionsroasted red peppers and Provolone cheese.
 
We shop 🛒 regularly at Costco. When vacationing in Puerto Vallarta, we came across a mixed deli package. As stated in the intro, after a day under the sun, the laziness kicks in and that package was perfect! If you’re interested to know, it’s called Citterio and nooo, I’m not being paid for mentioning it!

Just a quick note…
Pesto is a great condiment! It can be used as a spread (just like in this recipe) for sandwiches and burgers, on bread or pizza 🍕. Use it as an ingredient when making scrambled eggs, pasta, soups, etc. Enhance your kebabs or fish by brushing some on…

To make this Italian Pesto Panini Sandwich as authentic as possible, ciabatta buns 🍞 are the way to go. Although I make my own from scratch, we bought the Cheddar Cheese Ciabatta Buns a few times at our supermarket and they weren’t too bad. Focaccia, Pane Toscano or Pane Cafone are other options…
