Mango Chipotle Wing Sauce - Yummmazing! | Club Foody

When you’re having your friends over to watch a game on TV or just hanging out, you want to serve something other than just chips or peanuts. What you need is finger foods and there sure is a wide variety to choose from…
 
Every year, I post a different recipe for Super Bowl and this year is no different besides making it “simpler”. I thought of chicken wings and drumettes because it’s a dish that everyone loves… right? Now that we’ve figured out what to serve your buddies, the next step is to pick the right sauce to go along with the wings… Here’s a new one for you!
 
As much as I love my Smoky Buffalo Sauce, my Hawai`ian Style Teriyaki Sauce and my Triple Chili Sauce, here’s another one that should be under the spotlight along with them… my Mango Chipotle Wing Sauce! Like the others, this sauce is quite easy to make and packed with flavor.
 
Is it spicy? Is it sweet? Hmmm, let’s see…
 
It has some kick to it but not too much. There’s some sweetness in the background but not to the point that it’s too sweet. I’d say it is a well-balanced sauce… not too sweet, not too spicy and definitely not boring.
 
Although I’ve been suggesting you use this Mango Chipotle Wing Sauce with that popular finger/party food, it doesn’t mean that it can’t go with anything else. Of course, this sauce is also fantastic on chicken breasts but besides that, pork would be a great choice to pair it with.
 
Now back to our wings and drumettes for this coming Super Bowl weekend. After reducing this Mango Chipotle Wing Sauce so it sticks to the wings, you’ll be serving this fantastic finger/party food to your friends with some dipping sauces such as my Zippy Ranch and my Blue Cheese. Add a few crudités and you’ll be sure to score a touchdown…

Sole Almondine - Deliciously Elegant! | Club Foody


I enjoy diversifying my menu almost every day. I always like to have a balanced diet that includes meat, fish, veggies, eggs, legumes, dairy, fruits, whole grains and nuts. As each food group brings important nutrients to our body, alternating our menu is essential.
 
After I moved in with David, it was hard for me to keep a healthy diet as he was more a “meat & potato” kind of guy. I finally got him to understand the importance of eating a little bit of everything… weekly
 
One food group that I have to put my foot down about quite often, otherwise we probably would only eat it a few times a year is fish. I guess the way we were brought up plays a significant part in our eating habits. My parents served a meal with fish almost every week whereas David’s mother really didn’t – perhaps that explains why he’s not inclined to eat that kind of protein more often…
 
One recipe that he enjoys when I make it is Sole Almondine! Seasoned lightly, then quickly fried in a nice nutty butter and served with a light buttery almond sauce, makes this a tasty meal to have! This is a recipe that you can easily serve anytime…
 
Although this dish is traditionally served with fillet of sole, depending on if I can find it or if it’s thick enough, many times I replace this recipe with fillet of tilapia. To us, both work and the results are quite similar.
 
This is a great meal to enjoy during weeknights as well as weekends and the “big” plus of this recipe is it doesn’t take much time to make. Within 30 minutes, you have yourself quite a nice dish to enjoy. Give this Sole Almondine recipe a try soon and I’m positive that will encourage you to eat fish more often…

Homemade Mixed Spice - Épices Mélangées - Tips & Tricks | Club Foody

A few times, I’ve had some of my subscribers asking what Mixed Spice is – let’s not confuse it with allspice as they are not even the same. I gave them a link from Amazon and then realized that the ingredient blend was quite simple. That is why I’m posting this quick homemade recipe. 


I should’ve thought of making this blend earlier because when I moved to Vancouver, there was only one grocery store that was carrying it. Back in Toronto, it wasn’t a problem finding it but it sure was here. As I’ve never really looked for it in the United States, I can imagine it might be the same scenario as here in British Columbia. 


I’m not sure if it is a Québécois “thing” but there are a lot of recipes where Mixed Spice is used. My mother and father use it and so does everyone else in my family. I use it in my Tourtière (Meat Pie)Creton Maison, Ragoût de Boulettes avec Pattes de Cochon (Stew Meatballs with Pig’s Feet), just to name a few… 


If you are not familiar with this spice or cannot find it at your grocery store, now you can make it at home. Make sure to store your Mixed Spice in an airtight container…

Here are the amounts…

– 1/2 tsp. ground ginger

– 1/2 tsp. allspice (épices de la Jamaique)

– 1/2 tsp. ground cinnamon

– 1/2 tsp. ground coriander

– 1/2 tsp. dry mustard

– 1/2 tsp. ground cloves

– 1/8 tsp. superfine freshly ground black pepper

Slow Cooker Beef Barley Soup | Club Foody


Those of us who live in a cold climate during the winter months know that there are certain dishes that warm us up inside out and “soups” are at the top of the list. To me, making homemade soups is a necessity as they help me get through the frigid time of the year…
 
Why I enjoy making soups so much is that they can easily turn into a main dish like my Slow Cooker Beef Barley Soup! With chunks of beef mixed with barley in a lovely broth, this soup definitely fills you up. This is the kind of meal that we feel great having… It’s definitely comfort food! Also another reason why this soup appears on my menu almost each winter is I don’t really have to babysit it… the slow cooker do the job for me!
 
I like to serve this Slow Cooker Beef Barley Soup with crusty bread like my French Baguettes spread with butter. Although very filling, it also pairs very well with a grilled cheese or my Monte Cristo or my Croque-Monsieur sandwich which will be coming up on August 8th, 2019… stay tuned!
 
I have a long list of favorite soups but this one is in my top 5. I grew up with this soup and when I came back home from school or after playing outside in the snow, this soup did exactly what it was supposed to do; wrap me up with warmth inside out and take care of my hunger…
 
As an adult, I’ve made this soup a ton of times during the winter and each spoon takes me back to when I was a child. Now living in British Columbia where the winter is not as harsh as the ones in the East, I still enjoy this amazing soup and more so because I use my slow cooker to make it!
 
As much as this is an uncomplicated recipe, it is a great soup to keep around when the thermometer starts dropping and there’s a snow storm outside. I’m telling you… this Slow Cooker Beef Barley Soup is a dish that your whole family will enjoy!

Escargot con Funghi in Vol-au-vent | Club Foody

As most of you know by now, I really enjoy entertaining at home. With a wide circle of friends, having them over for dinner is fun. Every time I have our guests over, I try my best to diversify the menu from one dinner to another.
 
Unless there’s a dish that has to be served by itself, I usually make an appetizer. I like to be formal with my dinner parties – an appetizer followed by the main course (depending on the course, I might also serve a sorbet to cleanse the palate after the appetizer) and then dessert with a plate of cheese if the meal wasn’t too heavy. I love doing that… it’s my thing!
 
Last year I showed you a quick and easy way to make Homemade Vol-au-vent. These French hollow pastry shells are great food vessels for so many recipes that have sauce in them. Having said that, here’s a great recipe of mine that I like to serve as an appetizer… my Escargot con Funghi in Vol-au-vent!
 
This Escargot con Funghi in Vol-au-vent is a dish that doesn’t require too much time and the results are so delicious! Escargots are incorporated in a savory mushroom sauce with fresh herbs and spices. Then the mixture is spooned into those flaky puff pastries… The combination is just fabulous!
 
Here’s a quick note on the making of the vol-au-vent. For video purposes, I made the size of my puff pastry larger than I usually do. As an appetizer, you can size them smaller to make it more appropriate for the course. That’s how I like to serve them as a first course to my guests…
 
This Escargot con Funghi in vol-au-vent recipe is relatively quick and easy to make. Including the preparation of the vol-au-vent, this appetizer can be ready in less than 30 minutes if you manage your time well.
 
Formal or not, this is a lovely recipe to make at your next dinner party for not only its simplicity but also for its incredible flavors. Your guests will be quite impressed when you serve them this Escargot con Funghi in vol-au-vent… trust me, they’ll love them.

Roasted Red Pepper & Sun-Dried Tomato Pasta Sauce | Club Foody

Back in the early 90s, there was a new food trend… sun-dried tomatoes! A decade before that, roasted red peppers were popular as was the use of roasted vegetables. These two ingredients not only made a delicious entrance into the culinary world but also got serious attention from “foody” people!
 
Popular restaurants were showcasing them on their menu with at least a dish or two with one of the two ingredients. Like many others, I love the taste of both. I like it so much that I decided to combine them together to create this pasta sauce recipe that friends and family have been enjoying for more than 25 years… my Roasted Red Pepper & Sun-Dried Tomato Pasta Sauce!
 
Extremely easy to make, the combination of flavors makes this sauce absolutely amazing! It is the kind of sauce that is a step above any other “rosé” sauce. It has a rich taste with a slight zip which makes it deliciously different. With more added ingredients, this roasted red pepper & sun-dried tomato pasta sauce is definitely one to try… My favorite pastas that I like to use for this dish are either penne or rigatoni.
 
As you might already know, roasting vegetables not only makes them sweet but also intensifies their flavor. The same applies to sun-dried tomatoes, giving them a sweet-tart flavor. I believe these two ingredients complement each other beautifully and that’s why this recipe was created! It is a well-balanced sauce for pasta night.
 
You can make this recipe by roasting your own peppers and drying your tomatoes. As I’ve never owned a dehydrator (it’s on my Christmas list though… lol), drying tomatoes in the oven takes way too much time (almost a day) but it’s not unfeasible. On the other hand, roasting peppers is much easier and definitely faster. Here’s a link on how to do it… How to Roast & Peel Peppers.

Pomegranate Avocado Detox Smoothie | Club Foody

During late fall last year after spending 6 weeks in the Palm Springs area, we went to see my cousin Michelle and her beau Ryan in Del Mar. From San Diego, we drove up to Dana Point to spend some time with our friends Karen and Peter. After that, the vacation was almost over and we started driving back home.
 
Our first two stops were both in California; Monterey and Crescent City and then we drove to our last stop in Newport, Oregon before heading home the next day. When we finally got home, the temperature had dropped from 35ºC/95ºF down to 10ºC/50ºF within 4 days. It’s not as bad as when you’re flying back from a tropical destination to Canada in the middle of winter but still, it sure was a shock to our system.
 
A few days later, David got sick with a cold, coughing badly. It was just a matter of time before it was my turn. That is when I remembered a smoothie that I used to drink when I was feeling under the weather. The next morning, with a sore throat, I made us my Pomegranate Avocado Detox Smoothie!
 
This smoothie is not just super tasty but also very good for us. With great antioxidant ingredients, this pomegranate avocado detox smoothie is a good way to ward off a cold. It boosts our immune system and gives us nutrients that our body needs.
 
After drinking it, David started feeling better – to my relief- while my sore throat vanished and I was able to get on with my crazy schedule without getting sick. I am not saying that this is the “remedy” but it sure doesn’t hurt to give your system a little boost now and then.

Speed Up Avocado Ripening - How to – Tips & Tricks | Club Foody

David and I use avocados quite a lot in recipes like smoothies, salads, condiments, sauces or even on their own. This fruit is so tasty with its smooth, creamy texture. They are a superfood that everyone should enjoy more often unless they are hard like a rock when it comes time to buy them… 


There’s an amazing trick that helps to speed up the process… and it works every time. In this episode, I’ll be sharing this very helpful Speed Up Avocado Ripening trick! 


While we were in Rancho Mirage vacationing, we went to one of our favorite grocery stores. We wanted to make David’s famous Creamy Spicy Guacamole but alas, the avocados were all hard and unripe. There was a gentleman working there that I approached, asking him if he knew a trick to ripen them faster. -“Of course”, he replied… 


After listening to his suggestion, we went home with some green, unripe avocados and gave it a try. A couple of days later, to our surprise, his simple trick worked and we were able to enjoy this amazing fruit. 


Speed Up Avocado Ripening is a great kitchen trick to fast track the process. In this video, you’ll see that it doesn’t take much time to make it happen and a couple days later, you’ll have perfect ripe fruit.

Asian Chicken Salad Recipe • A Healthy & Flavorful Salad! | Club Foody


As we welcome the New Year, I’m sure many of you have set some goals and/or resolutions. Two of mine are to be more physically active and to spend more time with David. I average about 110 hours of work per week, leaving little time for other things but this year I want to change that…
 
Eating healthy is probably on most people’s lists and what I like to do each year is to post a salad as my first recipe of the year such as Julienne SaladWinter Citrus SaladClassic Cobb Salad, Quinoa Beet Salad, and so on . It’s tasty, healthy, easy to make and after indulging over the Holidays, a light meal is the way to go…
 
The 1st recipe of the year is my Asian Chicken Salad! This salad is packed with so many flavors. There are fresh ingredients like cabbage, bell peppers, carrots, grilled chicken breasts and much more, in a beautiful “slightly spicy” vinaigrette. This salad is sure to start your New Year’s resolutions off right!
 
I mentioned the vinaigrette is “slightly spicy” because it has some bite to it. As I always mention, recipes are a guideline and adaptable. You can change the recipes to your liking – after all you’re in charge of your Asian Chicken Salad!
 
This salad recipe is definitely a full meal. Can it be a side dish? Not really because you have your protein and vegetables all in one! You can always serve it with French Baguettes or Dinner Rolls but keep in mind that there are some crispy chow mein noodles in this recipe which give a lovely crunch to the dish.
 
If eating healthy is on the program for 2019, this flavorful Asian Chicken Salad is definitely a great recipe for you. Give it a try and start your New Year off on the right foot!
