Classic Mushroom Sauce Recipe • Incredibly Tasty! | Club Foody

 

David and I like steaks! They can be striploin, ribeye, T-bone, or tenderloin… my ultimate favorite! We open a nice bottle of red wine, put some soft jazz music 🎶 on, steam some vegetables and mash the potatoes. It doesn’t matter which season it is, we enjoy them all year round.
 
Depending on how we feel or the cut of meat, we might pair it with a nice sauce. There are a few to choose from like Sauce RobertPeppercorn SauceMarchand de Vin which is a red wine 🍷 sauce reduction, Chimichurri, BéarnaiseSalsa Verde, and others.
 
Another one that is incredibly amazing with steaks is this Classic Mushroom Sauce! This sumptuous retro sauce is excellent for this protein! Although it pairs marvellously with beef, nothing’s stopping you from using it with pork 🐖, lamb 🐏, or chicken 🐓.
 
This sauce is beautiful! It has several layers of flavor. After sautéing the mushrooms in butter 🧈 then adding garlic and thyme leaves, there’s that rich Basic Brown Sauce that goes in. Many out there use heavy cream but if you want deep, bold flavor for this Classic Mushroom Sauce, this is the way to go.
 
There are also two other ingredients that compliment the sauce which are sherry and black truffle oil. Now let’s talk about the elephant 🐘 in the room… truffle oil!
 
Is the oil legit? 🤔
No, absolutely not unless the label stipulates “aroma naturale di tartufo” which translates to “truffle natural aroma”! The manufacturers mimic the aroma of the fungi 🍄 by using synthetic ingredients such as 2,4-dithiapentane. I understand why most chefs despise it as it tastes like a bad chemical version of truffles.
 
Last Christmas 🎄, someone gave me a little piece of black truffle after vacationing in Italy. I finely sliced the truffle into a small jar and added salt. Then I poured in a flavorless oil before transferring it to the fridge. A couple weeks later, it was ready to use. I recently finished the oil and now I need to get more!
 
This Classic Mushroom Sauce is a great topping for any cut of steak 🥩! With that beautiful Basic Brown Sauce along with the other ingredients, this is a fabulous recipe to add to your folder. I have another delicious mushroom sauce that uses heavy cream so check it out… Iguana’s Mushroom Sauce.

Honey Mustard Pork Loin Chops Recipe • Club Foody

 

As much as we eat chicken a lot, pork is another meat that David and I like. It’s economical plus, after trimming it, it’s also a lean meat. Did you know that pork is the most consumed meat in the world 🌏 followed closely by chicken then beef?

Another one I like making 👩‍🍳 because of its simplicity is my Honey Mustard Pork Loin Chops! Marinated in a sweet and savory tasty sauce, these juicy and tender chops are unbelievably delicious! It’s another way to enjoy this protein.
 
The marinade has a beautiful combination of ingredients. Besides honey 🍯, I use two kinds of mustard; one is Dijon and the other is my homemade Sweet & Spicy German Mustard which is coming up next month. In the interim, stone-ground mustard can be used instead.

These Honey Mustard Pork Loin Chops are uncomplicated. After the chops are marinated for 30 minutes ⏰, they’re grilled on the barbecue between 450ºF to 500ºF or on the stove top on high heat. Meanwhile, the marinade is transferred to a small saucepan and simmered gently until ready to serve.
 
This recipe is unpretentious and yet so yummy! It can be enjoyed on both weeknights or weekends. I normally served these with roasted garlic mashed potatoes 🥔 and steamed vegetables like broccolini, green beans or bok choy.

Caprese Skewers Recipe • A Fresh & Tasty Appetizer! | Club Foody

 

When we get close to September, there’s a plentiful amount of fresh produce especially tomatoes 🍅! They’re perfect for stocking a few jars of marinara sauce, making your own sun-dried tomatoes or salsa, a refreshing gazpachobruschetta, and more.
 
David and I like growing them 👩‍🌾👨‍🌾 especially cherry tomatoes. They’re sweet, the plants don’t take too much space on our patio plus they’re so versatile. I like using them in salads like Pasta PrimaveraIsraeli SaladMixed Tomato Salad, or in my Tuscan Chicken, Creole Shrimp & Andouille SkewersMediterranean Fish Fillet with Tapenade, etc.
 
Another recipe I like making is Caprese Skewers! Quick & easy to make ⏳, this is a delicious Italian appetizer to enjoy! With cherry tomatoes, mini bocconcini, and seasonings along with a beautiful balsamic glaze, this is another tasty way to enjoy these little guys!
 
Besides the fact it takes only 5 minutes to make them, this is a great recipe when entertaining. This classic appetizer is perfect to serve for any occasion 🎄. Although I make them more often at the end of the summer, they’re still a good choice throughout the year.
 
It doesn’t need too many ingredients to make it so tasty as well as healthy. There are tomatoes, mini bocconcini, extra virgin olive oil, basil leavesItalian seasoning, salt 🧂 and pepper. For the finishing touch, I drizzle on some balsamic glaze.
 
First, I mix all the ingredients together in a bowl and stir until well coated before skewering 🍡 the tomatoes and cheese balls. For a nicer presentation, I use different colors of tomatoes like red, yellow and orange.
 
To elevate these Caprese Skewers, I drizzle on my Homemade Balsamic Vinegar on top but before I do that, I also uplift the condiment by adding a touch of cayenne pepper – hot paprika is another option. It gives a “je ne sais quoi”, an extra layer of yumminess 🥰 to that sweet and tangy balsamic reduction.
 
Quick to make and easy to assemble, these Caprese Skewers are a fabulous appetizer! They make a healthy 💚 hors d’oeuvre and are perfect to serve for any party, potluck, picnic, or when you simply want to enjoy them!

Bunny Chow Recipe • Tasty South African Street Food | Club Foody

 

When living in downtown Toronto, I was surrounded with different ethnicities. My next-door neighbour was from South Africa, another one was Persian, behind me the whole family was from Ethiopia next to Jamaicans . There were also Russian, Polish, English, and Indian 👳‍♂️ – I’m probably missing a few more…
 
During the summer, many of them were having a “backyard” party – it wasn’t really a backyard per se but more of a parking lot. Each time it happened, I was either moving my car 🚗 out or driving somewhere so they could have more space for their guests plus I didn’t want to turn the hood or trunk of my car into a sitting area.
 
They all appreciated it and I was rewarded by having some of their food. This is how I came across a few interesting dishes like this one… Bunny Chow! I said what? No, there’s no cute little bunnies 🐰 cooked in this dish nor is it a stripper’s name but simply a popular street food from South Africa.
 
It’s a delicious curry served in hollow bread often accompanied with a salad 🥗 as a side. Originating back in the 1940s’ in Durban where there’s a large community of Indian people, this tasty “bowl” recipe can be substituted by using other proteins and ingredients unless the meat is left out for a vegetarian flare.
 
Mutton and lamb are probably the preferred ingredient but I like using chicken breasts instead. There are aromatic spices, tomatoes 🍅, potatoes, and more. While cooking, the curry might seem on the thin side. Don’t worry because chickpeas are added to it at the end and will release starch helping thicken the mixture.
 
As I mentioned above, the curry is served in hollow bread. Traditionally, unsliced white bread 🍞is used but to make my life easier, I’ve been using Kaiser buns. This dish is treated more like a sandwich therefore it’s eaten without cutlery using the top of the bread to dig in.
 
We love curry and this fast-food dish is exactly the definition of a very flavorful one without being overly spicy! It’s so well liked that each year in September, there’s a competition held in Durban called “Bunny Chow Barometer”. Contestants from several regions battle for the title of the champion bunny maker 🏆🥇!
 
The first time I was offered Bunny Chow, right away, I declined thinking Bugs Bunny was in the dish. After being told which ingredients went in – it was lamb – then I gave it a try. It was amazing 😍! This is a great comfort food that can be enjoyed for lunch, dinner or simply as a snack throughout the day…

Homemade Balsamic Glaze Recipe - Tips & Tricks | Club Foody

 

We’re all guilty as charged… we have way too many condiments in our pantry or refrigerator. Often, we might use some of them only once in a while! To reduce this insane number of bottles, if I can, I make them from scratch as I measure 🧪 just what I need for a recipe…
 
Years ago, when I started doing these homemade recipes, I created so much space. For example, I made the exact amount of Dijonnaise for my Caesar Salad 🥗 or I have a little container with my Chili Oil and when I need it for my Slow Cooker Pepper BeefEgg Rolls, or General Tso’s Chicken, there it is…
 
Among many of them, there’s another one that I make only when I really need it and it’s my Homemade Balsamic Glaze! This condiment can be used in so many dishes; drizzle it over Bruschettagrilled chicken breasts 🐓, salads, Stuffed Dates with Gorgonzola, fruits, Prosciutto e Melone, flatbread, and so on.
 
I like the flavor. It’s sweet and tangy at the same time plus it gives a nice finishing touch to a dish. It takes less then 30 minutes ⏰ to make this lovely Homemade Balsamic Glaze while saving money and space in the interim.
 
In the video, I use brown sugar but granulated sugar is certainly another option. Depending on the dish you intend to drizzle it over, honey 🍯, maple syrup or molasses can be substituted. When serving it over fruits, add some Chocolate Sauce if you like.
 
I also like to add some spices to elevate the taste. I add a little cayenne pepper before drizzling it over my Caprese Skewers 🍅. Other options include paprika – smoked or hot -, a tiny amount of freshly ground black pepper or salt, and the same with cinnamon or nutmeg for fruits or salads.
 
I try to make just enough for what I need so I don’t have to store it. Sometimes our calculations 🧮 can be slightly off and we end up with leftovers. Simply put it in a container, cover and transfer to the fridge. It keeps for 3 to 4 weeks.
 
This Homemade Balsamic Glaze is another tasty recipe to have on hand! It’s quick and easy to make plus you don’t end up with another bottle to store. Make the amount you need, jazz 🎷 it up a little by adding different ingredients and save money in the process…

Balsamic Glaze recipe…
• 1/2 cup balsamic vinegar
• 2 tbsp. brown sugar

– In a small saucepan over medium heat, add vinegar and sugar. Stir until the sugar is dissolved and bring the mixture to a boil.
– Reduce the heat to medium-low and cook for 20 minutes or until reduced by half and coats the back of a spoon.
– Remove from the heat and let it cool off before using.

Country-Style Blueberry Pie Recipe • Simply the Best! | Club Foody

 

Every summer, we buy a lot of fruits but this year, for some reason, we went overboard! Each week, we bought 🛒 so much therefore I had to make a lot of recipes with them like Strawberry Shortcake, Cherry Clafoutis, Watermelon Salsa, Raspberry Sweet Rolls, Strawberry Mango Margarita, etc.
 
When it comes to blueberries, we bought quite a few containers. I made some Blueberry Muffins, Blueberry Pancakes, Lemon Blueberry Cheesecake, and even Blueberry Ice Cream! Of course, I restock my Blueberry Syrup for my waffles 🥞 and also made a few jars of Blueberry Jam.
 
Another one that I haven’t baked for a long time was my Country-Style Blueberry Pie! After the first bite, I couldn’t understand 🤔 why it doesn’t become an annual summer recipe in our household! With a perfectly set filling, this dessert is incredibly scrumptious!
 
This recipe is so straightforward. All the ingredients are combined 👩‍🍳👨‍🍳 together before being transferred to a pie crust. I dot the top with a few small cubes of butter, place the other crust on top, crimp the edges, brush on an egg wash, make a few slits, sprinkle some sugar and then it goes in the oven… that’s all!
 
The Country-Style Blueberry Pie filling can be modified. When I filmed this episode, I had a big bowl of lemons sitting on my counter so I used the zest and juice from them. On the other hand, these can be substituted with orange 🍊. I did both versions in the past and the results are equally delicious!
 
Just before baking it, I like to sprinkle about ½ tablespoon of granulated sugar on top of the pie. It gives a nice finishing touch 🤩 to this sweet treat. However, it’s totally not necessary to add any and you can skip it if you prefer.
 
This Country-Style Blueberry Pie is simply fabulous! Not runny, the filling is nicely set with an amazing flavor! This dessert is certainly a treat 💖! While blueberries are in season, don’t wait to enjoy this summer favorite!
