Cajun Poutine Recipe • A Tasty Twist on a Québécois Dish! | Club Foody

 

Being French Canadian and growing up in Montréal I’ve had many French dishes from the old country like BouillabaisseCoq au Vin, Canard Braisé aux Montmorency, Boeuf Bourguignon, Foie Gras, Cassoulet, etc. Although they are very delicious recipes, Québec is also known for its own cuisine. There’s a worldwide popular dish that originated from “La Belle Province” and it’s Poutine. If you’ve ever had Poutine before, you probably had the regular version which is French fries, cheese curds and gravy right? Now if you were to think outside of the “poutine box” how about Cajun Poutine?
 
This dish is on steroids! It’s so deliciously different from the traditional one. First, the gravy is packed with bold flavors and second, there’s an incredible combination of ingredients. I use my homemade Andouille Sausage recipe to make this dish as well as my Creole Seasoning Mix from scratch. These two ingredients alone are a great start for this Cajun Poutine!
 
Besides this remarkable recipe, I’ve actually created a few others that I will eventually share with you. Berries • How to Keep Them Longer - Tips & Tricks | Club Foody

 

When June is finally here, I can’t wait to get my strawberries, raspberries, blackberries and blueberries for the next couple of months. I love them! They’re so tasty and every bite is a burst of flavor! Unfortunately, they don’t keep very long… How many times have I bought some and a couple of days later, I had to throw a few out.
 
A few years ago while I was at my supermarket in the produce section trying to pick the best berry package, I met a woman and we started talking. I told her how hard it was to keep them fresh and surprisingly, she told me what to do.
 
In this Berries • How to Keep Them Longer episode, I’m going to share what I learned from her that day. Instead of having them get spoiled in the refrigerator a few days after buying them or having to throw the berries in the freezer to salvage them, there’s a couple of easy steps to do which remarkably
work amazingly well!
 
I’ve been using this incredibly easy tip since then and I’ve never had to throw out any berries again. The process is simple; I soak them in a vinegar-water bath which helps to kill any mold that can spoil them. From there, I rinse them, dry them and store them… done! Coffee Ice Cream Recipe • Tasty and Refreshing! | Club Foody

 

I’m a coffee drinker and with the long hours I put into Club Foody, I do drink a lot although I’m slowly reducing my consumption. Nonetheless, I love coffee! In the morning, what better way to start your day than with a nice hot cup of joe or a cold one in the afternoon to refresh yourself drinking a delicious Vietnamese Iced Coffee. Later on at night after dinner, a nice Spanish Coffee is a beautiful way to finish a meal…
 
I also cook with coffee. Adding some to stews, soups or gravies can enhance your dish. The perfect example is when I make my Bourbon Maple Bacon Jam or my Coffee Beef Stew. When I’m baking, I add it to recipes like my Black Forest CakeTiramisuDulce de Leche Chocolate ParfaitChocolate Raspberry Cake with a Mirror Glaze, etc.

There’s a cold treat made with coffee that I just love and it’s my Coffee Ice Cream! Oh my, oh my! This is such an incredible recipe! It has the perfect amount of coffee without being overwhelming. It’s not bitter at all… just sweet enough to enjoy the flavor from the beans.
 
There’s an ingredient that I use for this cold treat that really brings everything together and it’s my Homemade Tia Maria. The reason why I prefer using this instead of others who use Kahlúa is there’s coffee in the liqueur which really gives another layer of flavor to this cold treat.
 
If you enjoy coffee as much as I do then this Coffee Ice Cream is a “MUST” try! It’s easy to make and another delicious way to enjoy coffee. This is the perfect cold treat to enjoy on a hot summer day. It’s certainly a recipe any “coffee lover” should make this summer…

Creamed Peas Recipe • So Fresh and Tasty! | Club Foody

 

As any parent with 2 children+ will tell you, each of them is different from the other. Their characters are likely not the same, their preferences as well as their tastes are quite diverse. The same applied in our house with my brother and I.
 
My brother and I loved vegetables and fruits. At an early age, we both enjoyed produce a lot because our parents were serving them every day. Of course there were a few I could live without but overall, I liked most of them; the same with my brother Daniel. There’s one that I recall because the scene was so adorable…


Daniel was probably 2 maybe 2 ½ years old and many times he showed my mother that peas wasn’t his thing. One day, my mother tried to outsmart him by hiding some in his mashed potatoes. Suddenly my father burst out laughing. My mother and I looked at him, intrigued. My father looked at my mother and said, pointing at my brother – “You thought you could trick him by adding some to his potatoes. Well obviously, it doesn’t work!”. With his tiny little fingers, he was taking one pea at a time out of his mouth and putting them on the side of his plate. Not only was it so cute but also very funny…
 
Peas became the forbidden vegetable in our house. I always liked them but used them rarely when I moved out on my own. When I met David, he introduced me to one of his family’s side dishes and ever since then, we have to make it often. It’s Creamed Peas!
 
Oh, la, la! This is an amazing side dish! Creamy and fresh, this is a recipe that pairs so well with many proteins. It’s quick and easy to prepare making this Creamed Peas recipe a family favorite.
 
The first time we made it, I thought it was okay… it needed more flavor. After tweaking the recipe a couple of times, we finally got it right! It’s not like it was terrible but by adding a few ingredients to it like shallots, thyme and garlic, it brought it up a few notches.
 
This improved David’s family Creamed Peas recipe is so tasty! To me, it’s the perfect summer side dish to serve along with grilled proteins although it can be made all year round. If you and your family enjoy peas, this is certainly a great one to add to your folder…

General Tso's Chicken Recipe • Tssooo Tasty! | Club Foody

 

I enjoy Chinese cuisine but prefer making my favorite dishes at home for several reasons. Without going into too much detail, I’ll highlight just a couple…
 
In my opinion, I find their food has a high sodium content which is not really healthy. Every time I went out to a restaurant or did take-out, the next day, my scale reads 4 pounds more. My body just retained all the liquid. Another reason to make it at home is I’m in control of the ingredients and the intensity of the flavors. Wonton Soup for example is very good but I always found it was a little on the “blah” side therefore making it from scratch gives me the perfect balance of flavor that I want.


I’ve already shared several Chinese inspired recipes like my Mandarin ChickenChar Siu PorkSlow Cooker Pepper Beef, and many more… Another favorite of mine is General Tso’s Chicken! What a recipe! It’s sweet and just spicy enough to bring deliciousness to the dish!
 
I like to marinate my chicken pieces for 30 minutes before frying them. As the meat absorbs it, it gives a deeper dimension of flavor to it. An ingredient I add to the sauce is chili oil and this alone brings some spiciness to it. I prefer making this condiment from scratch and here’s the link for it… Chili Oil
 
General Tso’s Chicken is tasty but also quite quick and easy to make. After the marinating passive time, in less than 20 minutes you’re ready to eat. Frying in batches might take 10 minutes all together and then making the sauce is perhaps another 5 minutes. When adding the chicken to the sauce then rapidly coating and heating them through, there’s another 2 to 3 minutes to it… done! Seriously it doesn’t take much time at all! One thing you shouldn’t do is to leave the fried chicken pieces in the sauce too long because they’ll lose their crispiness.
 
David and I love this dish! It’s quick and easy to make and so flavorful. General Tso’s Chicken is a great comfort food we like to enjoy on weeknights when our schedules are hectic. It’s definitely a nice recipe to have on hand…

Strawberry Milkshake Recipe • Refreshing Cold Beverage! | Club Foody

 

It’s hot outside, the mercury is rising and what you need is to cool off. Besides getting inside when the air conditioning is working full blast, another way to do it is to enjoy a cold non-alcoholic beverage. I posted a favorite of mine a few years ago which is Vietnamese Iced Coffee but now, here’s another one… my Strawberry Milkshake!
 
Summer after summer, I always enjoy a cold beverage sitting on my patio; Homemade LemonadeLemon Iced Tea, Seasoned Water, Watermelon Strawberry Smoothie, Slushies, Café Liégois, and many more. When it comes to beverages using ice cream, here are the two most popular ones… ice cream floats and milkshakes.
 
When I make my homemade Strawberry Ice Cream, you bet I’ll end up sipping a Strawberry Milkshake soon after before the ice cream tub gets empty. It’s pretty (pink is my favorite color), tasty and so easy to make. Within 5 minutes – of course it doesn’t include the time spent to make the ice cream -, you can enjoy this delicious cold treat!
 
When making this recipe, there’s an optional ingredient to add to top off the milkshake and it’s whipped cream. In the video I don’t show you how to make it because, as I say, it’s optional.
