Mulled Cider Recipe - Slow Cooker • A Festive Holiday Drink | Club Foody

Everyone is different… some enjoy cold months while others prefer warm, hot months. David and I have a hard time coping with the cold and when we can, we take off to nice, warm tropical destinations. I don’t know if we are getting “soft” as we are getting older but it seems harder to deal with the cold year after year…
 
I cook and bake a lot during the cold months. The oven works full-time, keeping the house warm along with the nice aromas floating around. I also like to make hot beverages such as my Indian Masala Chai, Hot Cocoa and this lovely one… my Mulled Cider made in a Slow Cooker!
 
I love to make this tasty beverage. The flavor is so delicate and fragrant. To me this is one of the best beverages associated with the Holiday season! David and I enjoy sitting by the fireplace and slowly sipping this warm drink with Christmas Carols playing in the background.
 
Some might add a shot (or two) of spiced rum or even vodka to it. I’m fine the way it is. There’s already apple cider and a whole bottle of dry red wine in it… I think it’s more than enough! Also I don’t want to ruin the subtle background flavors from the spices… yummy!
 
When it comes to cook it up… You can set up your crock pot on Low for 4 hours or High for 2 hours. You can also place all the ingredients in a large pot and gently simmer on the stove top on medium-low heat for 25 to 30 minutes.
 
This Mulled Cider is perfect to enjoy during the cold winter months. Slowly cooked in the crockpot, the mixology is absolutely divine; not too spicy, not too strong… just enough to keep you warm and cozy all winter long…

Turkey Chili Tex-Mex Style Recipe • Great Dish for Leftovers! | Club Foody

I don’t care how good you are with judging the size of the turkey you need to buy for the amount of people coming over for dinner, there’s always more leftovers than anticipated. Perhaps uncle Bob started drinking your eggnog mixed with rum too early while your girlfriend Sue already had too many glasses of Chardonnay before dinner which means both won’t be eating as much. Maybe one of your grandchildren got chicken pox therefore your daughter’s family won’t be able to attend. Things like that happen… c’est la vie!
 
Year after year I don’t mind being left with a ton of turkey meat because after reheating it for a couple meals with the leftover gravy, leftover stuffing and all the other leftover side dishes, I reuse the meat for other recipes.
 
In the past 3 years, I’ve shared some of my recipes for leftover turkey meat like my Turkey TetrazziniTurkey à la KingTurkey (or chicken) Pot PieTurkey Noodle Soup, just to name a few plus many more to come in the future. Today is one the whole family will enjoy… my Turkey Chili Tex-Mex Style!

Asian Cucumber Salmon Rolls Recipe • Tasty Appetizer! | Club Foody

Entertaining can be quite stressful! We have to plan the menu and when we know what we’ll be serving then we need wines to pair with it. There are also other little details we have to look after such as music, flowers, etc.
 
For our menu, appetizers play an important part because they set the tone for our dinner. Depending on how formal it will be, bouchés, canapés or even hors d’oeuvres might be served before sitting down at the dining table. These can also turn into an appetizer just like this one… my Asian Cucumber Salmon Rolls!
 
This is one of my go-to recipes. They are quick and very easy to make. These little guys are fresh and light, perfect to serve for any occasion. I use a mix of Asian ingredients which gives a tasty flare to this dish, making it slightly “zippy”.
 
I also use another great Asian ingredient… pickled ginger. A few months ago, I shared how to make this delicious condiment without using any commercial food coloring which to me, is the best way to go.
 
The key to these Asian Cucumber Salmon Rolls is to have everything thinly sliced! The use of a mandolin is necessary for making this recipe. Depending on the size of your cuke and how thick you slice it, you should get between 8 to 10 slices per quarter section. The ingredient amounts and how many you’ll end up with is not set in stone… it might vary.
 
I like to serve these hors d’oeuvres all year round including the Holidays. They make a beautiful presentation and are so flavorful. Don’t stress yourself trying to figure out what to make as an hors d’oeuvre and serve these amazing Asian Cucumber Salmon Rolls…

Coq au Vin Recipe • Deliciously Elegant French Dish! | Club Foody

I’m a traditional lady and when December arrives, I love playing Christmas carols, decorating, cooking and baking our favorite holiday foods, entertaining our family and friends, wrapping presents, etc.
 
Of course, when it comes to the menu, I can’t resist serving my Holiday Turkey along with Old Fashioned StuffingSquash à la CanadienneGravyCitrus Cranberry SauceBrussels Sprouts with Bacon and OnionsMixed Mashed PotatoesDinner Rolls as well as all the lovely desserts such as Fruit Cake or Cranberry Orange Bundt Cake and other sweet treats.
 
Often though, I like to break that “turkey” routine and make something else, a dish that is easy to make, delicious and elegant to serve on special occasions. In the past, I’ve served many Holiday dinners with Beef Wellington, Chateaubriand as well as this featured recipe… my Coq au Vin!
 
If someone would ask me to describe this classic French dish, I would say that it’s the poultry version of a Boeuf Bourguignon (Beef Bourguignon). The translation of “coq” means rooster or cock with wine but I never use that kind of protein. Instead I use boneless skinless chicken thighs, which are very flavorful.
 
Alcohol is used in this recipe. After braising the chicken thighs, cognac (or brandy) is poured on and then lit to flambé the protein. It gives a certain “je ne sais quoi” to the dish. Wine is also used in the making of Coq au Vin. I prefer using a Burgundy but nothing stops you from using other wines such as Beaujolais nouveau, Merlot, Pinot Noir, or even Sangiovese or Riesling… Interestingly enough, some chefs use dry white wine instead so either works, it’s your call.
 
Served with mashed potatoes along with a French baguette, this is a lovely dish that is incredibly tasty. It might have many steps but that’s what makes it so incredibly delicious! If you are looking to make something different and surprise your guests with a scrumptious dish, this Coq au Vin is a fabulous choice…

Tarte au Sucre - Sugar Pie Recipe • A Québec Favorite! | Club Foody

When we look back at our childhood, we remember certain events, trips, birthdays, favorite toys, our little friends, a favorite piece of cloth, a pet, family members and also food. I can recall when I was coming back home after school and smelling the aroma of food simmering on the stove top or a pie baking in the oven… these are great memories (it’s a cooking website, of course I’ll be talking about food… lol!)
 
Since I was little, there are a couple of pies that I’ve always loved; Lemon Meringue and this featured one… Tarte au Sucre or Sugar Pie in English! I know… both are on the other hand of the spectrum; sour and sweet! I guess I was destined to become a foody at one point in my life.
 
This dessert is incredibly… SWEET! If I could find a comparable dessert, I’d say it resembles a pecan pie… well kind of. They both have similar ingredients and yet, their tastes are different. I think that this Tarte au Sucre is sweeter than the other… really, I’m not kidding!
 
Sugar Pie is quite popular in Québec especially during the Holidays and in March when it’s time to harvest maple syrup. This dessert is uncomplicated. It takes a few minutes to assemble and even faster if you’re using a prepared pie crust like I did in the video. I still prefer making my Foolproof Pie Dough!
 
This Tarte au Sucre • Sugar Pie is a Québec traditional dessert although it’s also popular in Europe and the Midwestern United States. It can be served warm or chilled. My preference is to have it with a scoop of vanilla ice cream… now that’s definitely a delicious way to indulge yourself!

Oven Baked Bacon • Best Way to Cook Bacon - Tips & Tricks | Club Foody

On the weekend, David and I like taking the time to enjoy a nice breakfast together. Many times, we’ll have eggs with fruits, croissants or bagels along with bacon. I love bacon for its flavor and also versatility as I use it in many recipes such as Creamy Bacon Potato SaladOld Fashioned Baked Beans with BaconBacon Wedge SaladPerfect Poutine with Bacon GravyCorn Chowder, etc. and even in dessert like my Maple Bacon Cupcakes coming this spring.
 
Bacon is great but can be quite messy when cooking unless you use my method… Oven Baked Bacon! I love making it this way because by the time the bacon is cooked, not only is my oven clean but so is my pan plus I can collect the fat at the bottom for other uses. Another plus using my method is the bacon slices come out nice and flat versus wrinkly and half their size… exactly like the picture in this particular blog.
 
I know I don’t say it all and I won’t spill the beans. C’mon, it’s a video for a kitchen tips and tricks so if you want to find out what I do with my Oven Baked Bacon, you’ll have no choice but to watch it. One thing I can guarantee you bacon lovers is you’ll be ditching your old way of cooking it and switch to this one unless you like to clean up your oven or stove top and enjoy doing more dishes…

Eggs Benedict Recipe • Elegant & Delicious! | Club Foody

Hey my friends… guess what? I’m getting better when it comes to eating breakfast! Not every morning but a few times a week now, I enjoy some food in the morning… not just coffee. It’s not like I never liked breakfast… au contraire! I LOVE it but seemed like I never found the time to eat – okay, perhaps too much coffee instead!
 
As I’m getting better at having the most important meal of the day, of course I want my favorite foods which include granolasoft boiled eggsquiche, and so on. One breakfast/brunch dish that I really, really enjoy is Eggs Benedict!
 
Oh my! With cooked Canadian back bacon (or Black Forest Ham, lobster, smoked salmon, etc.) on top of toasted English muffins followed by perfect poached eggs and for the final touch… topped with a beautiful Hollandaise Sauce and a light sprinkle of paprika… C’mon, it can’t get better than that!
 
Eggs Benedict is simple to make and I’m always puzzled when people don’t want to make them at home. I think the idea of making the Hollandaise Sauce terrifies some home cooks but they shouldn’t be because when they know the technics of making it, the rest is just a breeze.
 
With the Holidays around the corner, I’m sure some of your family members and even friends might end up staying overnight. What a great and elegant breakfast to serve them. I’m not reinventing the wheel on how to make them but I do have my way of making these lovely Eggs Benedict and it might become yours as well…

Potato Latkes Recipe • Traditional Hanukkah Dish! | Club Foody

To me December is a month for traditions. Most countries around the world celebrate their culture with music, food, decorations and events. In the Hebrew culture, there’s a popular Jewish holiday that takes place called Hanukkah also known as the Festival of Lights!
 
Like many cultures, there are special events occurring during Hanukkah like lighting the candles of a menorah. Besides playing the game of dreidel, there are certain foods made for the occasion like sufganiyot (jelly doughnuts), bimuelos (fritters) and my favorite… Potato Latkes!
 
These potato pancakes are incredibly tasty! They have such a great flavor and pair so well with apple sauce, crème fraiche or sour cream. I also like to serve these potato latkes along with smoked salmon and dill or even salmon roe… absolutely amazing!
 
They are made with matzo meal with onions and typically fried in chicken schmaltz which is rendered chicken fat. I’m sure I can get this ingredient somewhere in my neighborhood but I’ve been frying mine in oil with duck fat for as long as I can remember… Another important thing for this recipe is the potatoes. I only use russets because they are high in starch. As we need a crispy texture, baking potatoes have a dry, mealy flesh perfect for this dish.
 
When it comes to kitchen tools, I use my food processor instead of a box grater. It’s faster and much easier than doing it by hand. When I process the potatoes, I like to alternate with pieces of onion. The juice from the onion will prevent the potatoes from browning. To portion them out the same size so they can cook equally, I use a 1/4 cup measuring cup and then flatten them down to about 1/2-inch thick. When it’s time to fry the latkes, I use a cast iron pan because they retain the heat and distribute it evenly.
 
This season go ahead and try something new from another culture with these Potato Latkes. You’ll be surprised how flavorful they are and I’m positive they will become a “new” family Holiday tradition…
