Romesco Sauce Recipe • Delicious Versatile Spanish Sauce! | Club Foody

 

When I think of Spain, I see the ocean and beautiful beaches, flowers everywhere, sun and lots of it, its gorgeous architecture and sightseeing, history, culture, and of course its food. There are so many mouthwatering Spanish dishes like Gazpacho, Ajoblanco, Patatas Bravas, Croquetas, Albondigas, Pisto, Bacalao a la Vizcaína, PaellaSangria, etc.
 
There’s an incredible recipe from the region of Catalonia and it’s called Romesco Sauce! What a lovely recipe! With roasted peppers, tomatoes and roasted garlic, this condiment brings your protein to a whole new level of deliciousness!
 
This is the perfect pairing for fish. In the video, I use red snapper but tilapia, sole and halibut are also great choices. Most of the time here in North America we enjoy escargots with garlic butter but I like serving it with this sauce too. Mussels, prawns or clams can be another succulent alternative. Other proteins like chicken or pork can also be beautifully paired with this Romesco Sauce. Spooning it over pasta or roasted vegetables are other options as well. Another way to use this delightful sauce is as a dip with crudités.
 
According to Wikipedia (link), true Romesco Sauce is made with rehydrated ñora peppers (nyora), native to the Valencia region of Spain, which are often referred to as the paprika pepper. It’s a small round, sun-dried chili with a dark red wrinkled flesh and has a mild flavor similar to a bell pepper. It is used as a spice (red pepper flakes) or as an ingredient like in this recipe.
 
The most important step for this recipe is roasting. Ingredients like red peppers (if you can’t find the ñora peppers), tomatoes and a whole head of garlic are roasted in the oven. This gives a nice smokiness to the sauce. Almonds are another important component for this dish and it’s important to blanch them prior to making this recipe. Mediterranean cuisine uses a lot of oil and when it comes to toasting the bread, I do it in the skillet. Can you use a toaster instead? Sure but you’ll be missing out on a layer of yumminess by skipping this simple step.
 
As unusual as it sounds, this sauce is served at room temperature. It can be warmed up a little but definitely don’t cook it because you’ll lose its brightness. This makes a great condiment to serve on hot summer days.

Grilled Jalapeño Poppers Recipe • A Crowd Pleaser! | Club Foody

 

I’m a barbecue foody (yes with a “y”) because I love the smokiness of grilled food. If I have to choose between a filet mignon seared in a cast iron pan versus on the barbecue, I’ll go for the grilled one – the same applies to Grilled Chicken versus the one I baked in the oven.
 
There’s another recipe that I enjoy even more since we bought a pepper roasting rack a few years back and it’s my Grilled Jalapeño Poppers! Smoky, slightly spicy and cheesy, these are scrumptiously delicious and great for backyard parties. The beauty of this recipe is the poppers can be stuffed ahead of time so they’re ready for when you want to cook them on the barbecue.
 
Technically, poppers are deep-fried and although I love them that way, during the summer time they’re better on the grill plus you don’t have to stay inside to cook them. It’s a nice twist on an American classic.
 
Stuffed with a bunch of tasty ingredients, this is an incredible barbecue recipe! I use my mild Italian sausage because the peppers already have some heat but nothing is stopping you from using hot. If you make my Homemade Sausage recipe and want it to be mild, don’t add any red pepper flakes. I also add some onions and fresh chopped rosemary to the meat mixture along with two types of cheese and pimento peppers. The combination is totally a “wow” factor for these Grilled Jalapeño Poppers!
 
Since we bought this grilling rack, we’ve been creating a bunch of other delicious barbecue popper recipes like Hawaiian, Greek, a Canadian version as well as an Asian one. They’re all amazingly tasty and I’ll be posting them in the years to come so stay tuned…

Bacon Jam Wings Recipe • Smoky, Sweet and Salty... yum! | Club Foody

 

I always liked chicken wings but since David and I have been together, I’ve been eating them regularly. It’s a great finger food and when they’re served along with crudités and a nice dipping sauce like Ranch or Blue Cheese dressing, to me it’s a complete meal!
 
We eat them at least once a month and because of that, it’s nice to diversify the flavor by making them with different sauces. I’ve already shared many of them like my Smoky BuffaloTriple ChiliMango ChipotleEthiopian Red PepperHawaiian Style Teriyaki, and so on. Now let’s add another incredible one to the list… my Bacon Jam Wings!
 
OMG! These Bacon Jam Wings are unbelievably delicious! It’s the perfect harmony of smokiness, sweetness and saltiness all together! To achieve this extremely flavorful sauce I use my tasty Bourbon Maple Bacon Jam! Without adding more ingredients to it, you can just imagine how fantastic it can be. From there, of course, I add more to it – hey, I’m making a finger licking sauce here… it has to be “wow”!
 
When I cook the sauce, I like to simmer it for 25 minutes or until it has reduced by half. Then I reduce the heat to medium-low and cook it for an additional 15 minutes or until the desired consistency is reached. We personally like the sauce thin enough to be pourable but also thick enough to stick to the wings but if you prefer it thinner or thicker, adjust the cooking time accordingly

These Bacon Jam Wings are spectacular! If you like bacon and who doesn’t, this is an amazing recipe to add to your folder. Although the recipe is made with poultry, nothing is stopping you from pairing the yummy sauce with other proteins…

Cottage Fries Recipe • A Tasty Summer Side! | Club Foody

 

When I was living on the east side of Canada, Victoria Day weekend, also known as May 2-4, was officially the weekend when people reopened their cottages. Here on the West Coast, it’s different as the weather can be warm a few weeks before this statutory holiday giving people a chance to reopen their second homes earlier.
 
So why do Canadians give it that “May 2-4” nickname? The reasons are pretty simple. First, this holiday falls on the last Monday before May 25th. The second reason is during that weekend, people buy cases of twenty-four beers which we affectionately like to call “a 2-4”. This is another one of our “national slang sayings” besides the popular “eh!” that our American neighbors like to tease us about…

David and I don’t own a second home by the lake but if we do one day, I would like to have that “rustic and cottagey” look to it with a little porch on the front, a nice wooden door, and tall casement windows with planter boxes underneath, along with a shingled roof. Talking about shingled roofs… there’s a dish that resembles this type of roof and it’s Cottage Fries! I like to call them cousins to French Fries. Sliced thinly, they are amazingly crispy on the outside and soft on the inside. It’s a delicious way to enjoy potatoes!
 
The big “plus” to these Cottage Fries is they are not fried but baked which means less mess, less cleaning and they’re healthier! Now to achieve the nice crispiness on the potato slices, every 15 minutes, I remove them from the oven, flip them over and return to the oven for another 15 minutes, then remove, flip and back again until the one hour mark is reached. It might be a little tedious but the results are incredible!
 
During this May 2-4 holiday, you might summerize your cottage, start your garden or just relax outside but whatever is on your schedule, you should definitely add these flavorful Cottage Fries to your menu. Get yourself a case of 2-4 and enjoy your weekend “eh!”!

Jamaican Jerk Seasoning Recipe - Tips & Tricks | Club Foody

 

If you’re a foody (yes with a“y”), you probably have a ton of spices and dry herbs in your cupboards. The problem with them is if they’re not used quickly, they will lose their potency. A good way to recycle them is to make your own seasonings and blends.
 
I’ve been making my own seasoning mixes and blends for years. Besides the ones I’ve already posted in the past, here’s another one to add to your list… my Jamaican Jerk Seasoning! This blend is incredibly flavorful! I like to use it for grilled foods like Rotisserie Chicken, Pork Chops, Prawns, Kebabs, etc.
 
I use a variety of spices typically found in Jamaican cuisine like cinnamon, allspice also known as Jamaica Pepper, nutmeg, cloves, etc. When it comes to thyme, you can always use dried leaves but if you’ll be using it as a rub, it’s definitely better using ground thyme instead…
 
This Jamaican Jerk Seasoning is a great one to have in your kitchen especially if you enjoy barbecuing like we do! It’s also a great way to use up your herbs and spices before they lose their flavor…

Homemade Pancake Mix Recipe • Light, Fluffy and Delicious! | Club Foody

 

I shake my head when I glance at people’s shopping carts; fast food, lots of cans, boxed foods, frozen dinners, lettuce in a bag with a dressing packet, etc. I realize we’re all challenged with tight schedules but spending an extra 30 minutes making a meal from scratch can be a long term health benefit.
 
I make almost everything from scratch for a few reasons…
– I find cooking therapeutic
– I can’t stand the preservatives and chemicals they put in the food therefore it’s much healthier to make from scratch
– Most of the time, it’s cheaper
– It tastes much better when made at home plus I can tweak the recipes to our liking
 
When it comes to breakfast food items, very little is bought at the store. I like making my own JamsBread, croissants, BagelsGranola, and so on. A recipe we enjoy having on the weekends that I make from scratch is my Homemade Pancake Mix!
 
What an easy recipe! It’s light and fluffy plus a delicious reason to get up on a Sunday morning. I like to change the flavor. Instead of using pure vanilla extract all the time, I switch to other flavorful extracts such as pineapple, coconut, rum, etc.
 
When I mentioned “fluffy” it’s because this Homemade Pancake Mix is. The secret is to sift all the dry ingredients. Do you have to do that? If you don’t mind heavier pancakes, by all means skip the sifting step. I’m not a “sifter” but in some cases like chiffon, angel food, Génoise and sponge cakes, sifting will give that extra airiness making it lighter just like in this breakfast item.
 
David has a trick when it comes to cooking pancakes. He waits until the surface is covered with bubbles before flipping them which is an indication that they’re browned and ready to be flipped. Me, on the other hand, I lift and check them out. Usually 2 ½ to 3 minutes per side is plenty to cook them.
 
Next weekend, skip the boxes and make this incredible Homemade Pancake Mix instead! Served with butter and maple syrup, this is a lovely way to start your day and interact with your family.

Caribbean BBQ Sauce Recipe • Bold Flavor for BBQ Season! | Club Foody

 

When I was living in Toronto, the Caribbean islands were the perfect destination. I’ve been to Barbados, Puerto Rico, Dominican Republic, Saint Martin, Saint Thomas, St Vincent and Mustique. From one island to another, their cultures, traditions and cuisine differs giving each of them their own identity.
 
As curious as I’ve always been, I liked mingling with the population, going to their stores, hanging out at their local bistros, bars and restaurants. Of course, I tried their dishes; colorful, flavorful and sometimes spicy! That is when the idea of creating my own Caribbean inspired sauce came from and here it is… my Caribbean BBQ Sauce!
 
This is an amazing recipe! It’s fruity, spicy (but not overly) and absolutely delicious! Instead of using a particular sauce for a specific meat like my BBQ Sauce for Chicken, this one actually complements a wide variety of different proteins. It’s an incredible recipe to have this summer…
 
What makes this sauce so “Caribbean” is the ingredients. Guavas are one of them, bringing a unique “je ne sais quoi” to the condiment. Although they are small, guavas have quite a strong taste. What I do first is to make a syrup with these fruits, reducing them down to about a third which gives me about a ½ cup give or take. This alone gives a gorgeous layer of flavor.
 
Now let’s talk about the spiciness…
It’s spicy but not to the point you need a fire extinguisher. I use habanero peppers and of course, these little guys will give some heat but they’re tamed down by the other ingredients. Now a word of advice, please wear gloves because they’re “hot” and you don’t want to touch your eyes when handling them. Yes they are way up there on the Scoville Scale, rating 100,000-350,000 but they do give a nice background flavor to this Caribbean BBQ Sauce.
 
Here in Canada, the month of May is when BBQ season officially starts! Using this Caribbean BBQ Sauce will really enhance your grilled foods. It should be your go-to sauce for marinating, grilling and rotissering… a great tasty condiment for the summer!

Pavlova Recipe • Light, Airy & Incredibly Delicious! | Club Foody

 

What is the common denominator of these recipes; Carpaccio, Oysters RockefellerBeef StroganoffNacho, General Tso’s Chicken, Chicken (or turkey) Tetrazzini, and Lobster Newberg or should I say Wenberg? That’s right! They are all named after famous people. In fact, I’ve already named a couple recipes for two celebrities; Pork Tenderloin Vitali and Lady Athena’s Rockin’ Crab Shell Pasta.
 
Actually the list of recipes is incredibly long including a variety of fruits (Bing cherries, McIntosh apples, Pedro Ximenez, etc.), vegetables (Potatoes Parmentier, etc), liqueurs (Galliano, Jack Daniel’s, etc.) & champagne (Dom Pérignon, Veuve Clicquot, etc.), alcoholic drinks (Bellini, Mary Pickford, etc.) & non-alcoholic beverages (Shirley Temple, Roy Rogers, etc.), condiments (DuxellesMornay Sauce, etc.), or places like the Waldorf-Astoria Hotel where the famous Salad was created, and even a cooking method (Pasteurization) named after Louis Pasteur.
 
These “immortal” recipe titles are interesting and good to know as personal knowledge as well as a fun way to entertain your guests. While serving your first course, talk about Caesar Cardini who created his delicious Salad in Tijuana back in 1924 during Prohibition or discuss the facts about your Beef Wellington before flambéing your Crêpes Suzette for dessert.
 
When it comes to desserts and pastries the list is long as well. There are many that were inspired by women like Princess Cake named after 3 Swedish princesses, Tarte Tatin (Stéphanie Tatin), Peach Melba (Nellie Melba), and many more including this one… Pavlova!
 
Anna Pavlova (1881-1931) was a Russian ballet dancer and during her world tour in the 1920s, she visited New Zealand and Australia. This scrumptious dessert was created in her honor. When it comes to the country of origin, both Australia & New Zealand claimed its creation and till this day, the two nations are still arguing about it.
 
Pavlova is extremely easy to make but to successfully make a beautiful one, there are some important steps to know…
– using cream of tartar is a great leavening ingredient to use for light recipes like SoufflésMeringues, angel food cakes, etc.
– the meringue has to be quite firm to hold its shape
– form an 8-inch circle and bring the edges up to 2 inches tall, leaving an indentation in the center for the toppings
– when transferring it to the oven, be gentle and carefully close the door; it’s a meringue and is quite delicate!
– leave the cooked Pavlova in the oven, undisturbed, for 24 hours. This will prevent it from deflating or caving in as the meringue-based dessert will slowly come to room temperature
– make sure there’s no banging, slamming or jumping around the oven during the resting period otherwise it might deflate
– when spooning the whipped cream onto the center of the cooked Pavlova, be gentle…
– the same applies when adding the fruits on top… be gentle!!!
– basically, take your time, don’t rush things, plan a day ahead and did I mention “be gentle” with it?
 
This meringue-based dessert is amazingly easy to make! Impressive to look at, this very light and delicious Pavlova is a perfect way to finish a meal! With its crispy crust, sweet & fluffy interior, topped with whipped cream and fresh seasonal fruits, this is a colorful dessert to serve for any special occasion or during the Holidays…
