Creamy Tuscan Salmon Recipe • Elegantly Tasty! | Club Foody

Since childhood 👧, I always enjoy eating fish. I find it light, tasty and very versatile. I have a few favorites such as Cod, Orange Roughy, Red Snapper, Rainbow trout, Mahi-Mahi, Perch, Sardines, Bass, Tuna, Swordfish and Marlin.
 
Another one that is incredibly amazing is Salmon! Not only tasty, this fish is also a superfood 💚! Packed with omega-3 fatty acids, protein, vitamin D, vitamin B12, selenium and potassium that contribute to brain function, improve heart health, reduce inflammation, improve mood as well as skin, nail and hair.
 
I have almost a dozen recipes on the website 💻 and they just keep coming. So far, there’s West Coast Smoked Salmon ChowderSalmon PieBaked Salmon with Dill SauceEasy Miso Glazed SalmonPacific Coast Salmon on the BBQ, and more. Here’s the latest one… my Creamy Tuscan Salmon!
 
Insanely delicious, this dish is perfect when entertaining, as a weeknight meal or when time is in short supply. As I’ve mentioned many times – “We eat with our eyes 👀 first!” -, and this one-pot recipe delivers it beautifully.
 
The first essential step to do is to pat dry the fillets with paper towels so we get a nice sear on them. If the moisture 💦 is left on the surface, the fish will steam rather than sear, resulting in a soggy texture… not so appetizing!
 
Depending on what I find at my supermarket 🛒, the salmon may or may not have skin on. Besides the thickness of the fish, one important thing to know is the cooking time varies between them, with or without skin.

No skin…
– Place the fish, seasoned side down, and cook, based on the thickness of the fish, for 3:30 to 4 minutes ⏰ while seasoning the top. To know when to flip the fillets, the sides should be halfway done. After flipping, it takes only 2 to 2:30 minutes.
Skin-on…
– The fish fillets are seared skin-side down first until crisp which takes a little more time, about 4:30 to 6 minutes. After seasoning the top, they’re flipped and the flesh side take less than 2 minutes ⏳ of searing.
 
As I want to keep a true Italian vibe to this dish, the seasoning I use for my Creamy Tuscan Salmon is ground sea salt 🧂, freshly ground mixed peppercorns and Italian seasoning. The rest of the ingredients in this recipe are commonly used in this roman dish.
 
Like most fish recipes, it takes 30 minutes at the most to make this one-pot dish! It’s elegant enough to serve to your guests and also convenient to make for a weeknight dinner. It can be enjoyed as is with crusty bread or with rice 🍚.

Mediterranean Pizza Dough Recipe • Tasty & Colorful! | Club Foody

 

Life can be full of surprises! I thought I would become a reporter (I was almost there), get married 👰 before my 30s’ (got married mid-fifties), being a mother (found out I can’t have children), and being already retired… looks like I’m certainly not there yet!
 
Another surprise was to find a passion for cooking and baking as well…
I started cooking seriously in my mid-20s’ and then baking came soon after. If you told me 30 years ago that one day, I’d love making pizza dough from scratch, I would say – “yeah, right!” 🤨. Just like bread, I love the whole process: yeast proofing, rising, kneading, dough proofing, and baking.
 
On the website, I posted a few pizza dough recipes such as Easy-Cheesy HerbRustic ItalianGreen Onion, and Best Foolproof Cauliflower which won a few prizes 🏆. Now, let’s add another tasty one… my Mediterranean Pizza Dough!
 
This dough recipe is so fabulous! With the added roasted red peppers, they not only give a nice color to the dough but also bring a mix of sweet, smoky 🔥 and tangy flavor. This pie dough adds a delicious dimension to your creative pizza!

Like any other pizza dough recipe, the process is pretty much the same…
It’s mixed and kneaded until the dough clings around the attachment before rising twice for 1 hour ⏰ each time. From here, the Mediterranea Pizza Dough is divided into two equal balls, roll them out into 14-inch diameters and then you’re ready to proceed with your pizza recipe!
 
Just to let you know, the dough will be sticky and it’s okay as long as it bounces back which indicates that the gluten has developed and as a result, you’ll end up with a light, airy, well-risen crust. Before its first rise, simply grease your hands 🖐 lightly when forming a ball by pulling under.
 
This Mediterranean Pizza Dough is easy to make 👩‍🍳👨‍🍳 with amazing results! I use it when I make some of my pizza recipes such as Pepperoni, Oysters, Greek, etc. Incredibly delish, this is a great base for your creative pies!

Egg Hot Dog Rolls • Guédilles aux Oeufs Recipe | Club Foody

 

When my brother, Daniel, and I were young, our mother 👱‍♀️ was making easy meals so we could quickly go back playing outside. Most of the time, it was sandwiches. As you know, they’re fast to prepare, satisfying and always a kid favorite.
 
Our preferred ones 🥪 as kids (I’ll have to ask my brother if these are still the same for him) were Grilled Cheese, the famous Egg Salad Sandwich, Tomato on toast with a slice of bacon and Miracle Whip, Cucumber (not as fancy as my Cucumber Tea Sandwich on the site), and Curry Chicken Salad.
 
There was also this popular Québec one called Egg Hot Dog Rolls • Guédilles aux Oeufs 🥚…
 
This finger food is incredibly tasty! With a gorgeous mayo-Miracle Whip mixture stuffed in toasted New England-style hot dog buns, this egg version sandwich is so amazing! Having the hard-boiled eggs done prior, it takes less than 20 minutes ⏰ to enjoy this hand-held food… perfect when time is in short supply.
 
Before going any further, let’s talk about Miracle Whip…
As many would disapprove 😒 of this condiment, allow me to highlight a few points by comparing it with its counterpart which is Mayonnaise.
– Miracle Whip and Mayonnaise are similar but also different. While both are made with oil, eggs and acid (vinegar or lemon juice 🍋), mayonnaise is rich and tangy with a creamy texture.
– Miracle Whip has the same main ingredients as mayo (oil, eggs, acid) but there’s also water 💦 that goes in plus sugar and spices like mustard, paprika and garlic. Its texture is lighter and thinner plus the flavor is more pronounced
– Both are great as spreads or used as an ingredient in recipes such as Potato Salad.
– When comparing the two, believe it or not, Mayonnaise has more calories and fat than Miracle Whip.
– It’s a question of personal preference and also application but if you haven’t tried Miracle Whip, I suggest you give it a try.
 
There are certain recipes that mayonnaise is the only option BUT (yes, there’s a BUT), when it’s feasible, adding Miracle Whip gives another layer of flavor. If you like mayo but want extra zip, don’t lift your nose 👃 at Miracle Whip!
 
Back to these tasty Egg Hot Dog Rolls • Guédilles aux Oeufs…
This egg mixture differs from my childhood’s. My mother’s version was more basic. Of course, as a foody, I enhanced the flavor by adding more ingredients to it such as Dijon mustard, tomato 🍅, bacon, and lettuce sprinkled with smoked paprika.
 
Dijon mustard is a condiment that my parents didn’t used when we were growing up. I don’t know if it was available back then or not. Myself, I started using it in my late 20s’. It has a lovely distinctive, sharp taste versus yellow mustard. It gives a nice “kick” 🙃 to this recipe.
 
To make this Québécois hand-held, New England-style hot dog buns are used. What makes them different from regular ones 🌭 is their shape. They’re rectangular, have a flat bottom and the top is sliced while the other ones are oval and sliced on the side. For a crispier texture, the sides are often toasted while the regular hot dog buns are mostly steamed.
 
On the West Coast, we can’t find any but my mother, who lives in Montréal, is my supplier. If you don’t know someone who lives on the East Coast, regular hot dog bunshamburger buns, or just thick slices of bread 🍞 will do. If you really insist on making the New England-style hot dog buns, there’s a specific pan you can buy online and from there, simply follow my Hot Dog Bun recipe.
 
After the buns are toasted, it’s time to assemble the sandwich. First, I like adding lettuce at the bottom of each of them… it’s my personal touch. I prefer Spring Mix Lettuce but use the one you like such as romaine, iceberg, Boston, spinach 🍃 or even arugula.
 
From here, I generously spoon the egg mixture over the lettuce. For the finishing touch, I lightly sprinkle on some smoked paprika – again, this is another of my foody signatures 📝! It can be switched for other spices like cayenne or hot paprika.
 
This Egg Hot Dog Rolls • Guédilles aux Oeufs is a delish way to enjoy this healthy protein! Quick (as long as the eggs are pre-boiled and cooled) and easy to make 👩‍🍳👨‍🍳, this tasty finger food is sure to please kids of all ages…

Mexican Smoky Corn Dip Recipe • A Crowd Pleaser! | Club Foody

 

It was apparent that Club Foody had to be created…
Ten years ago, I said to David that I had to share all my beautiful recipes with people and slowly, that is when I started putting the website together. Alvenh (my web designer) and I worked for months 📆 before finalising CF. On March 1st 2016, the first recipe (Sausalito Smoked Salmon Dip) was up and running…
 
In the past few years though, I keep mentioning to my husband that without Club Foody, many recipes 🥘 would not have been created or ingredients not be tasted. One thing that CF didn’t change but amplified was to try new dishes that we’ve never had before.
 
Last time we were in Puerto Vallarta, we were wandering in the Zona Romantica and walked by a street food vendor that was selling Elotes 🌽, a popular Mexican snack. Afraid to get the “turista” also know as “Montezuma’s Revenge”, we simply asked about the ingredients. Just before we left, I tried one.
 
It was OMG 🤯!
The following summer, I recreated Elotes at home and ever since then, we’ve been corn on the cob snobs! We can’t have them with just butter 🧈, salt and pepper… it’s so boring! That delicious Mexican version took me a step further and that is when I created Mexican Smoky Corn Dip!
 
With a few added (and omitted) ingredients, this dip is extremely similar to Elotes. It has a few substitutions, giving this party food a rich and smoky flavor. Relatively quick to make 👩‍🍳👨‍🍳, this is a crowd pleaser and can be served with tortilla chips or crostini!
 
To give it that gorgeous smooth mixture, cream cheese, mayonnaise and crema are mixed together. Here in Canada 🍁, I’ve never seen crema so depending on where you live, it might not be available therefore use sour cream. I prefer light as it mixes better with the other ingredients.
 
Additional ingredients are also added to this beautiful Mexican Smoky Corn Dip such as lime juice and zest, chili powder, smoked paprika, salt 🧂 and pepper. These bring the right balance to the mixture without being overly spicy or overly rich.
 
As the title refers, corns is one of the main ingredients. They can be either steamed, microwaved, or grilled. Of course, for a smokier taste, grilled 🔥 is the way to go. Next year, I’ll show you all the different ways to cook corn on the cob.
 
After the cobs are cooled enough to handle, the kernels are cut and added to the cream cheese mixture. Another “must add” ingredient to mimic Elotes is Cotija cheese. Same as with crema, it might not be available in your area so substitute either feta or queso fresco. If using feta, rinse it under cold water 💦 to remove the salty brine.
 
Remarkably close to Elotes, this Mexican Smoky Corn Dip is simply amazing! With a great mix of ingredients, this is the perfect party food to serve to your friends and family 👨‍👩‍👧‍👦! Bring a bag of tortilla chips and enjoy this dip!

Blueberry Simple Syrup Recipe - Tips & Tricks | Club Foody

 

Unless you’re strictly a beer or wine drinker 🍷, a proper bar needs the basics: Vodka, Gin (I can’t stand it 🤢… it’s for guests), Rum, Whisky, Brandy and Tequila. If you want to extend it a little more, there’s dry or sweet Vermouth, Grand Marnier and Cognac.
 
Moreover, sodas, clamato/tomato, grapefruit, cranberry, and orange juice 🍊 are also good to have around. Other essentials are celery salt, grenadine, bitters, Worcestershire sauce as well as hot sauce, plus garnishes like cocktail onions, olives, lemons, limes, etc.
 
Simple Syrup is probably the most used. It’s very versatile and a great sweetener that balances flavors, taking away some of the bitterness from the alcohol. It’s an ingredient for Mojitos, Mai Tai 🍹, Mint Julep, Old Fashioned, Lemon Drop Limoncello Martini, and more.
 
As the title refers, it’s easy to make this syrup. A couple decades ago, I decided to take it a step further by creating Cranberry Simple Syrup as well as a Cherry one 🍒. Another one added to this list is my Blueberry Simple Syrup!
 
Within 20 minutes ⏳, you’ve got yourself a nice condiment. It can be used to enhance cocktails such as Blueberry Daiquiri, Blueberry Lemon Drop Martini, and others, including Blueberry Ice Cream Float. You can also enhance a nice savory Blueberry Sauce by adding some to it.
 
To make 👩‍🍳👨‍🍳 Blueberry Simple Syrup, the ingredients are combined in a saucepan and simmered for a short time, breaking up the berries with the tip of a wooden spoon. From here, the mixture is transferred to a fine sieve, drained into a bowl and then the solids are discarded… we don’t need the pulp.
 
After the mixture is nicely drained, it’s stored in an airtight container and transferred to the refrigerator until ready to use. It keeps very well for months. I never test exactly how long it can be stored because within a couple months 📆, I normally use it all up!
 
Blueberry Simple Syrup is a great condiment to have on hand. Besides being another bar essential, it can be used in recipes for cakes 🍰, popsicles, as a base for salad dressings, marinades, sauces, or glazes for meat.
