African Lamb Tagine Recipe • A Flavorful Conversation Piece! | Club Foody

If you asked me which countries I would like to visit, you might be surprised by my answer. Although I might be curious about France and England, these two are not on my priority list. The ones I really want to go to are Russia, Portugal, Italy, Greece, Spain, Peru, Chili, Vietnam, Thailand, Egypt, Jordan and Morocco.
 
I am attracted to things that I’m not familiar with or different from what I’m used to so the curious side of my personality can be satisfied! I love to discover, I love to experience new things that I’ve never experienced before and of course, that includes food.
 
A few years ago, I bought a tagine on line. Initially, I wanted to buy this cooking vessel while visiting Morocco. Being impatient as a typical Aries, I bought it without having set foot in that particular country; eventually I will though, it’s in the cards! All I wanted to do with it was to create exotic recipes like this one… my African Lamb Tagine! It resembles a little like “Mrouzia”, a Moroccan sweet & savory tagine served during the Eid al-Adha festival.
 
This is an incredible recipe! With a beautiful rub, this is a dish that is very flavorful! Without patting myself on the back (actually I am… I’m very proud of the results… lol!), this is a meal I enjoy serving my friends. This dish and especially the cooking vessel is quite a conversation piece. There’s an ingredient that I didn’t add this time but I will in my next tagine recipe I’ll be sharing with you. It is “L’hamd Marakad” which is pickled lemon used in Moroccan cooking in many dishes. It’s absolutely delish!
 
The way I like to serve this African Lamb Tagine is with rice, either white or saffron. Sometimes I like to pair it with my couscous… it all depends on how I feel and how much flavor I want to add to the menu. Another food item that is “a must” is flatbread (hobz) or even naan.
 
If you like to experiment in the kitchen with new styles, new ways of cooking and definitely new flavors, this African Lamb Tagine is the perfect dish to make! If you’re not a big fan of lamb, you can always substitute chicken… it’s just as lovely and tasty!

Note: You can make everything without a tagine. Simply use a large saucepan.

Dulce de Leche Turtles Recipe • A Treat with a Twist! | Club Foody

Halloween is a very good occasion to indulge ourselves with a few sweet treats. Every year, I just have to make something sweet for this event. It can be chocolate barstartspiesmuffinscupcakes or candies like my Dulce de Leche Turtles!
 
I’m sure most of you have had Turtles before and as you may know, this candy is made with caramel. Now just imagine them with dulce de leche instead. Oh yeah… It’s definitely a delicious twist from the original version. It doesn’t stick to your teeth as much as caramel does and you still have that delicious taste in the background.
 
These yummy Dulce de Leche Turtles are simply amazing! Because they are not as “gooey” as the ones made with caramel, keeping them chilled at all times is a good way to prevent them from getting too soft. Another way to make them “stickier” is to simmer the can of sweetened condensed milk longer. That would make the mixture thicker.
 
I also prefer using dark chocolate instead of milk but as I’ve mentioned often in many of my recipes, use the one you prefer – after all they’re your turtles. I didn’t show it in the video but sprinkling a little bit of fleur de sel on top of the chocolate helps to elevate the flavors of this candy.
 
If you are entertaining or spoiling the little ones with treats for this coming Halloween, don’t trick yourself with another candy recipe and make these scrumptious Dulde de Leche Turtles instead… they’ll love it!

Perfect Mushroom Risotto Recipe • Easy and Delicious! | Club Foody

Mmmm… mushrooms!
 
There’s such a wonderful variety of sizes, shapes, colors and flavors. They are so versatile; you can use them in soups, salads, sauces, as a side dish or a main dish. Don’t you just love them? Ever since I can remember, I’ve always loved mushrooms and things haven’t changed.
 
The first time I tried Mushroom Risotto, it was love at first “bite”! I was dining at an upscale restaurant in New York City when I saw that dish on the menu. So as a mushroom lover, I just had to order it. As much as I anticipated a delicious meal, I never thought it would exceed my expectations… it was heavenly!
 
I never thought I’d ever try making it at home until a few years ago. Being disappointed many times and failing to find a great place that could make it properly, I decided I should try to make it myself. The first attempt wasn’t perfect, I overcooked it and instead of being creamy, it turned out to be mushy… yuck! This didn’t discourage me from trying to make it again and thankfully, my second time was a triumph! I was so pleased with my Mushroom Risotto results that it has become a regular food item on our kitchen menu.
 
I know it takes time to cook and stirring constantly for over 20 minutes can be exhausting BUT in the end, this is such a lovely dish you will be proud to serve. Some chefs would say that it takes years to make a perfect risotto. I’d say it takes patience, accuracy, more patience and love. Just follow the steps, don’t rush anything and you will get an amazing Mushroom Risotto!

Pad Thai Noodles Recipe • Tasty Thai Dish! | Club Foody

When I started cooking Asian food, it was challenging and fun; challenging because I didn’t know most of the ingredients and fun because I was learning and discovering something new. Till this day, I’m still on a delicious culinary journey with Asian cuisine.
 
In the past, I’ve posted a few recipes from all over Asia like my Dakgangjeong (Korea), Summer Rolls (Vietnam), Spicy Pork Gyoza (China), Tuna Tataki with Avocado Slaw (Japan), Chicken Satay with Peanut Sauce(Indonesia), Singapore Noodles (Singapore), Thai Chicken Curry (Thailand), and so on.
 
Talking about Thailand and its incredible cuisine, I have another recipe that I enjoy making often because it’s so delicious… my Pad Thai Noodles! Yum, yum, yum! It’s fast to make without compromising on the taste. With a little sauce, this is a dish that is quite amazing!
 
This is served at most restaurants and also as street food. It’s their countries traditional dish. According to “Wikipedia”, there are two stories on how the Pad Thai Noodles recipe came about. The first is it was created during the period Thailand was rebuilding its nation therefore where its name came from. The second is when Thailand had a rice shortage during WWII and rice noodles were used over rice to help reduce domestic consumption. Regardless of which story is correct, this is definitely a great recipe to make…
 
With a busy schedule and little time to cook, this Pad Thai Noodles recipe is a good one to serve on weeknights. Within 30 minutes, there’s a lovely Asian meal packed with flavor to enjoy … another great recipe to add to your folder.

Meat Lovers Pizza Recipe - A Carnivore's Dream! | Club Foody

Like anything else… if you’re good at making something, the chances of making it often is pretty high. That is exactly what happened when I started making my own pizza dough. I couldn’t get enough of it. The aroma and knowing that all my ingredients are fresh, make this dish popular in my house.
 
Monotony is not a part of my world. I like changes, I like to diversify and make things different and fun. A place that I can do that every day is in my kitchen. After I’m done creating a recipe, I’m off to the next one. I have to say that I’m lucky to have a man like David because he lets me do my “artsy” culinary experiments as much as I want… He’s a brave guy!
 
Most of the time, the results are great and other times the results are absolutely incredible! The best example is with this new creation… my Meat Lovers Pizza! Oh my, oh my! This pie is amazingly flavorful! There’s a nice selection of meats along with other fresh ingredients and spices plus one ingredient that will blow your mind… mustard!
 
When I was thinking of the combination of ingredients, David mentioned how good it was when we went to Montréal and enjoyed a great Montréal-style smoked meat on rye bread with yellow mustard. Of course….The light bulb went off! I needed mustard in this Meat Lovers Pizza recipe! It might sound strange but trust me on this; this condiment wraps up the whole dish…
 
Another important component to make this pie even more delicious is the pizza dough. I obviously used one of my recipes… Easy-Cheesy Herb Pizza Dough! It’s simple and uncomplicated to make and the results are remarkable. It brings freshness to the pie and takes it to a new level of yumminess. Now if you want to change things up a little and try another dough recipe, here’s my Rustic Italian Pizza Dough. It’s deliciously different!
 
This Meat Lovers Pizza is perfect for any meat enthusiast. With ham, bacon, hot Italian sausage, beef, garlic sausage and smoked meat what more could a meat lover ask for… it’s heaven in a pizza!

Vanilla Sugar • How to Make It - Tips & Tricks | Club Foody

There are many food items that are sold at grocery and specialty stores for exorbitant prices. Just to give you a few examples, there’s TahiniRoasted PeppersGround Turkey/ChickenButtermilk and so on. During the Holidays, there’s another pricey item that is sold besides Powdered Sugar and it is Vanilla Sugar!
 
If you are a baker, you definitely have granulated sugar and most certainly vanilla beans around. As simple as it sounds, when the two are combined together and stored in an airtight container for a week or two, the sugar will absorb the delicate flavor from the vanilla and turn it into Vanilla Sugar!
 
This popular European flavored sugar can be used in so many recipes. The ones I like to use this item in are my Cannoli, Rustic Autumn Fruit Tart, Paçoca, Holiday Sugar Cookies, Slow Cooker Rice Pudding, when I macerate my strawberries for my Shortcake, and many more. Also, sprinkling it over bread or cupcakes gives a nice finishing touch. I drink my coffee black (once in a while I like a little Irish Cream liqueur in it) but if you add sugar to yours, use this one instead. Presented in a nice little jar with a decorative bow, it can be a nice gift to give your “foody” friends for the coming Holidays.
 
Don’t be lured into buying this “fancy” product when you go to a specialty store because now you can make this Vanilla Sugar at home for a fraction of the cost.

Slow Cooker Beef Brisket Recipe • Flavorful Cut of Meat! | Club Foody

Before Club Foody was up and running, I occasionally used my slow cooker. It wasn’t a cooking vessel that I was reaching out for often. I wonder why because it sure does save precious time when there’s not enough… – I’m always challenged with a lack of time!
 
I still don’t cook as much with it as I do with my other cookware but I do use it more and more. I cook soups, appetizers, chiliesstewsmeats, fish & seafood, pasta dishes, desserts, beverages… It’s like having your own personal chef! Seriously! There’s a little prep to do in the morning and then it’s done. Hours later, there’s a meal (or dessert, drink) ready to be enjoyed. That’s the smart way to have home cooking without a lot of effort!
 
The featured recipe is another delicious way to use the crock-pot… my Slow Cooker Beef Brisket! Wow! This dish is very flavorful! It has some kick to it but not to the point you need to grab your kitchen extinguisher… lol! The purpose wasn’t to make it too spicy but very tasty so it can be used in other recipes.
 
From past experience with this kind of cooking vessel, I realized that the seasoning weakens as it cooks therefore I now crank up the seasoning a notch or two… maybe even three! For this Slow Cooker Beef Brisket I use dried guajillo and ancho peppers, you know those bags that look a little intimidating and if you haven’t grown up with your mother using them, you won’t touch them. Trust me, they’re not as bad as they look and they bring so much flavor to your dish…
 
There’s very little preparation involved and the results of this Slow Cooker Beef Brisket recipe are incredibly delightful! After it’s cooked, as I said, it can be used for other recipes such as sandwiches like Beef Brisket Arepas or Empañadas, as well as in a pizza, soup, etc… The first step you have to do before getting your personal chef to work is to dust off your crock-pot…

Cream of Mushroom Soup Recipe • Rich and Flavorful! | Club Foody

I have to admit that as a child I wasn’t too picky when it came to food because my parents didn’t let me. If I didn’t like something… just too bad, eat it! Although they were tough on my brother and I, they also helped us to have an open mind about food by forcing us to eat a little bit of everything.
 
There is a type of food that was and still is my ultimate favorite… mushrooms! While most kids didn’t like these fungi, I was so happy when I saw my parents cooking with them. Back then, the cremini mushrooms – also known as white button – were the only ones they knew about… perhaps other kinds weren’t as readily available as they are now.
 
As I was spouting up like a mushroom and eventually moved out on my own, I started cooking a lot with mushrooms, using them in so many dishes. I also went from cremini to portobello and eventually used other kinds that I wasn’t familiar with. That is when I created my first Cream of Mushroom Soup!
 
My first attempt wasn’t too shabby but throughout the years, this recipe got better and better. It was missing a few ingredients before this soup got to where it is now. I won’t spill the beans just yet but I have to say that this soup is so flavorful and “earthy”.
 
As the cold months are just ahead of us, a good cream of mushroom soup is always welcomed. It’s rich in flavor and can be served anytime. This is the kind of soup that is not only comfort food but also elegant enough to serve to your guests.
 
As I always say “homemade is the best” and this is another recipe that proves it. This cream of mushroom soup takes some time to make but when you sit down to enjoy it, you’ll be quite pleased with the flavorful results… it’s so worth it!
