Italian Gnocchi Casserole Recipe • Great One-pot Dish | Club Foody

 

Unless the nice weather holds on, by the end of September, I start making casseroles. It becomes a weekly affair until the following year when the temperature gets warm again. To me, they are the ultimate comfort food 🥰!
 
On the website 💻, I have dozens and dozens of casserole recipes. There’s BobotieGreen Bean Mushroom & Almond CasseroleLancashire HotpotPierogi Casserole, and many others. Now, here’s another fabulous one to add to the list… my Italian Gnocchi Casserole!
 
This dish is amazing! It’s simple and yet so tasty! I find it’s the perfect weeknight meal to have. It’s not complicated, easy to make plus very satisfying! With a gorgeous mix of ingredients, this is a great recipe to add to your folder 📘!
 
I use 2 packages (400 g each) of premade frozen gnocchi to make this recipe. I know, what a shock 😮!! Frankie is not making it from scratch! I just didn’t feel like making them… there are days like that! Now, the directions say 12 minutes to sauté them… I do 10 because they’ll be cooking more in the oven.
 
When making them from scratch, the steps are a little different…
After they’ve been chilled for 40 minutes (see the homemade recipe), working in batches, drop the gnocchi in a large pot of boiling salted water 💦. As soon as they rise, remove them, using a spider strainer, and transfer to a large plate in a single layer. After the spinach is wilted, add them to the skillet.
 
The veggies are onions, celery and red peppers as well as baby spinach. You can switch the celery for celery root if you want. I never add mushrooms 🍄 to this Italian Gnocchi Casserole but I’m sure it would be lovely!
 
When it comes to seasonings, it’s minimal: salt 🧂, pepper and Italian seasoning. The reason is because of the hot Italian sausage. There’s a lot of spices in it and has no problem to shine on its own! To make it from scratch, click on this link… Hot Italian Sausage
 
When making this featured recipe or any others, using good quality ingredients is the key to a delicious result! If you’re not making my Marinara Sauce then use a good brand. To top everything off, there are 2 kinds of cheese 🧀; Mozzarella and Parmesan cheese.

Hard-Boiled Eggs • Perfect Every Time! - Tips & Tricks | Club Foody

 

Cooking is a learning process and many mistakes will occur during this delicious educational path! I remember trying to make my first coffee icing. The recipe was asking for a certain amount of coffee ☕ and I literally added it in granules… not even diluted with hot water. It was horrible!
 
Undeniably, I’m sure I’m not the only one who overcooked eggs and ended it up with that green ring around the yolks. Don’t worry, it’s safe ✅ to eat them although seeing a green ring is not really appealing. Actually, it’s safer to eat overcooked than undercooked eggs.
 
How does that green ring occur? What happens is when the eggs are boiled (or cooked) too long, it creates a chemical reaction called denaturation – my husband is a scientist 👨‍🔬! The sulfur from the whites combines with the iron from the yolks.
 
After a few attempts and having unsuccessful results, I called 📞 my mom. She told me how to proceed and they have been flawlessly cooked ever since! Hard-Boiled Eggs • Perfect Every Time is what this episode is all about!
 
As much as we think that boiling eggs is easy, there’s still a cooking method and timing to get them right all the time. In the video, I show you how simple it is to accomplish. When serving Russian Deviled Eggs or simply making an Egg Salad Sandwich 🥪, you want them to be just right!
 
What you need to make Hard-Boiled Eggs • Perfect Every Time is a timer. When the water finally starts boiling, the time is set for 9 to 12 minutes ⏰ depending on the size of the eggs. From here, they’re transferred to an iced water bath for 15 minutes to stop the cooking process and cool… done!
 
There’s also a method when it comes to peeling off the shells…
Always start at the larger end because there’s an air pocket that makes it easier to separate the shell from the membrane. If there’s a little bit of stubbornness when peeling, let cold water from the tap run over it while doing it. Also, keep in mind that farm-fresh eggs 👩‍🌾👨‍🌾 are harder to peel…

Grasshopper Pie Recipe • A St. Patrick's Day Treat! | Club Foody

 

Without being 💯% sure, apparently there’s some Irish on my mother’s side. Undeniably, there’s Scottish from my dad’s while both sides have French heritage. As St. Patrick’s Day is coming up in a few days, I just can’t resist showcasing a “green” recipe!
 
There are a few already on the website like Spinach & Ricotta Scrambled Eggs 🥚, Shamrock Shake (it’s the adult version), Chocolate Mint Nanaimo BarsGnudi also known as Malfatti, and others. Another one to add to this list is my Grasshopper Pie!
 
This is a favorite of ours!
Made with a lovely cream cheese filling in a nice chocolate graham crust 🍫, this sumptuous minty pie is so delicious plus it’s very easy to make. It has a beautiful flavor profile from the Crème de Menthe and the Crème de Cacao.
 
The first thing that has to be done before starting the filling is the pie crust. I use my Chocolate Honey Graham Crust recipe for this application. After pressing the mixture into a springform pie plate, it’s baked for 3 minutes ⏳ at 350ºF, cooled completely before chilling until needed.
 
Let’s talk about the filling…
Many recipes out there are made with marshmallow, mine is made with cream cheese! There are no health benefits in these cylindrical guys as they’re mostly sugar… nothing else. At least, the cheese 🧀 has some vitamin A in it!
 
Yes, there’s alcohol in this Grasshopper Pie!
I use both green Crème de Menthe and white Crème de Cacao. Can you make it without these? I guess you can 🤔 but I never tried it. You’ll have to play with mint or peppermint extract by starting with 1 teaspoon and add more to your liking.
 
When the filling is done, whipped cream is gently folded into the mixture. I use about 1 ½ cups of it. You can buy 🛒 a good brand from the store or simply make it from scratch. Here’s the link for my homemade recipe… Perfect Whipped Cream Every Time – How to
 
After spooning the filling into the prepared pie crust, spreading it out evenly with a spatula, it has to be chilled for 3 hours ⏰ or until it sets. It’s easy peasy and doesn’t need to be frozen. If it’s left in the fridge longer, cover loosely with foil – the same applies for the leftovers which can be kept for up to 5 days.
 
I don’t decorate the pie because I find it sweet enough. However, you can add a tablespoon or two of the Chocolate Honey Graham Cracker Pie Crust, some whipped cream, chocolate curls or even green sanding sugar on top… Have fun with your pie 👩‍🍳!
 
This Grasshopper Pie is a scrumptious dessert to make anytime or when celebrating St. Patricks’ Day 🍀! Refreshing, this is a lovely way to end a meal. If you want to try it in liquid form, here’s an amazing cocktail… Chocolate Grasshopper Martini!

Oven Roasted Duck Recipe • Juicy and Delectable! | Club Foody

 

We eat a lot of chicken at home… it’s one of our favorite proteins. Of course, we like turkey too but reserve it for Thanksgiving or the Holidays 🎄. Another poultry that we enjoy maybe once or twice a year at the most is duck!
 
It’s not like I don’t love duck… au contraire, I do 💖! For some unknown reason, I don’t cook that often with it. I normally like serving it for special occasions. All together, I might have slightly over a dozen recipes in my repertoire with 5 of them already on the website.
 
Let’s add another one… my Oven Roasted Duck!
This straightforward recipe gives amazing results! Roasted in the oven until the internal temperature reaches 165ºF, you’ll end up with juicy and tender meat! It’s not complicated and perfect to serve at your next dinner party or for any special occasion 🥳…
 
After rinsing the bird under cold water 💦 and patting it dry, you might want to pluck any pinfeathers off using tweezers. Recently, I came across an article saying that there’s an easier way to remove them. The duck is quickly dipped in hot paraffin, left to dry for 15 minutes and then peel it off. I’m sure it works like a charm but I prefer keeping my paraffin for my personal use.
 
Another thing that also has to be done is to cut off the excess skin from the neck. It can be either discarded or make 👩‍🍳👨‍🍳 cracklings with it. If you opt for the second option, here’s how to do it…

– Cut the skin into equal pieces and drop them into a heavy-bottomed saucepan along with a splash of water so they don’t stick to the bottom.
– Slowly render the fat over medium-low heat for about 50 minutes to 1 hour ⏰ or until the skin pieces are crisp and have released all their fat, stirring occasionally.
– Strain the fat into a heatproof container such as a mason jar through a fine sieve lined with cheesecloth. After it’s cooled, transfer to the fridge for other recipes like Duck Fat Roasted Potatoes or make the best French fries ever 🍟!
– Season cracklings with salt and other spices such as dried rosemary, za’atar, etc., toss and put them on a plate lined with paper towels; allow to cool and crisp. They can be enjoyed as is or a topping for salads 🥗.
 
After stuffing the poultry, another step to do is to prick the skin with either a sharp pointy knife or a sausage pricker which makes this task go super-fast. Make sure not to pierce the meat. If you want to be fancy, you can make a diamond pattern with a sharp knife 🔪.

To cook a whole duck 🦆, it’s about 30 minutes per pound or until the internal temperature reaches between 165ºF to 170ºF. I like placing a piece of foil on top for 45 minutes and remove it so the skin can crisp up.
 
As much as we enjoy chicken 🐓, it’s nice to switch it up to something else and step out from the routine. This easy Oven Roasted Duck is an amazing option! It can be served with mashed potatoes and veggies along with a sauce such as Raspberry Port Sauce. If there’s leftovers, I like making my Duck Ragù which is coming on November 13th…

Whipped Feta Cream Cheese Dip Recipe • 5 Minute Recipe | Club Foody

 

Unless I’m somewhere down south where the weather is warm, January and February are the two months when I don’t really have the desire to have people over. I want comfort food 🍲, casseroles, pasta dishes and stews while wearing my big turtleneck sweaters, comfy pants along with my big slippers.
 
When we move on to March, that’s a different story. Like a bear, I slowly come out from my cave! I feel like entertaining again and having dinner parties. I want our friends and family over, make nice dishes, serve beautiful wines 🍷 and enjoy my time with them!
 
I always have a minimum of a 3-course menu: appetizer, main and dessert 🍰. I also like serving something to nibble on before dinner like bouchées aka bocas, amuse-gueule, hors d’oeuvres, and canapés. It can be Korean MeatballsOlive TapenadeCroquetasGougèresCrab Stuffed Mushrooms, and more.
 
Another “snacky” food 🥨 that falls into this category is dip! I think of Spinach ArtichokeBeer CheeseSix Layer Chip DipPumpernickel, etc. Here’s another one to add to this list… my Whipped Feta Cream Cheese Dip!
 
This is an amazing recipe to have on hand! Creamy with layers of flavor, this dip is a crowd pleaser! Not only is it incredibly yummy but also a breeze to make. Within 5 minutes ⏰, you’ve got yourself a nice dip… you can’t beat that!
 
Making Whipped Feta Cream Cheese Dip is so simple. The two cheeses along with garlic 🧄, Greek seasoning, lemon zest and juice, plus red pepper flakes are mixed together in a food processor. When it’s somewhat blended, extra-virgin olive oil is poured into the mixture. Processing takes maybe 2 to 3 minutes!
 
From there, it’s spooned into a serving bowl, spread out 🥄 evenly before creating some little swirls for the agave nectar or honey to pool in. For the finishing touch, finely chopped roasted red peppers and pistachios are sprinkled on top… tada!!!
 
Some might like adding red pepper flakes on top… I don’t! I prefer adding the spice in the mixture so it blends properly with the rest of the ingredients. That way, it’s evenly distributed and no ones end up with a bite of “hot” 🔥 while the other person has none.
 
Agave nectar vs honey 🍯…
We prefer agave over honey for one simple reason; it’s more neutral and less sweet than its counterpart making it friendly for those with diabetes. Also, I like its hint of caramel. On the other hand, honey is healthier 💚 because it’s primarily made up with fructose instead of glucose so it’s up to you which one to use!
 
Roasted red peppers and pistachios are sprinkled on top as finishing ingredients. Depending on the occasion or the time of year when serving it, you might want to switch for other toppings. Like during the Holidays 🎄, I like using chopped dried cranberries.
 
Served with crostini, pita chips, crackers or vegetables 🥕🥬, this Whipped Feta Cream Cheese Dip is a mouthwatering snack to make at your next dinner party! In 5 minutes, you have a delectable dip that everyone will enjoy!

Shrimp Fra Diavolo Recipe • Spicy & Flavorful! | Club Foody

 

In 2001, I went for a few trips to New York 🗽. It was mostly for business mixed with a little pleasure. I was planning an event for an art gallery. The owner’s secretary was helping me tremendously with all the details. He and I connected so well. We always had fun together!
 
When the day was over, most of the time, we either ended up going out for dinner, went clubbing 💃, or attended some private parties. One time, he took me to this amazing restaurant called Tony’s di Napoli located on the Upper East Side. This is where I had my first Shrimp Fra Diavolo!
 
OMG 🤯!
This lovely spicy sauce is incredible! Made with tomatoes, white wine and seasonings such as red pepper flakes, Italian seasoning, smoked paprika (not traditional but it gives a gorgeous taste to the sauce), lemon zest 🍋 and parsley, this is a great recipe to make anytime! It takes 30 minutes to make… bonus!
 
When making Shrimp Fra Diavolo, I stick to the classic way using that protein. On the other hand, you can use clams, lobster 🦞 or mussels as well as chicken… why not! The same when it comes to white wine… switch to red or even better, add a splash of sherry!
 
Let’s talk about leaving the tails 🍤 on the shrimp/prawns…
When eating them by themselves, yes, it does make a nice presentation. It also makes sense to grab the tail while eating them like when having shrimp cocktail. Now, when they’re cooked in a sauce or soup and people leave the tails on, I find it annoying!!! The last thing I want to do is to put my fingers to my mouth 👄 to retrieve the tails SO please, remove them!
 
Spice up your life by making this flavorful Shrimp Fra Diavolo! A bit zippy but not overly, this is another delicious 30-minute ⏳ recipe to add to your repertoire! It can be served over linguine or spaghetti!
