Cherry Simple Syrup Recipe - Tips & Tricks | Club Foody

 

Simple Syrup is definitely a must for your bar but besides being used to make cocktails, it’s also a great condiment for baking and cooking. As the name suggests, it’s simple to make – water and granulated sugar, that’s all! Besides the basic one, there is a long list of different syrup flavors that can be made like Ginger Syrup, Mint Syrup, Thai Chile Syrup, Blueberry Syrup, Rosemary, Mango, Lime and on and on including this featured one… Cherry Simple Syrup!
 
I love using it to enhance Vodka & Soda, in the making of my Canard aux Montmorency, in Cherry Lemonade, one of my summer favorites… Cherry Cola Float, or even Cherry Popsicle. It can turn into a nice glaze for pork like tenderloin and chops, lamb, ham, chicken, etc.
 
I’m very particular when it comes to cherries and the kind I use is Bing. They’re dark, juicy and delicious. They give exactly the right taste to my Cherry Simple Syrup. Here’s the recipe…
 
Cherry Simple Syrup ingredients…
– 1/2 cup fresh or frozen cherries, pitted and halved
– 1/2 cup water
– 1/4 cup granulated sugar, or as needed (see Footnote)
 
Combine all the ingredients in a medium pot over medium-high heat. As soon as it starts simmering, reduce the heat to medium-low and let the mixture simmer gently for 20 minutes, breaking up the cherries with the tip of a wooden spoon, a potato masher or even a meat chopper.
 
When cooking time is up, remove from the heat and let it rest for 10 minutes.
 
Transfer the mixture to a fine sieve sitting over a bowl and with the back of a spoon, press down on the fruit to extract as much juice as possible. Store the syrup in an airtight container and transfer to the fridge until ready to use. Makes about 1/2 cup.
 
Make this Cherry Simple Syrup while Bing cherries are in season. Stored in the refrigerator, it keeps very well for months. Add another dimension to your cocktails, savory recipes, desserts, over pancakes or when you want to add this amazing fruit to a dish…

Footnote: Simple syrup usually has the same amount of sugar and water. In this case, because I use Bing Cherries and they’re so sweet, I reduce the amount of sugar used.
