Gingerbread Coffee Creamer Recipe • A Festive Treat | Club Foody

 

Suffering from acid reflux, I finally switched from drinking my coffee black to adding some milk in it. Right away, I saw a big improvement. Prior to doing that though, once in a blue moon, I had some creamer in my cup of joe ☕.
 
It all begin when, back in the 90s’, I came across a few different flavors from International Delight. Although drinking my coffee black, it was a nice change to add one of those little cups. Soon after, I stopped having them when I looked at the ingredient list – way too many chemicals 🧪 for my liking.
 
Slowly, I started experimenting in my kitchen with my favorite flavors. Eventually, I came up with my own healthy versions 💚 of French Vanilla, Caramel Latte, Butterscotch, Hazelnut, and Pumpkin as well as this featured recipe… Gingerbread Coffee Creamer!
 
Loaded with flavor, this condiment is incredibly delicious and perfect for your daily cup of joe plus there’s no food additives… bonus! It takes less than 15 minutes ⏰ to make and you’ve got yourself a nice coffee enhancer!
 
Sweetened condensed milk is one of the ingredients. As most of my followers/subscribers are from both Canada 🍁 and the USA, let’s clarify an important detail…
On Canadian cans, we see 300 ml or 10 oz. while Americans say 14 oz. Actually, both have the same amount in the can which is 1 ¼ cups so keep the same measurements for the other ingredients. Why aren’t both countries labelling it the same? No idea 😟!
 
When it comes to half-and-half, you can easily substitute whole milk but don’t use heavy cream! This Gingerbread Coffee Creamer is already rich as it is. Can 1 or 2% 🥛 be another option? What about skim milk? I don’t use it but if you do, let me know how the flavor turns out…
 
While filming 🎥 the recipe, my spice grinder decided to quit on me. Like they say – “the show must go on” – but when grinding the spices before adding them to the pot, not only will they blend better into the mixture but the appearance at the end will be a bit nicer too.
 
This Gingerbread Coffee Creamer adds a touch of Holiday flair 🎄 to your cup of joe! It’s a quick and easy recipe to make, there’s no preservatives plus it’s perfect for the festive season! Whether the spices have been ground or not, you should shake the creamer each time before serving.

Mushroom Quiche Recipe • Deliciously Versatile! | Club Foody

 

Thanksgiving is a big deal for our fellow Americans. People fly or drive 🚙 from everywhere so they can spend time with their families. It’s more celebrated than Christmas. I would assume that, besides the elaborate menu, the fact that there’s no gifts involved puts everyone more at ease plus there’s football!
 
As many are from out of town, the chance for the hosts to have guests staying over for a few days is pretty high. After serving that famous turkey dinner 🦃 with all the trimmings, more food items have to be planned for the next few days.
 
One dish that I often rely on when having company staying over is quiche! The reasons are simple… it’s so versatile! It can be served for breakfast or brunch but as well for lunch and dinner along with a green salad 🥗. Another plus is it can be made ahead and just popped into the oven…
 
So far, I have a few quiche recipes on the website such as Quiche LorraineMini Mexican Tortilla Quiche and Butternut Squash Ham & Leek Quiche! Here’s another one to add to this yummy list… Mushroom Quiche 🍄!
 
Like any other quiche, this one is also easy to make. It’s a great recipe to help clean up your crisper too! I use red onions in the video because this is what I had on hand but white 🧅 or yellow are other options. The same with mushrooms. I had buttons that needed attention but by all means, you can use other varieties.
 
It’s not always obvious to find fresh herbs 🍃 at the end of November. In the Mushroom Quiche, I use fresh thyme leaves but when push comes to shove, using dried is totally acceptable. The ratio is 3:1 which means 1 tablespoon of fresh = 1 teaspoon of dried.
 
In the seasonings, there’s also freshly grated nutmeg. Can you use ground instead? Of course, but the aroma and flavor will be less concentrated. Did you know that whole nutmeg lasts forever when stored properly? Place fresh nutmeg in an airtight container in a cool, dry area away from light and heat 🔥.
 
This delicious savory Mushroom Quiche is one of my go-to recipes when we have guests staying over. I make 👩‍🍳 it a day or two earlier and when it’s time to serve, I simply bake it in the oven. It can also be frozen and thawed out in the fridge the day before. Relax, enjoy your time with your company by making this tasty dish!

Shrimp & Grits Recipe • A Tasty Southern Dish! | Club Foody

 

When living in Montréal, I often drove 🚙 on the east side of the United States. I went to Vermont and New Hampshire which are both fabulous, spent a few times in beautiful Ogunquit in Maine, and drove all the way to New York city once… it’s insanely crazy driving in the city!
 
I flew to Atlanta a couple times for connections and of course, went many times to different parts of Florida by plane. Sadly, I never went anywhere between the Big Apple 🍎 and the Sunshine State. David and I want to visit all these states on the east coast… they’re on our bucket list!
 
Although I haven’t visited the Southern part of the USA yet, I’ve sampled much of its cuisine. There’s Biscuits & Gravy, Sweet Potato Pie 🍠, Brunswick Stew, Corn Fritters, Red Beans & Rice, Hoppin` John, Tomato Pie, Pulled Pork, Fried Chicken, Jambalaya, Sausage Gravy, Pimento Cheese Sandwich, and the list goes on…
 
Another dish that is a Southern staple is Shrimp & Grits! This is comfort food to the max 🥰! With a lovely rich shrimp sauce along with smooth and cheesy grits, this is a quick recipe to make anytime! As much as it’s a traditional breakfast meal, it can also be enjoyed for lunch or dinner!
 
My version of Shrimp & Grits is slightly different but nonetheless, extremely flavorful! I start by rendering bacon 🥓 in a skillet before adding large shrimp. I flavor them with my Creole Seasoning, salt and pepper… the combination is amazing!
 
From there, I quickly sauté them 🍤 for no more than 1 minute or until almost pink. Many home cooks tend to overcook them which in turn, the delicate flesh can become rubbery. Also, they’re returning to the skillet later on so don’t worry.
 
Frankly, I never cooked grits until recently. I’m not an expert or pretend to be when it comes to cooking them. In fact, when I bought 🛒 it at the supermarket in Bellingham • Washington, I asked someone if there’s another way of making it besides the directions on the box.
 
One thing about grits is they’re a little bland so adding milk versus water and cheese, gives some personality to the porridge. I use sharp Cheddar cheese but in retrospect, I should’ve also added some unsalted butter 🧈 to make it creamier… next time!
 
One thing I forgot to mention in the video is after the grits are in the pot, it’s important to whisk continuously for 2 minutes to prevent the mixture from getting lumpy! Now, for us Canadians 🍁, grits are not a food item that we can find easily therefore, swap them with Robuchon creamy mashed potatoes
 
This Southern Shrimp & Grits dish is so comforting and very satisfying! With a gorgeous mix of bacon and shrimp sauce, spooned over cheesy and creamy porridge, this is totally a must try! It’s another delightful 30-minute ⏰ recipe to add to your folder.

Italian Meatball Sub Recipe • Always a Favorite! | Club Foody

 

Like thousand of others, David and I like sandwiches. They’re very convenient as they can be eaten almost anywhere, they’re easy to make, plus affordable 💰! There are so many varieties of sandwich recipes out there and combinations to make.
 
Although we have them more often during the summer time, we still enjoy them when it’s cold outside 🥶. There’s Hot Chicken Sandwich, Grilled Cheese Sandwich along with a nice hot tomato soup, Stromboli, Tuna Melt, Reubens, French Dip, Falafel Pitas, Sloppy JoePhilly Cheesesteak Sandwich, etc.
 
Another one we really enjoy during this time of year is Italian Meatball Sub! Loaded with yumminess, this crusty sandwich is the BEST 🏆🥇! Made with homemade meatballs and sauce along with hoagies spread with garlic herb butter plus topped with cheeses, this is comfort food to the max!
 
Italian Meatball Sub originated from the Italian-American communities back in the late 19th century and early 20th century. They were using long Italian-style rolls filled with meatballs, tomato sauce 🍅 and topped with mild cheese like Provolone or Mozzarella. Today, there are many different variations of this finger food.
 
Making this satisfying meal is pretty quick ⏳ as long as the sauce is already made and so are the meatballs. For the sauce, I go either with Meatless Spaghetti Sauce or the Classic Marinara. When it comes to the meatballs, they can be made ahead. They’re covered with the sauce and kept warm until needed.
 
The hoagie rolls are sliced lengthwise but not all the way through… just like hot dog buns and then, tops and bottoms are hollowed down to about ½-inch deep. This will create a nice comfortable spot for the meatballs 🧆 to sit without rolling out.
 
Besides homemade sauce and meatballs, there’s also my Garlic Herb Butter 🧈🧄 which gives a delicious impact on this classic. It’s important to cover the entire surface of the hoagie rolls because if we don’t, when placed under the broiler the first time, they might get very dark. It basically works like a barrier.
 
After being placed on a baking sheet lined with foil, the buttered hoagies are transferred to the oven under the broiler and toasted no more than a minute and 15 seconds… ⏰ I’m serious, otherwise, they’ll get very brown.
 
When the rolls come out, 3 meatballs per hoagie are placed in the hollowed bottom before being topped with Havarti or Swiss cheese halves 🧀. Then, they’re back again under the broiler for 1:30 minutes or until the cheese is melted.
 
For the final touch, some sauce is spooned over the melted cheese and then Parmesan cheese and parsley are sprinkled on top. Voilà! Here’s how easy it is to make 👩‍🍳👨‍🍳 this amazing meal!
 
This Italian Meatball Sub recipe is super easy to make and always a hit! The added Garlic Herb Cheese elevates this simple and yet so tasty dish! It’s one of our favorite 💖 fall/winter finger foods and after trying it, I’m sure it will become yours as well!

Lining a Square Pan with Parchment Paper - Tips & Tricks | Club Foody

 

For Thanksgiving 🦃 and other Holidays and events, most people do more baking. Depending on the recipe, the pans often have to be lined with parchment paper. The round ones are easy to line but what about the other shaped pans such as rectangular or square?
 
When dealing with other shaped pans 🟪, the method is slightly technical but definitely not difficult. In this episode, I show you how to do it by Lining a Square Pan with Parchment Paper which is exactly the same technique for rectangular ones.
 
Trying to lie your parchment paper flat inside those pans is impossible without doing this technique. I’m not crafty whatsoever and I find it super easy to do. It takes just a couple minutes ⏳ to measure and cut…
 
For Christmas 🎄, I go crazy with baking. I like making my Nutella Fudge, Blondies, Lemon Sheet Cake, Brownies, Pumpkin Bars, and so on. All of them can stick to the pan so to prevent them from doing so, I do this tip… Lining a Square Pan with Parchment Paper.
 
After the parchment paper is measured 📏 and cut including creating a couple flaps at each corner, I like to do this extra step…
I place the prepped paper in the pan and then I fold the 4 flaps behind the long side of the paper. Simple, right? The reason is it keeps the batter from leaking behind the paper. It might not make too much sense but by watching the video, you’ll understand what I’m talking about.
 
Lining a Square Pan with Parchment Paper helps release the baked goods without sticking, makes the shape neater plus the cleanup 🧼 is a breeze. There’s a lot of frustration and stress that can be avoided by simply doing this method…

Maple Glazed Walnuts Recipe • Tasty & Versatile! | Club Foody

 

David and I like snacky foods especially on movie nights 🎬! He enjoys his Cretors Popcorn or BBQ chips while I have my plain chips with my onion chip dip or my seaweed snack. Other times, we share a bucket of Cracker Jack, have tortilla chips with salsa or roasted squash seeds.
 
When it comes to sweets, we definitely go for cold treats like ice creams 🍦, gelatos or floats during the summer while the rest of the year, we munch on Fig Newtons CookiesPirate Cookies, Twinkies, Reese’s Peanut Butter Cups, Twizzlers, etc.
 
Nuts are another favorite of ours. It can be some trail mix, peanuts 🥜, almonds, cashews, pecans, or walnuts. As much as they’re good on their own, I like to give the walnuts a flavor boost by turning them into Maple Glazed Walnuts!
 
These are simply amazing plus incredibly versatile! Besides being a nice sweet snack on their own, they can be used as a topping for cereals, oatmeal or even salads 🥗. They also make a great addition for a charcuterie board. In addition, I use them to decorate my Maple Walnut Cake.
 
Another plus about these Maple Glazed Walnuts is they take 6 to 7 minutes ⏳ to make. What takes the most time is allowing them to cool before transferring to the fridge for a couple of hours to help dry them out.
 
Talking about drying them…
Until recently, I used to place them in a single layer on wax or parchment paper. I realized that many of them were sticking to the paper. I decided to put them straight on the baking sheet without paper… much better. At least, there’s no tiny paper bits sticking to the nuts 😉.
 
Also, after chilling the walnuts for a couple hours ⏰, I remove the tray from the fridge and release the walnuts from the bottom of the baking sheet before returning them to the fridge. I repeat that a few times until they no longer stick to the tray – it might take 3 to 4 times before this happens.
 
This delicious Maple Glazed Walnuts recipe is easy to make plus so versatile! With only 3 ingredients, they’re a great snack to munch on! Add them to your charcuterie board, a topper for salads, cereals or oatmeal, decorate your cake 🍰 with them, and more. Add hot paprika or cayenne for another tasty twist!
