Classic Guacamole Recipe • A Mexican Favorite! | Club Foody

 

I’ve been impressed with Mexican cuisine since my first trip down there way back in the late 80s. I went to Puerto Vallarta with my boyfriend Carlo and came back engaged 💍… well not for too long! A year later, I broke up with him… he wasn’t the one!
 
Anyway, during that trip, I discovered so many amazing dishes 😍. One I couldn’t get enough of was that avocado-based dip that our hotel was serving us along with tortilla chips during “happy hour”. When I got home, I was looking for these fruits to replicate it. Alas, back then, our Canadian grocery stores weren’t selling them.
 
Soon after we returned home though, I heard of Chi-Chi’s Mexican restaurants opening up in different locations. It didn’t take me long before I visited one of them while staying over at my friends in Toronto! When I saw the avocado dip 🥑 on the menu, you bet I ordered it!
 
It took years before I saw them in grocery stores. Of course, I grabbed a few and finally made my Classic Guacamole! This recipe is pretty straightforward. Mash the avocadoes, add lime juice, diced tomatoes 🍅, red onions, garlic, cilantro plus seasonings… done!
 
This Classic Guacamole differs slightly from my husband’s Creamy Spicy Guacamole recipe. His has sour cream in it… mine is dairy free! Besides enjoying it as a dip, both recipes are very versatile and go well with different applications. They can be used for Carne Asada Fries or Avocado Sweet Pea Toast, as a topping for California or Mexican Burgers, spread on bagels 🥯 in lieu of cream cheese, when making Six Layer Chip Dip, etc.
 
As it sits longer, the color of the guac will start turning brown. Although not visually appealing, it’s completely safe to eat 🍴. It’s the enzymes from the fruit getting oxidized in contact with the air. Give it a good stir and enjoy it! The most important thing is to store it in the fridge and it’s good for up to 3 days.
 
Quick and easy to make, it’s a must have! This Classic Guacamole can be used as a dip, a garnish for burgers and sandwiches 🥪, a side for nachos, or for many Mexican dishes. It’s another tasty way to enjoy this fabulous fruit.

Flapper Pie Recipe • A Canadian Prairie Delight! | Club Foody

 

Without being presumptuous, I think of myself as a gourmet… a food connoisseur if you prefer. Since my childhood 👧, I’ve always been curious to try new dishes, ingredients, and seasonings. With age, this culinary eagerness kept intensifying. I want to taste and experience as much as I can before kicking the bucket!
 
Although my repertoire is quite vast, there are still thousands of dishes and recipes that I never tasted or tried. I think it would take 2… perhaps 3 lifetimes to experience them all. When it comes to Canadian foods 🍁, there aren’t many I haven’t tried and still, I’m discovering many others.
 
Growing up in Québec, there was a lot of recipes that I’ve never heard of from the west side of the country. One day, David suggested I try making a Flapper Pie! A what? – I asked! At first, I thought he said “flipper” pie. There was no way I was going to cook one of my favorite mammals 🐬…
 
Also known as the “forgotten Prairie pie”, this dessert consists of a lovely vanilla pudding sitting in a graham cracker crust and then topped with a delicious meringue. It’s garnished with some reserved graham cracker crust mixture. It’s simple and yet tasty 😋!
 
To me, this Flapper Pie is the ideal summer dessert! There’s no need to bake the crust, it takes 5 minutes ⏳ at the most to make the custard and after the pie is assembled, it’s baked for 10 minutes in the oven or until the meringue turns golden brown.
 
I’m not sure how the other recipes are but there’s a little trick for the meringue to sit nicely over the pudding and it’s by sprinkling some cornstarch over the custard. It helps to absorb some moisture and make the meringue stick to the filling. I do the same when I make my Lemon Meringue Pie.
 
The crust-filling-topping combination is perfect and easy to make 👩‍🍳👨‍🍳. The only thing that can go wrong is the meringue. Make sure it’s not raining outside or humid. To bring the odds in your favor, add cream of tartar to your whites before adding sugar…
 
After the pie is baked and cooled at room temperature for one hour, transfer to the fridge, uncovered, for 3 hours ⏰ before serving. It’s best eaten the day it’s made but if there are leftovers, cover loosely with foil for up to one day.
 
To highlight Canada Day next week, this Flapper Pie fits the bill! It’s light, easy to make and so scrumptious… a great summer recipe to enjoy! With very little cooking involved, this classic Canadian prairie 🍁 recipe is certainly one to make soon…

Elotes • Grilled Mexican Street Corn Recipe | Club Foody

 

Since my first visit to Mexico back in 1988, I’ve always liked its food! Immensely flavorful, Mexican cuisine has been one of my top 5. When David and I started going down there yearly, we discovered so many incredible dishes that we fell in love 💖 with and added to our repertoire.
 
A couple years ago, while vacationing in Puerto Vallarta, my husband and I tried a popular street food. After our first bite, these ruined us forever and now, we’re corn on the cob snobs 🌽! I’m talking about Elotes • Grilled Mexican Street Corn.
 
First, the cobs are grilled on the barbecue 🔥 to bring a nice smoky flavor to them. Next, they’re slathered with a gorgeous creamy mayo sauce and topped with a Cotija cheese and cilantro mixture before being sprinkled with chili powder… totally an OMG!
 
Before being corrupted by this yummy recipe, I liked mine simply with butter 🧈 spread over and some freshly ground black pepper. Now every time we see corn cobs at our supermarket, we know exactly what to make just by looking at each other!
 
Contrary to Esquites where the corn mixture is identical but served in a cup and eaten with a spoon, Elotes • Grilled Mexican Street Corn are deliciously messy! Each bite is fully covered with yumminess. Make sure to have plenty of napkins around… 😉
 
When it comes to the barbecue, it’s important to oil the grates prior to grilling the cobs. There are two ways to grill them; with or without the husks. It’s a matter of preference. At my grocery store, there’s always a box next to the cobs and I normally clean them right on the spot.
 
If you prefer leaving the husks on, firstly remove the silk from each cob and then pull the husks back up. Secondly, soak them in very cold water for 20 minutes ⏰ to prevent them from catching on fire. Lastly, they will need more time to cook on the “barbie”, about 25 minutes versus 12-15.
 
The difference between with and without is the pre-soaked husk cobs will be steamed while the ones without the husks result in a nice charred smokey flavor! During the grilling, both have to be turned a ¼ turn every 3 to 5 minutes (without) or 5 to 6 minutes (with).
 
Incredibly tasty, this mouthwatering Elotes • Grilled Mexican Street Corn recipe is absolutely delicious! Let me tell you, if you’ve never tried them before, you’re missing out on something fantastic! After trying it, don’t be surprised you might lift your nose 👃 to regular corn on the cob and never go back again…
