Crown Roast of Pork Recipe • Impressive, Elegant & Delicious | Club Foody

 

Years ago, I went to visit my Aunt Huguette and Uncle Jacques with my mother and her beau, Guy. As always, we were always well received as guests and the main dish she made that night was spectacular… a Crown Roast of Pork. I had seen that dish on television served during special occasions but never had it until that evening. OMG! It was succulent!
 
The next morning, I couldn’t resist asking my aunt how she made it. Surprisingly it was quite an easy recipe so easy that I decided to serve it for the coming Holidays that year. Of course, I changed her recipe by adding my own little touches, elevating it in the flavor department!
 
Crown Roast of Pork is a “special” dish. Throughout my life, I’ve probably made it a half dozen times. The reason is it’s quite pricey! I like serving it during the Holidays or on special occasions like today… it’s Club Foody recipe #500! What a great way to showcase this classy dish!
 
There is no doubt about it that it’s a very elegant presentation. I like pairing it with my Saffron Rice Stuffing that I posted a couple of days ago. It’s colorful, very tasty plus it’s easy to make. I add some to the center of the crown and the rest is served in a bowl. Depending on my mood, I add another side like Mashed Potatoes or Creamy Mashed CauliflowerBrussels Sprouts with Bacon & OnionCauliflower & Celery Root Purée, or steamed vegetables like BroccoliniGreen Beans, etc.
 
I could serve Apple Sauce to go along with it but I don’t because I make a delicious gravy from the drippings. This is another OMG! While the Crown Roast of Pork rests, I quickly prepare it. You’ve got all the flavors from the rub and the meat… absolutely incredible! To top it all off, I like to add the little white booties called chop holders to the ends of the pork chops to make it look even more elegant.
 
Crown Roast of Pork is so scrumptious! This is the perfect dish for entertaining. It’s colorful, delicious, easy to make… I’m not kidding you, and quite impressive to serve like these dishes; Coulibiac, Chateaubriand, Lobster Newberg, Beef Wellington, and many others. Next time you want to make an impact, you definitely have to make this flavorful recipe…

Saffron Rice Stuffing Recipe • An Elegant & Tasty Side! | Club Foody

 

With most main courses you can’t get away from serving them without a side dish. They wrap up the meal so nicely. It can be BreadPastaVegetablesRice, etc.
 
When it comes to rice, I have a few side dish recipes I enjoy making often like Indian Basmati with Dry FruitsMexican RiceHerb & Butter Rice, plain White Rice, Wild Rice Pilaf with Porcini, Cranberries and Toasted Almonds, and many more as well as main ones like Mushroom Risotto, Chicken Fried Rice, Spanish PaellaRed Beans and Rice ~ Slow CookerChicken Ham Sausage Jambalaya, etc.
 
There’s another one that we really like and it’s my Saffron Rice Stuffing! Why do I call it “stuffing”? It’s because I love to serve it with my Crown Roast of Pork which is coming up in a couple of days. I spoon a fair amount of it in the center of the crown. It makes the dish pop with its bright colors! I also serve it along with my Holiday Turkey. It’s a nice change from my other stuffing recipes like Old Fashioned Stuffing with Giblets and Turkey Stuffing coming on December 23th, 2021.
 
The first thing I do is to toast my slivered almonds for a few minutes on medium heat, tossing often. If you want to cut the cost of buying them at the store, simply blanch your almonds and then finely slice them. To learn how, click on this link… Blanched Almonds ~ How to.
 
As the title indicates, I use saffron threads. Yes I know they’re quite expensive but it’s so worth it especially when paired with an elegant main course. I also add fruits to my Saffron Rice Stuffing like apples, golden raisins and cranberries. Surprisingly, this side is not overly sweet with a nice savory hint in the background.
 
Like most rice recipes, this Saffron Rice Stuffing is easy to make plus it’s so flavorful! It’s elegant, packed with yumminess and visually appealing. It’s definitely a keeper when you want to elevate your rice and pair it with a main course…

Swedish Meatballs Recipe • Improved Ikea Copycat! | Club Foody

 

In the 80s’, there was a big box store that came to America and it was Ikea. Wow, it became so popular in such a hurry. Their furniture was very affordable and more compact serving a vast majority of the population. Another popular item that became a “must have” before leaving the store was their meatballs!
 
Their marketing strategy was brilliant. First it was and still is almost impossible to leave the building unless you’re very familiar with the landscape. The only way out is to follow the arrows. Through this maze, inevitably you have to walk by the restaurant… tada! That is how these mouthwatering Swedish Meatballs became famous.
 
Köttbullar is the proper Swedish word for this particular dish. The pronunciation is far different from the way North Americans would say it. The “k” is more like a “sh” and the “ö” sounds like a “soft a”. Now for the rest of the word “bullar”, is pronounced like it is without emphasizing much of the “r”. So if I would write it the way I would pronounce it, it would be like this; shotbula’r’. Oh boy I know! I’m trying very hard to pronounce every International dish properly… it’s not always obvious!
 
One thing though that is obvious is how delicious these Swedish Meatballs are! They are totally “OMG”! They are so good that after the first time I had them, I tried very hard to reproduce the dish. It took me a few tries but along my “duplication” process, I actually made it tastier. The flavor of the gravy is much deeper as well as the meatballs. I have a beautiful variety of ingredients making them a family favorite.
 
To me this is a perfect comfort food to enjoy at home. I don’t serve my Swedish Meatballs with the traditional lingonberry jam. Instead, I prefer serving them with some steamed veggies and my Mixed Mashed Potatoes. With this recipe, you don’t need to go to the store to satisfy your craving…

P.S. Here’s another fun thing to know… According to NBC Philadelphia News, we don’t pronounce Ikea the way it should be. Our pronunciation is more like “eye-kee-ah” in place of “ee-kay-uh”.

New Orleans Gumbo Recipe • A Flavorful Iconic Dish! | Club Foody


 If you have been following me for a while, you know that New Orleans is on my bucket list for several reasons; its people, its joie de vivre, its culture and definitely its food such as Oysters Rockefeller, Shrimp Étouffée, Pecan PieRed Beans & Rice, Beignets, Maque Choux, Muffuletta, Jambalaya, Pralines, Po` Boy, Boudin, Bananas Foster, Eggs Sardou, and so on.
 
Last year everything was planned and we were going to the Big Easy at the beginning of May. Sadly, Covid-19 happened and the trip was cancelled. Unfortunately, this is what life sometimes throws at us… c’est la vie!
 
Today is Mardi Gras and I thought it would be a great idea to share another one of my Louisiana recipes… my New Orleans Gumbo! This is so delicious! For those who are not familiar with this dish, it’s a hearty stew/soup packed with yumminess. With incredible ingredients including meat and/or seafood, this iconic southern recipe is very satisfying.
 
As I always like to do, I make it my own way, adding and mixing ingredients together. Traditionally, this dish is made with either meat or seafood but I chose to use both. I use chicken, Andouille Sausage and large shrimp. Of course, I add the famous trinity which is onions, celery and peppers but I mix red and orange peppers; technically green peppers are the key ingredient for this.
 
When it comes to the roux, I reduce the heat to medium-low and cook it until I reach a very dark brown similar to chocolate in color. Some say that it takes 70 to 80 minutes. Most of the time, I can accomplish it within 20 minutes. The success for a perfect roux is to cook at lower temperature (medium-low is perfectly fine) and whisk constantly… yeah I know, it’s hard on the wrist. Again, the best way to make a great roux is to whisk continuously!
 
When it’s time to serve this New Orleans Gumbo, I place cooked rice in the middle of a bowl and add a generous amount of gumbo around it. I also sprinkle parsley on top and place a bottle of hot sauce nearby… just in case.
 
This flavorful New Orleans Gumbo is totally a must try! It’s easy to make and a great dish to enjoy anytime although I like to make this incredible dish during the colder months. Bring Mardi Gras to your table by making this popular recipe!

If you enjoy cooking Asian cuisine, I’m sure you have many condiments for recipes. When it comes to fresh ingredients, you probably like to buy them the same day you’ll be using them. Although you did that, there’s a very popular ingredient that is used in Asian recipes that goes bad within a day or two. It doesn’t matter how fresh they are, within 48 hours they usually end up in the garbage can. I’m talking about Bean Sprouts here and in this episode, I’ll show you How to Extend Their Shelf Life.

Dulce de Leche Chocolate Parfait Recipe • Pure Indulgence! | Club Foody

 

Ahhh love! It conquers all… Love is kind, love is grateful, love is one of the greatest feelings of all! If you’re in a relationship, you know how it feels! This coming weekend is a celebration for lovers around the world… it’s Valentine’s Day!
 
Last month, David and I celebrated our “official” 1st year wedding anniversary. It was very romantic; we popped a bottle of champagne and had a fabulous dinner! We’ll definitely use this coming holiday for another lovely evening together.
 
Yes gifts, flowers and cards are a nice touch for the event but I personally think that chocolate is even better! You can surprise your partner with Chocolate Lava Cake with Caramel SauceSilk & Satin Chocolate PieChocolate Raspberry Cake with a Mirror Glaze or even Chocolate Bourbon Pecan Pie. Another amazing recipe to make for this occasion is my Dulce de Leche Chocolate Parfait!
 
This dessert is so y-u-m-m-y! The combination of dulce and chocolate is perfectly balanced! In my chocolate pudding I like to add instant espresso coffee which adds another layer of flavor. When it comes to the dulce de leche pudding, I simply add a few ingredients to enhance it. I layer the puddings alternately starting with chocolate and then finishing with dulce pudding with a couple of coffee beans. Other times, I like to make a little chocolate heart to top it off… If you’re like me and enjoy the taste of dulce de leche, here are a couple recipes you might want to try; Dulce de Leche Cupcakes and Dulce de Leche Turtles
 
Knock on wood but since the day I started tempering eggs, I’ve never cooked them and they always come out flawless. It’s not a special technique that I employ. I simply take my time. I don’t rush anything, I add the warm mixture slowly to the eggs and whisk constantly. That’s all! When making Dulce de Leche Chocolate Parfait or any other dessert, you don’t want scrambled eggs in them. Again, just go slowly and take your time…

Moules Marinière Recipe • Mussels in White Wine | Club Foody

 

In my early 20s’, I was working full-time at University of Québec in Montréal plus two part-time jobs; one as a bartender and the other as a reporter. Both part-time jobs gave me the opportunity to meet a lot of people. As a freelance reporter, I really enjoyed working all over Montréal and its suburbs. It made me discover places, areas, and neighborhoods that I wouldn’t have known existed.
 
I also went to cute little restaurants all over Montréal. This is when I ordered my first Moules Marinière at one of these places! It was amazing! I loved it so much that every time I saw this dish on the menu, I just had to order it. One of my friends teased me about it – “Oh look Francine, here’s your mussels…!” Eventually, I stopped ordering it so often.
 
A few years later when I was living in Windsor, I came across some fresh mussels. My thought was to give it a try by making this favorite of mine. Well, well, well, after my first attempt, the results weren’t too shabby! Of course it needed some tweaking but honestly, it wasn’t that far off. After a couple more times, I was able to enjoy my Moules Marinière at home whenever I wanted with a nice glass of white wine…
 
This dish is so easy to make plus within 15 minutes, it’s ready! This is an incredible appetizer you can serve to your guests because the time involved is so minimal. It’s also a great meal on its own. I always serve some Crusty Bread to go with my Moules Marinière so I can soak up the delicious, creamy sauce… why leave those yummy flavors behind?
 
Valentine’s Day is coming this week and this is a perfect meal to enjoy with your partner. With a lovely bottle of wine, some music playing in the background, a couple of lit candles along with this mouthwatering dish, it will definitely set the right tone for a special evening.
