I shake my head when I glance at people’s shopping carts; fast food, lots of cans, boxed foods, frozen dinners, lettuce in a bag with a dressing packet, etc. I realize we’re all challenged with tight schedules but spending an extra 30 minutes making a meal from scratch can be a long term health benefit.
I make almost everything from scratch for a few reasons…
– I find cooking therapeutic
– I can’t stand the preservatives and chemicals they put in the food therefore it’s much healthier to make from scratch
– Most of the time, it’s cheaper
– It tastes much better when made at home plus I can tweak the recipes to our liking
When it comes to breakfast food items, very little is bought at the store. I like making my own Jams, Bread, croissants, Bagels, Granola, and so on. A recipe we enjoy having on the weekends that I make from scratch is my Homemade Pancake Mix!
What an easy recipe! It’s light and fluffy plus a delicious reason to get up on a Sunday morning. I like to change the flavor. Instead of using pure vanilla extract all the time, I switch to other flavorful extracts such as pineapple, coconut, rum, etc.
When I mentioned “fluffy” it’s because this Homemade Pancake Mix is. The secret is to sift all the dry ingredients. Do you have to do that? If you don’t mind heavier pancakes, by all means skip the sifting step. I’m not a “sifter” but in some cases like chiffon, angel food, Génoise and sponge cakes, sifting will give that extra airiness making it lighter just like in this breakfast item.
David has a trick when it comes to cooking pancakes. He waits until the surface is covered with bubbles before flipping them which is an indication that they’re browned and ready to be flipped. Me, on the other hand, I lift and check them out. Usually 2 ½ to 3 minutes per side is plenty to cook them.
