HOW to CLEANLY SLICE SOFT GOAT CHEESE

 

When living in Toronto, I went to my dear late friend Brigitte for dinner and she served us a gorgeous Salad 🥗 with Warm Goat Cheese en Croûte as an appetizer. It was loaded with deliciousness! I was so impressed that a couple months later, I decided to serve the same dish to another friend of mine…
 
Yikes! 😣
The goat cheese rounds looked like they went through a mill because of its softness. Even using care and a thin bladed knife, I couldn’t accomplish a clean slice like hers. After I went through half the log, I picked up the phone 📞 and asked her how she did it to slice them so neatly… – “dental floss”, she said. What?
 
She wasn’t kidding… 😮
 
Here I am, decades later, showing you the trick I learned from my girlfriend on How to Cleanly Slice Soft Goat Cheese! The only thing that has to be done prior to slicing 🔪 is to transfer the log to the freezer for a short while so it’s not as “soft”, about 15 minutes. Also use unflavored dental floss.
 
How to Cleanly Slice Soft Goat Cheese trick applies for soft goat cheese with or without rinds. At my supermarket, I like buying Chèvre without the rinds. They sell it either plain, with fine herbs, peppercorn, or, during the Holidays 🎄, the cranberry cinnamon… all of them are so yummy!
 
There are other ones like Boucheron, Goat Brie and Florette which all have rinds on the outside. There’s one straight from California called Bermuda Triangle. It’s semi-soft and has a strong peppery taste to it… very beautiful 🤩!
 
There’s another French one that is coated in ash from charcoal and it’s called Valençay. It has a very distinctive truncated pyramid shape. It’s actually quite lovely with a tasty citrusy flavor 🍋 along with tanginess that is so characteristic for goat cheese.
 
Here’s a history event that occurred when Napoléon Bonaparte was defeated in Egypt. Upon his return to France back in 1799, he stopped at the castle 🏰 of Valençay. When he saw the pyramidal cheese, he got pissed off, took his sword and cut the top off, leading to its current shape…
 
This How to Cleanly Slice Soft Goat Cheese trick is a great one to know. These rounds can be used for a charcuterie board, in salads, as a side for your favorite pasta dishes and even for dessert with a nice jam or drizzled with honey 🍯 along with nuts.
