Pepper Jack Cheese Sticks Recipe • Awesome Finger Food! | Club Foody

Are you a football fan? If the answer is “yes’, I don’t need to remind you that the Super Bowl is this coming weekend. Obviously, you already knew that and started planning your house party…
 
There are a couple of big screen TVs’ around, a betting board in your living room, a cooler (or two) packed with beers on ice, all the hard liquor is out and bottles of red on the kitchen counter breathing while whites are chilling in the wine fridge. You’re prepared and ready to entertain your friends for this important sporting event.
 
Year after year I’ve posted a few recipes that are perfect for the occasion. Today there’s another fun finger food to add to the list… my Pepper Jack Cheese Sticks! I’m sure many of you have had mozzarella sticks in a pub before. Without reinventing the wheel, the only difference is I’m changing the type of cheese! I personally always found them to be slightly on the boring side but now with Pepper Jack cheese, it’s a different story.
 
I serve these Pepper Jack Cheese Sticks traditionally just like everyone does… with Marinara Sauce, obviously using my homemade recipe. There are some of you who prefer dipping them in RanchChipotle Mayo or even Blue Cheese Dressing… it’s your call! David likes these with Spicy Red Pepper Jelly
 
As I said, you are prepared for the event but adding these tasty Pepper Jack Cheese Sticks to your party menu will surely be a… touch down!

Ethiopian Red Pepper Sauce Recipe • Perfect for Wing Night! | Club Foody

When I started feeling more comfortable in the kitchen, one thing I was making a lot of was sauces. I had a sauce for this and this and that. Actually sauces have saved my dishes many times making them more… how can I put it… edible. What can I say – I was young, inexperienced and lacking confidence and my dishes reflected it. There’s one thing you need when it comes to cooking and it’s a “I believe in myself” attitude!
 
Since then I’ve obviously evolved and the kitchen has become my sanctuary. When it comes to creating sauces, you can bet I’m not afraid to mix ingredients together to make something different and interesting like my Ethiopian Red Pepper Sauce!
 
Similar to sweet & sour but with a tastier twist, this Ethiopian Red Pepper Sauce is so flavorful! This is probably my easiest and fastest sauce recipe of all although I do have many that are also quite simple to make such as my BuffaloTeriyakiTriple ChiliMango Chipotle, and more.
 
This sauce recipe requires only 3 ingredients; spicy red pepper jelly, orange juice and berbere. Berbe… what? It’s actually an amazing spice blend that originated in Ethiopia. It is so tasty and definitely an addition you need to add to your pantry. If you cannot find it at your grocery store, you can always substitute cayenne pepper BUT it doesn’t have the depth of flavor or complexity that makes berbere spice so unique and tasty!
 
I like this sauce for its versatility. It can be poured on chicken wings or brushed over pork chops, lamb, etc. Next time you want a beautiful combination of flavors, try this Ethiopian Red Pepper Sauce… you’ll be surprised by the amazing results just 3 ingredients can give.

Pasta Sauce Recipe • Perfect for many Pasta Dishes! | Club Foody

A great pasta sauce is a must in everyone’s kitchen. I’ve been making an adaptation of my mother’s for decades until I met my husband. Interestingly enough, David never had the chance to taste it because we’ve been making our own version.
 
When David and I moved in together, we modified and created a few recipes, each adding our own special touch so we can call them “ours” not “his” or “hers”. This is exactly what we did one afternoon with “our” Pasta Sauce
 
Ours is very good but we cheat a little. I buy a very good brand of pasta sauce called Prego (no I’m not sponsored by that company) and from there, I add more ingredients. Depending on the recipe I’ll be using it in, the sauce can be meatless. I use it for both my Meat Manicotti and my Meat Lasagna.
 
In the past I posted my Bolognese Sauce that is very tasty and much faster than this featured recipe. Like this one, I cut corners a little by adding a prepared sauce. There’s another pasta sauce that will be coming up in 2022 and it’s my Ragù which I love serving with Pappardelle. This one takes much longer to make because there’s no cheating (prepared sauce) and it has to cook for hours.
 
With all the herbs, spices and ingredients added to it, this sauce is very flavorful and also quite convenient. As I mentioned, you can easily adapt it depending on what you’ll be using it for. After you try it, this can easily become your go-to Pasta Sauce recipe…

Indoor S'mores Recipe • A 12 month Summer Treat! | Club Foody

Depending on where we’re from, there might be certain popular foods that we’ve never had the chance to taste. Although my parents were both great cooks and made us a wide variety of dishes from different parts of the world (that is where I got my culinary curiosity from), there were still a lot that I enjoyed after I moved out on my own.
 
When I met David 11 years ago, we made dishes for each other that the other never had before. I made many dishes for him from the Middle EastAfrica and Asia while he made me discover many from Germany. There’s one though that he couldn’t believe I never tried before and when he finally made some, I was hooked! It was S’mores!
 
We were vacationing in the Palm Springs area during the fall and got all the ingredients to make them. The only downside was we weren’t near a campfire so instead he made them in the oven. When we returned to Canada, we continued making them the same way (as it was too cold to make them outside) which is what this recipe is all about; Indoor S’mores!
 
I’m sure most of you have had them before but for those of you like me, who never tasted any, you’re in for a treat. There’s a large marshmallow placed on top of a dark chocolate square sitting between two graham cracker cookies. This treat is heated up over a fire pit – or in our case today… the oven – until the chocolate melts and the marshmallow becomes gooey. Simple and yet so yummy!
 
The beauty of this Indoor S’mores recipe is that this scrumptious treat can be enjoyed all year round. It’s easy to make, ready in 5 minutes and there’s no campfire required… just an oven. Everyone who lives above the 49th parallel can now enjoy them just as often as the lucky ones who live below it…
 
David and I have a fire pit on our outdoor patio but no campfire so the next best thing is to make these Indoor S’mores. So just like us, you can now enjoy them 12 months a year versus 5 or 6… yeah!

Oven Baked Chicken • Easy Delicious Results! - Tips & Tricks | Club Foody

David and I like different kinds of protein but there’s one that we eat more than others and it’s chicken. This is probably the most popular meat around the world because it can be prepared in so many ways. I have tons of chicken recipes like Cognac Chicken Liver PâtéNorth African Chicken Thighs with Dates & PomegranateOld Fashioned Stuffing with GibletsChicken Drumettes and Wings, etc.
 
Although my repertoire is quite wide, many times we enjoy simple grilled chicken breasts that we serve along with a salad or other side dishes. During the summer time, we fire up the barbecue and grill it that way but during the winter months, few of us like to venture outside when it’s wet and cold… yes, we’ve become “softies” with age. Instead, what I like to do is to use this method… the oven!
 
In my opinion, Oven Baked Chicken is the next best thing to the barbie. You can always fry or sauté the chicken but if you want it grilled, this is the easiest way to achieve great results. It always comes out perfectly cooked and nice and juicy inside. Another factor why this is my preferred cooking method when I have to grill it inside is it’s not messy. I have no pan or stove top to clean… now that’s a big bonus!
 
There’s not really a strict recipe for Oven Baked Chicken. You can use the spices and herbs of your choice. A little bit of this and a little bit of that goes a long way. The only ingredient that you have to add is olive oil, enough to coat the breast well. Then again, you can also use other preferred oils like canola, grapeseed, or others. Make sure though that the oil’s smoke point is high enough for 400ºF. If you need more info about oils, click on this link… Know Your Oils and Their Smoke Points.
 
Grilling chicken breasts on the barbecue is great but if you don’t own one or are in the middle of the winter, Oven Baked Chicken is the next best thing! No mess, juicy and perfectly cooked every time… what else is there to ask for?

Duck Fat Roasted Potatoes Recipe • Great Tasty Side Dish! | Club Foody

Side dishes are a great accompaniment for proteins. They can be rice, breadsaladvegetables or even pasta.
 
When it comes to vegetables, one of the most popular ones here in North American are potatoes. They can be mashed, boiled, bakedfried, sautéed or barbecued.
 
There’s a dish that I simply have to make when there’s some duck fat around… my Duck Fat Roasted Potatoes! Oh my, oh my! These potatoes are absolutely incredible! They are rich in flavor and an awesome side dish to serve along with hamroast beef or pork, grilled chicken, etc.
 
What makes these potatoes so delicious is obviously the duck fat. When I cook Duck Breasts, I collect the fat from the pan. It would be a “sin” to throw it away because it’s loaded with flavor. Nowadays, duck fat can also be purchased at some grocery or specialty stores.
 
Besides using it for Duck Fat Roasted Potatoes, it can be utilized in other recipes. Combined with other fats, duck fat is awesome when frying food like Potato Latkes. Last week in my kitchen tips & tricks, I showed you how I do my Oven Baked Chicken. Instead of oil, add duck fat for extra flavor or use it to sauté ingredients or vegetables like MushroomsBroccolini, etc. When cooking a filet mignon in a cast iron pan, baste the meat with duck fat instead of butter or replace oil with it when making your Mayo or salad dressing, even in baking. As you can see, the use of it is almost unlimited!
 
As much as I use it for other recipes, this Duck Fat Roasted Potatoes dish is amazing! The potatoes are crispy with an incredible savory flavor. It is a succulent way to bring your roasted potatoes up a few notches… trust me on that!
 
After you’ve either saved duck fat or bought it and started cooking with it, you’ll realize how much incredible flavor it brings to your dishes like this Duck Fat Roasted Potatoes. This tasty side dish will wrap up your main course deliciously!

Southwest Beef Casserole Recipe • Tasty Comfort Food! | Club Foody

Casseroles are always fun to make and are a great comfort food that families really enjoy. There’s nothing fancy about them but are they ever tasty! These are yummy weeknight meals that home cooks enjoy making. I like them and who doesn’t?
 
I have a few that I’ve shared with you in the past like my Frankie’s MacaroniMediterranean EggplantTurkey Tetrazzini, just to name a few. Today I’m adding another one to the list… my Southwest Beef Casserole!
 
With a beautiful mix of ingredients, this is a dish that everyone in your family will love. I’m telling you, this Southwest Beef Casserole is packed with flavor! It has just enough zip to make it deliciously interesting but not too much so it appeals to everyone.
 
I like to use egg noodles for this dish but if you prefer using rigatoni or even penne, go ahead… they’re both a great substitute. As I often say, recipes are great because you can always modify them with other ingredients to suit you and your family’s taste. In the past, I’ve used a mix of ground pork and beef together. The combination was spot on and it’s a great way to use up your ground pork as well.
 
Next time you want to try another easy and flavorful dish, this Southwest Beef Casserole is exactly what you need. It’s not extravagant but definitely a great meal to make anytime on a cold winter night. This is comfort food at its best!
