When I was living in Toronto, the Caribbean islands were the perfect destination. I’ve been to Barbados, Puerto Rico, Dominican Republic, Saint Martin, Saint Thomas, St Vincent and Mustique. From one island to another, their cultures, traditions and cuisine differs giving each of them their own identity.
As curious as I’ve always been, I liked mingling with the population, going to their stores, hanging out at their local bistros, bars and restaurants. Of course, I tried their dishes; colorful, flavorful and sometimes spicy! That is when the idea of creating my own Caribbean inspired sauce came from and here it is… my Caribbean BBQ Sauce!
This is an amazing recipe! It’s fruity, spicy (but not overly) and absolutely delicious! Instead of using a particular sauce for a specific meat like my BBQ Sauce for Chicken, this one actually complements a wide variety of different proteins. It’s an incredible recipe to have this summer…
What makes this sauce so “Caribbean” is the ingredients. Guavas are one of them, bringing a unique “je ne sais quoi” to the condiment. Although they are small, guavas have quite a strong taste. What I do first is to make a syrup with these fruits, reducing them down to about a third which gives me about a ½ cup give or take. This alone gives a gorgeous layer of flavor.
Now let’s talk about the spiciness…
It’s spicy but not to the point you need a fire extinguisher. I use habanero peppers and of course, these little guys will give some heat but they’re tamed down by the other ingredients. Now a word of advice, please wear gloves because they’re “hot” and you don’t want to touch your eyes when handling them. Yes they are way up there on the Scoville Scale, rating 100,000-350,000 but they do give a nice background flavor to this Caribbean BBQ Sauce.
Here in Canada, the month of May is when BBQ season officially starts! Using this Caribbean BBQ Sauce will really enhance your grilled foods. It should be your go-to sauce for marinating, grilling and rotissering… a great tasty condiment for the summer!
