For some unknown reason, several popular foods from certain eras disappeared or just became less famous. Back in the 70s’ and 80s’, there were many that we enjoyed and suddenly… they were gone! Why? I can’t explain but one thing is for sure, they were incredibly tasty…
There’s one that was a favorite of mine because when I was a young inexperienced cook, I was entertaining my family and friends with it. It was easy to make with not too much to do. After making a few homemade sauces (that’s never been a problem for me) and prepping the broth, this dish is pretty much done. I’m talking about Fondue Bourguignonne also known as Beef Fondue…
What is fun about this dish is your guests get to cook their own meat. To serve a great Fondue Bourguignonne, the sauces are the key and today I’m sharing a dozen of them with you … it’s sure to satisfy all your guests.
Another plus about this dish is nobody has to rush… everyone eats at their own pace. With Valentine’s Day coming soon, this is a romantic dinner you can have with your partner; just add some candle light, nice smooth music and a great bottle of wine… you know exactly where I’m going with this.
There’s a similar version called Chinese Fondue from Québec – now let’s not confuse this with another Chinese Fondue (also known as Chinese Hot Pot) where meat and vegetables are cooked together in a pot filled with broth. The difference between the two (Chinese Fondue from Québec and Fondue Bourguignonne) is the thickness of the meat. The meat for Chinese Fondue (still from Québec) is thinly sliced , while in Bourguignonne it’s cubed. David and I prefer it cubed but if you want to try the thinner version, just ask your butcher to slice it for you.
What I like to serve along with my Fondue Bourguignonne is different types of vegetables that can be skewered such as cherry tomatoes, mushrooms, peppers, etc. Baked or roasted potatoes is another great choice to add to this dish. Of course, some fresh bread like Baguettes or Dinner Rolls is a must.
This is a great recipe to serve for special occasions. A popular dish back then, it should definitely still be. Surprise your valentine with this Fondue Bourguignonne, take your time and enjoy each other’s company… (wink)

1 • CHILI SAUCE
– 1/2 cup chili sauce
– 1/4 cup mayonnaise
– 1/4 cup sour cream
– 1/2 tsp. fresh ginger, minced
Mix all the ingredients together
2 • HORSERADISH SAUCE
– 1/4 cup sour cream
– 1/4 cup Miracle Whip®
– 1 tbsp. horseradish
Mix all the ingredients together
3 • DIJONNAISE SAUCE
– 1/4 cup Dijonnaise
– 1/4 cup sour cream
– 1 tbsp. prepared mustard
Mix all the ingredients together
4 • JAPANESE SAUCE
– 3 tbsp. kewpi mayonnaise
– 3 tbsp. sour cream
– 1/2 tsp. wasabi paste, or to taste
– 1/4 tsp. ponzu
– 1 tsp. chives
Mix all the ingredients together
5 • ROSÉ SAUCE
– 1/4 cup mayonnaise
– 2 tbsp. ketchup
Mix all the ingredients together. You can also add a little garlic salt or dry mustard.
6 • ONION SAUCE
– 1 envelope onion soup mix
– 12 ounces sour cream
Mix all the ingredients together
7 • DIABLO SAUCE
– 1 tbsp. oil
– 1/2 cup white onions, finely chopped
– 2 large cloves garlic, pressed
– 1 cup ketchup
– 1 tbsp. Worcestershire sauce
– 1 tsp. white vinegar
In a saucepan over medium heat, add oil and when hot, add onions and garlic; sauté for 5 minutes. Add the remaining ingredients, stir well and simmer for 2-3 minutes.
8 • CHEESE SAUCE
– 1/2 cup mayonnaise
– 3 tbsp. milk
– 1/2 cup Cheddar cheese, grated
– 1/2 tsp. hot sauce such as Cholula®
In a medium saucepan over medium-low heat, combine all the ingredients. Stir until the cheese is all melted.
9 • CURRY SAUCE
– 1/4 cup mayonnaise
– 1/4 cup sour cream
– 1 1/2 tbsp. curry powder
– 1/4 tsp. garlic salt
Mix all the ingredients together
10 • CHUTNEY SAUCE
– 1/2 cup mayonnaise
– 1/4 cup chutney
– 2 tbsp. sour cream
– 2 tsp. dry mustard
Mix all the ingredients together
11 • SIMPLE CHILI SAUCE
– 1/2 cup chili sauce
– 1/2 cup mayonnaise
Mix all the ingredients together
12 • BBQ SAUCE
– 1/4 cup mayonnaise
– 1/4 cup sour cream
– 3 tbsp. BBQ sauce of your choice
Mix all the ingredients together
