Stuffed Peppers Recipe • Tasty Beef & Italian Sausage Dish! | Club Foody

 


At the end of August when I slowly start to harvest my garden, I like to make my “annual” favorites like Pesto, Mint Jelly, Tomato Soup, Basil Lemon ButterGarden Vegetable Juice, as well as Minestrone SoupSweet & Savory Homemade KetchupBread & Butter PicklesTomato Rosemary FocacciaVegetable MedleyLemon Rosemary Madeleines, and many others including this one… Stuffed Peppers!

 
This is an incredible dish but first let me be frank here! My mother made some, my aunts and grandmothers made some, I had some at friends’ place and it was “BLAH”. The stuffing mixture was boring, nothing to appeal to my taste buds. One day, I told my husband that we should try make some. He had the same reaction as me… – Really? It’s so boring! My answer to him was –“Exactly! That’s my point! Let’s revive and improve the dish…
 
These Stuffed Peppers are far from being boring! The combination of ingredients blends so well together. I use two kinds of meat; ground beef and ground hot Italian sausage. Just these added meats alone make it better but I didn’t stop there, no, no, no! I also add fire roasted diced tomatoes plus a bunch of fresh herbs, seasonings and a couple of different cheeses.
 
There’s another ingredient that I make during this time of year and it’s my Classic Marinara Sauce. This sauce is incredibly delicious and that is what I use to spread at the bottom of my dish and later to spoon over my cooked Stuffed Peppers. Coconut Cream Pie Recipe • Absolutely Delectable! | Club Foody

Have you ever wondered sometimes why you didn’t try a particular dish or cook a certain recipe sooner? As much as I like to consider myself as a “foody”, there was a few times I don’t understand why I never made a dish or tasted a dessert earlier in my life. I know, we’re creatures of habit but still why wait so long to try them…
 
That is exactly what happened with this Coconut Cream Pie featured recipe! I saw it I don’t know how many times on menus or when going to a diner and seeing it as soon as I walked in, in one of those “dessert display” cabinets along with cakescheesecakestartsmousses, etc. The reason why I finally decided to make it is because of my mother…
 
One day while my mother and I were on the phone, she mentioned the Coconut Cream Pie she just bought at the grocery store. As much as she was an amazing baker, at her age she doesn’t bake very often anymore. That is when I realized I never had this dessert before. After I hung up, I told my boyfriend (now husband) that I’ll be making this sweet dessert in the next couple of days. He laughed knowing that I had no idea what it tastes like. With his assistance, we figured out a recipe – keep in mind that I never ever had a bite of it in my entire life. By the time it was done, this “unknown” pie became one of my favorites.
 
To satisfy my curiosity, the next time we were dining out and saw this dessert on the menu, I ordered it just to compare it to mine… all right “ours”. Well let me tell you that “ours” is absolutely delicious and I’m glad that I relied on David’s taste buds to create this recipe!
 
Like any of my other pies, I always use my Foolproof Pie Dough recipe. It’s very easy to make and the results are incredible; flaky and tasty! Something I learned from making my Coconut Cream Pie is to not procrastinate. Grilled Brie, Ham & Pear Sandwich Recipe • Original & Tasty! | Club Foody

 

Although I enjoy cooking a lot and do even more because of Club Foody, I allow myself to be lazy here and there. That’s right! All home cooks deserve a break and I sure do. When these lethargic days happen, I still want to enjoy a beautiful meal with flavor but without all the hustle and bustle. What comes to mind is a sandwich…

 
I’ve posted many amazing sandwich recipes like my Mexican Chicken SubFrench Dip with au JusCroque-monsieur Montréal Style, and more just to name a few. Here’s another great recipe I’m sure you’ll enjoy… my Grilled Brie, Ham & Pear Sandwich!
 
Wow! This is a mouthwatering meal! The combination of ingredients not only gives uniqueness but also a burst of flavor in your mouth! I know… pear in a sandwich is not typical but I’m telling you, this sandwich will blow your mind! To make it even more savory, I use an ingredient that subtly makes this Brie, Ham & Pear Sandwich recipe even more interesting… my Pomegranate Molasses! Without taking center stage, it still wraps everything up so deliciously!
 
To clean up my pear, I use a melon baller aka called a Parisienne scoop. I love this little kitchen tool! Besides scooping the flesh from fruit or making small ice cream scoops, there are many other great uses for it. Here are a few ideas you might want to take this little guy out of your drawer for.
– Coring pears, quince and apples
– Removing the seeds from tomatoes or hollowing out produce when stuffing mushrooms, cucumbers, winter squash, watermelon, etc.
– Stuffing cupcakes
– Cleaning up a pineapple by removing those brown spots/eyes a bit easier
– Hulling strawberries
– Removing strands from artichokes
– Pitting fruits such as peaches, apricots, nectarines, and plums
– Shaping truffles by scooping chocolate ganache
– Carving pumpkins
– Evenly portioning mini meatballs for your next soirée or making cookies for your kids
 
This summer you don’t have to sweat bullets to make a scrumptious meal. In less than 15 minutes, you can have an incredible mouthwatering meal ready to be enjoyed. White Omelet Recipe • Light & Healthy! | Club Foody

I'm the type of person who dislikes throwing food in the garbage. At the prices we pay, I like to salvage as much as I can by using it in other recipes or creating new dishes. A perfect example is eggs. 

How many times does a recipe call for egg yolks only. No problem but what to do with the egg whites? If you use them for another recipe, great otherwise they can be frozen for up to 2 1/2 months or kept in the refrigerator for 2 days. There's a healthy breakfast dish that I like to use them in and it's when I make my White Omelet
 
I love making this breakfast item. It’s light, fluffy and there’s no wasting food. I also use up my leftover veggies… you know when there’s only 1 or 2 green onions in the crisper, half a tomato sitting upside down on a plate, an eighth of a bell pepper in the keeper, and so on. There’s nothing wrong being frugal with your money and this White Omelet recipe is a good one to salvage the egg whites as well as other veggies sitting in your refrigerator. With a little seasoning, salt and pepper, some grated cheese of your choice, you’ve got yourself a delicious healthy breakfast made with leftovers… awesome isn’t it?

Beets • Prep & 4 Ways to Cook - Tips & Tricks | Club Foody

 

I’ve enjoyed vegetables and fruits ever since childhood. While other kids were being difficult and not eating their veggies, I was the opposite. One of my all time favorites is beets! I love their taste, color and versatility. I have so many recipes for beets; Pickled Beets, Red Velvet Boost, Warm Beet Salad, Orange Glazed Beets, Borscht, and many more including my 4 Natural Food Colorings

 
Depending on the recipe, there are a few different cooking methods to use. Beets • Prep & 4 Ways to Cook shows you not only how to cut this vegetable but also a few cooking options to choose from. I enjoy all of them but if I want to use them in a salad, I’ll be using a different cooking method than if I want to simply serve them as a side dish.
 
In this Beets • Prep & 4 Ways to Cook, I talk about the beet greens. Please, pretty please, I’m begging you, don’t throw them away. They are so nutritious!They taste similar to Swiss Chard and can be used in pasta, salads, stews, soups or simply sautéed with onions, garlic, lemon juice, etc. I’ll show you how to store them properly so they can be kept for 2 to 4 days in the refrigerator.
 
Talking about storage, I mention a few ways to keep your beets longer. When wrapped properly, they can last a couple of weeks in your fridge. On the other hand, with all the cooking methods shown in this video, you can make them ahead and either place them in the fridge for up to a week or freeze them for 2 1/2 months.

Fire Roasted Salsa Recipe • Smoky & Savory Condiment! | Club Foody

 

Unless the weather is horrible with tropical storms, cold temperatures and tornadoes, I mentally, emotionally and physically (more so than ever with my “hot flashes”) refuse to cook inside or as little as possible.

 
What’s awesome on the BBQ during the summer time? Hamburgershot dogs, grilled steak & chickenkebabs, and so on as well as vegetables and desserts! When it comes to veggies, there’s a recipe I can’t resist making every year and it’s my Fire Roasted Salsa! Simply incredible! It’s a beautiful mix of fresh ingredients, herbs and spices. The smoky flavor from roasting the vegetables on the barbecue gives that little extra “oomph” which makes this Mexican condiment so tasty…
 
When I make my Fire Roasted Salsa, I like to chill it for a few hours. It gives it some time for the flavors to blend together. If time is not an option and you want to serve it right away, the salsa will still taste awesome but try to let it rest a little even if it’s only for half an hour.
 
There’s something that I forgot to mention in the video when I roasted the ingredients. I leave the garlic cloves in the basket until all the other veggies are nicely done. It’s important to roast them well to remove that “raw” taste from them, smooth the flavor out and make them soft so they’re easy to blend with the other ingredients. This Fire Roasted Salsa is unbelievable! It takes a little extra time by roasting the ingredients on the “barbie” but it’s so worth it! This is one of those things that you just have to make during BBQ season. It’s an awesome recipe that I’m sure will become your go-to after you try it…

Lemon Rosemary Madeleines Recipe • A Twist on a Classic! | Club Foody

 

Every spring, David and I look forward to starting our herb garden. As a foody, I cannot imagine not having my fresh herbs so readily available outside on the patio. Throughout the summer until fall, we enjoy using them in many recipes. When the season is over, I either dry them, transfer them to re-sealable plastic bags or make some rosemary butter.

 
When we think of herbs, most people might not think of using them in anything other than savory dishes. Well, here’s a delicious twist on a popular sweet treat…
 
A few years ago, we grew so much rosemary, I cooked with it a lot which was fine because we really enjoy it. One morning as I was about to bake some cakes when a light went off and this is how I created this recipe… my Lemon Rosemary Madeleines!
 
This classic French treat just had a makeover! From the freshness of the lemon to the nice balanced amount of rosemary, these small sponge cakes are magnificent! The added ingredients give these Lemon Rosemary Madeleines a unique and delicious flavor. With this delicious twist, these little guys go perfect with tea of coffee for a mid-afternoon snack or as a light after dinner dessert…
 
I love madeleines but after making these, I’m happy to say I won’t be going back to the traditional ones. Who knew that this herb could give so much extra taste to them? I’m telling you… these Lemon Rosemary Madeleines are much better than the plain ones. You’ll understand why they are so fabulous after trying the recipe…

Black & Blue Jam Recipe • Deliciously Different Condiment! | Club Foody

 

Every summer, David and I like to go blackberry picking. We make it fun by having a little competition; who will finish his or her bucket first? I lose all the time and I’m fine with it… I can’t win all the time, lol! I like to make all kinds of recipes like sauces, pies, jams, cold treats, cakes, cobblers, and even drinks like my Blackberry Mojito!

 
When it comes to jams, I have a few that I use this fruit in; Triple Berry, Old Fashioned Blackberry, and this featured one… Black & Blue Jam! Oh my! What a lovely breakfast condiment! The mix of blueberries and blackberries gives an amazing taste to this jam. I enjoy this on my croissants, English muffins, crumpets or toast as well as using it as syrup on my waffles. I mix the jam with a little water or Corn Syrup in a small saucepan and warm it up. Tada! Fresh homemade syrup…
 
This Black & Blue Jam recipe makes about 7 -250ml jars. For those of you who are not too familiar with the canning process, I highly suggest you check out this step-by-step tutorial by simply clicking on the link… How to do Home Canning
 
After adding the pectin to the mixture and boiling it for 5 minutes, this is my little trick to know if my jam is ready. I dip a metal tablespoon in an ice water bowl, let it sit for 2-3 minutes and then dry it off. I scoop up some jam and let it cool off to room temperature. If it sets up that means the jam is ready otherwise if it’s still too liquid, I cook the mixture a little longer. It’s a great little trick but just keep in mind that as the jam cools and sets up in jars, it will get thicker.
 
Another point I would like to highlight is after placing the jars in the boiling water bath, it’s important that the water comes back to a full boil before starting the timer. The process time takes 10 minutes. When time is up, carefully remove the jars from the water and place them on a wire rack to cool. The combination is simple and yet so delicious! Dark, luscious and flavorful, this Black & Blue Jam is a great breakfast condiment! It’s different from ordinary jams… a great change for your morning meals.
