Mixed Berry Margarita Recipe • Fruity & Refreshing! | Club Foody

Every January when we go back to Mexico, we like to return to our favorite spots and restaurants. Some of them are casual while others are upscale. Among them, there’s a cute restaurant that is quite popular with the tourists. They serve amazing dishes as well as huge margaritas plus there’s live music.

 
When I go there and order a margarita (or two), I try different flavors. My heart always goes back to strawberries unless I make them at home. In that case, I like to either make my Creamsicle Margarita, my Mango-Strawberry or my Spicy Margarita including this one… my Mixed Berry Margarita!
 
This is so good! It’s not too sweet and not too strong in flavor… just the right balance! The consistency is perfect! It’s somewhat slushy but if you prefer less or more, adjust the amount of ice cubes accordingly. I use white tequila because it’s what I prefer but if you have a favorite like reposado or gold, go ahead and use it instead!
 
I buy my frozen fruits in a big bag from Costco®. Like most recipes, this can always be altered to your liking. If mangoes are your thing, substitute them for the mixed berries; the same goes for strawberries. Agave nectar is another ingredient used in this cocktail which can be substituted with honey. My Mixed Berry Margarita recipe is a little unorthodox. I like to add sweet soda and sparkling mineral water to my mix. It gives an extra layer of flavor to the drink.
 
When it’s hot outside and you want a refreshing cocktail to sip on, this Mixed Berry Margarita is the way to go! Garnish your glass with a lime wedge, sit back, relax and enjoy this great summer drink! Like I always say when I post any “alcoholic beverages”, please drink responsibly and don’t drink & drive… it’s not cool!

Homemade Sweet Relish Recipe • Great Condiment to Make! | Club Foody

During the summer, most produce is cheaper to buy therefore I like to take advantage of it by doing a lot of pickling. It can be any kind of vegetables or fruits depending on the season like cucumbers, mushrooms, onions, beets, asparagus, green beans, sweet corn, blackberries, blueberries, cranberries, 
strawberries, peaches, plums, tomatoes, gingerhorseradish, and so on…
 
Cucumbers are famous for pickles; gherkins, dill pickles, Bread & Butter, brined pickles, Polish pickles such as Polski Ogórki or Senfgurken German pickles. Another delicious way to use up your cucumbers is to make this condiment… Homemade Sweet Relish!
 
This is a must have in your pantry. It goes so well with hot dogs, hamburgers, picnic salads, or as an ingredient in Tartar Sauce or Thousand Island dressing. It can also be mixed with mayo as a sandwich spread or for Deviled Eggs.
 
When I filmed this video, I did something different than I usually do. I used a Vidalia Chop Wizard to chop my vegetables. It worked well but I prefer them finer so the next time I make my Homemade Sweet Relish, I’ll go back to my ol’ food processor.
 
Canning is great because you can enjoy your favorite jams, jellies, fruits, and vegetables all year round. I didn’t show the whole process of canning so if you’re not too sure on how to do it, I highly suggest you click on this link… How to do Home Canning. Now do you need to process your jars? Yes and no! If you think you might use it all within a couple of weeks then there’s no need to process. On the other hand, when jars are processed, they keep easily for 1 ½ years in your pantry… if they last that long!
 
This Homemade Sweet Relish is a flavorful recipe to use up your bounty of cukes. It’s really not complicated and you can make it as sweet or tart as you want. They also make nice gifts for your friends and family.

Blue Cheese Burgers Recipe • Juicy & Flavorful! | Club Foody

In my world, there are 5 seasons; fall, winter, spring, summer and BBQ! As soon as the weather warms up enough to venture outside, we fire up the “barbie” and grill our favorite foods. I love a nice steak on the BBQ as well as a rotisserie chicken, grilled pork chops, and so on…

 
Although I have many dishes I enjoy, my all-time favorite is burgers! So far, I’ve been sharing many recipes with you such as Chipotle Stuffed Bronto BurgersSmoky Porky BurgersMexican Burgers, and Italian Burgers with Tomato Slaw. Here’s another one to add to your list… Blue Cheese Burgers!
 
This one is incredible! If you love this kind of cheese, this is your burger! This recipe has a great combination of ingredients making this one very different from others. I use bacon in this mix and it does give a nice smoky flavor to the burgers. I pre-cooked my bacon before adding it to the ground beef. Another element that makes these burgers so lovely is the food vessel. I serve them with my Hamburger Buns. This recipe is very easy and the results are simply wonderful! It’s a great recipe to try for this season…
 
Now that summer is officially here, there’s nothing better than grilled food on the barbecue. These Blue Cheese Burgers are definitely delicious more so if you like this type of cheese like I do. I enjoy it so much that just before serving, I add some more cheese right on top of the patty… it’s amazing!

Peach Cobbler Recipe • A Scrumptious Summer Dessert! | Club Foody

It’s always nerve wracking to meet your partner’s family for the first time. We don’t know what to expect from both sides. When I met David’s parents and his Oma (grandmother), it was an instant mutual liking. The same thing happened when David met my family although most of them don’t speak English while my husband’s knowledge of the French language is quite limited.

 
I got along very well with his mother, father and grandmother, it was always fun to get together. Before David’s father got sicker with Parkinson’s, he wanted to make his signature dish for us; Peach Cobbler! Unfortunately, we never had the opportunity to savor it… he left us 7 years ago now!
 
A couple years after, I decided to give this dessert a try and fortuitously, I was extremely pleased with the results considering I never made it before. It’s a lovely way to enjoy peaches at their prime. With a light dough, this Peach Cobbler is quite scrumptious! This recipe is very easy to make. In the fruit mix, I add a little Peach Schnapps to accentuate the flavor and richness. I like to serve this lovely dessert with a generous scoop of No Churn Vanilla Bean Ice Cream… yum!
 
This Peach Cobbler is a nice treat to serve this summer. Simple and yet so delicious, I’m sure it will be enjoyed by your family. As David and I savor this recipe, we sure would love to have his father making it for us… We miss you Mr. Bittner Norm…

Rotisserie Chicken Recipe • A Summer BBQ Favorite! | Club Foody

I really enjoy cooking on the barbecue. It seems like the food tastes better. I also like grilling because it doesn’t heat up the house during the summer months and cleanup is a breeze plus I’m outside enjoying the beautiful weather… what more could I ask for?

This is such an incredible recipe! It juicy and so flavorful! I use an oil based rub on the poultry. After 30 minutes of roasting, I brush on my BBQ Sauce for Chicken and repeat every 15 minutes until it’s done. To achieve this delicious featured recipe, you need a good rotisserie kit which can be found at most hardware stores or online.
 
When roasting this Rotisserie Chicken, we need to place an aluminum pan under to catch the drippings and any excess BBQ sauce. Also we have to roast it on indirect heat at 375 to 400º Fahrenheit.
 
This is a pretty straightforward recipe. The beauty of making your Rotisserie chicken at home is you can use the seasoning and sauces you choose and the results are far superior to the ones from the supermarket. This is a must make for summer grilling!

Defrosting Meats Quickly - Tips & Tricks | Club Foody

It’s all happened to us. Being too busy, looking after other chores and suddenly we realize that we forgot to take the steaks out of the freezer and it’s almost dinner time. What other alternative is there? The microwave can be one of them BUT… yes there’s a big “but”. Since microwaves have been around, we’ve used the defrost program for our meat but most of the time, the results aren’t that good. I don’t know how many times I’ve really kept my eyes on my protein defrosting in the microwave, I always ended up with a little cooked dried meat around the edges… nothing drastic but definitely not ideal.

 
One day, I got an idea and after trying it at first with steaks, I kept trying it with other proteins such as chicken, lamb and pork. In this episode, I’ll be sharing my little trick with you on Defrosting Meats Quickly! It might take a little longer than the defrost program on the microwave but it works great. The key here is to use very hot water from the tap, not boiling though, and flip the meat often.
 
Defrosting Meats Quickly is a great tip to know when time is challenging. There’s very little attention needed while doing it. It’s great for most of the proteins but I strongly recommend not to do it with shrimp, fish or other seafood. I will show you how to proceed with these proteins another time.
 
I prefer thawing my meat in the refrigerator but many times I forget to take them out from the freezer and it’s already mid-afternoon or later. This Defrosting Meats Quickly method works great for these situations. Please watch the video to see how to do it…

Hot Dog Buns Recipe • Soft and Tasty! | Club Foody

BBQ season is here and of course, most of us are grilling our favorite meals on the “barbie”. As you can see we do have a wide variety to choose from. There are also “comfort foods” we enjoy grilling like hamburgers and hot dogs including their food vessels. Last year, I shared how to make Hamburger Buns and now, I’m showing you my version of Hot Dog Buns!
 
They are pretty similar to its counterpart except these Hot Dog Buns are slightly sweeter. By adding more sugar to them, I find the bun and sausage pairs better together. They are not as sweet as Hawaiian Buns though.
 
I like to make this easy recipe not just when I grill hot dogs on the BBQ but also when I make my Coney Island Hot Dogs or even my Lobster Rolls also called “Guédille” in the Canadian Maritimes. This recipe yields 8 big ones or 12 small ones and I also use the leftover buns for my egg sandwich, bread pudding, or even using them in my Spanish Gazpacho. Another dish I use them up in is my Breakfast Casserole.
 
The leftover buns can also be used as a thickener for soups or as a binder when making Meatballs. To salvage them, I make my Herb Garlic Parmesan Croutons with them. They make great garlic bread or a good food vessel for Tuna Melt instead of using Hamburger Buns.
 
These Hot Dog Buns are so delicious and soft with a hint of sweetness to them. You’ll be surprised how much better they taste compared to the ones from the store. They will definitely enhance your “every day” hot dog.

Char Siu Pork Recipe • Chinese BBQ Pork | Club Foody

I loved living in Toronto for its culture, restaurants, lifestyle, plus it was close enough to visit my family in Québec – about 5 ½ hours’ drive versus now flying there… I was always on the go, never a dull moment!
 
Through all the years I was living there, my circle of friends was quite diverse; my friend Michael (China), Brigitte (Eastern Atlantic), Marketa & Hannah (Czech), Valeria (Chili), Joe (Venezuela), my Lebanese friend Richard, Siva (Pakistan), Tony (India), Mira (Japan), Heidi (Germany) and her husband George (Portugal), Tim & Jim (Greece), besides my Ontario friends Joanne and her husband Victor, big Richard (great cook), Chris & Hiam (Persia), Drew, Lori-May (Caribbean), and so on…
 
When we were getting together, it was a lot of fun, a lot of laughs but also a lot of information about each other’s culture including food. I was always intrigued to discover new ingredients, flavors and dishes. That is how I was introduced to Char Siu Pork by Michael.
 
This Chinese BBQ Pork is incredible! The marinade has a great combination of ingredients, giving the meat such a beautiful flavor! There’s a nice mix of sweetness and saltiness along with spiciness that makes this recipe so interesting. Char Siu Pork is a key ingredient for many of my Chinese inspired dishes including Singapore Noodles, Bánh mì, Udon Noodle Soup, Char Siu Bao, and Ramen Noodle Soup.
 
Many recipes out there use red food coloring. I don’t think it’s necessary BUT if you decide to add some please use the natural one. I have recipes to make different colors using natural ingredients so check out this link… 4 Natural Food Colorings
 
Char Siu Pork is so tender, flavorful, easy to make and very versatile because it can also be eaten with white rice and some steamed vegetables like bok choy, Chinese broccoli, choy sum or broccolini
