Fudgesicles Recipe • A Cold Summer Treat! | Club Foody

When I think of summer, what comes to my mind is; warm weather, relaxation, outdoors, golf, open toed sandals – that’s right, I love them! – , fresh produce, road trips, BBQ, ice cream, backyard parties, and sitting by the fire pit.

 
When it comes to treats, what’s better than an ice cream or something similar like Frozen Yogurt Bars, Baked Alaska, Milkshakes, Ice Cream Floats, Sorbet, Sherbet, Kulfi, Freezies, Tartufo, Ice Pops, Gelato, Snow Cones or Grattachecca, Ice Cream Sandwich, Granita, Slush, Café Liégeois or Vietnamese Iced Coffee, Popsicles and Fudgesicles!
 
When it comes to Fudgesicles, they were my favorite as a kid. I’m not sure if they cut down on the amount of chocolate or changed the recipe but as I was getting older, they didn’t taste the same therefore I eventually stopped eating them.
 
In my 30s’, I started dating a guy who had a young daughter. Of course, during the summer months, we were buying cold treats for her. Again, I gave my long lasting favorite another try. Alas, it didn’t have the same flavor it had when I was a child. That is when I decided to make my own homemade version.
 
OMG! They were just like I remembered; chocolaty and so creamy! Now let’s be honest here… I had to try a few times before I got there. After about 5 attempts, I was finally happy with my recipe. I use 3 tbsp. of Hershey Special Dark Cocoa Powder. I tried it with Fry’s before but I find that the first one tasted more… well chocolaty! If you want to add less, go ahead, it will still taste lovely…
 
This summer, don’t bother spending your money on the store bought ones when you can make these incredibly flavorful Fudgesicles at home. There are no preservatives, they will taste fresher plus you’re in charge of the amount of chocolate flavor you want in your cold treat. This is definitely something you want to make this summer…

Cucumber Salad Recipe • Fresh Summer Side! | Club Foody

Over a decade ago when I met David’s family, I felt comfortable with them right away and it was reciprocal; they accepted me immediately. His father was fun and always had a little story to tell. His mother loved sharing some memories and bringing up special events that occurred in the past. His “Oma” was different. She had the eye of an eagle, sharp like a knife, filled with wisdom and she was always listening and commenting only when it was time to do so… I loved her!

 
David is a twin and when he and his brother were born, their mother had some complications therefore she couldn’t look after two little babies. Oma helped her by taking David with her and cared for him until their mother gained some strength. Oma and David always had a special bond… he was her favorite! – He’s mine too… lol!
 
Just like in mine, David’s family had some great home cooks. David learned a lot from the women in his family and many dishes he had me try were from them including this one from his Oma… Cucumber Salad! Who knew that a few simple ingredients mixed together could be so delicious…
 
I really enjoy this salad… it’s so “summery”! It’s fresh, light and very flavorful! I like to pair this Cucumber Salad with many proteins like HamburgersHot Dogsgrilled or fried chicken, pork chops, etc. It’s also a great picnic or potluck item to bring along.
 
The original recipe wasn’t exactly like this one. David and I altered it to make the salad even tastier. Originally it had cream in it making it a little “blah”. Instead, we added a little white vinegar to give it a little extra tang. I also added powdered sugar, not a lot but enough to bring all the ingredients together. Summer is about enjoying fresh produce, making light and fresh dishes. This Cucumber Salad is all about that, absolutely perfect to serve on hot days. It’s a simple and yet delicious recipe to add to your menu.

Asparagus with Maltaise Sauce Recipe • A Great Classic! | Club Foody

I was probably meant to be a “foody” because ever since I was a little girl, I’ve always enjoyed vegetables. When watching my cousins or friends having a fit and not wanting to eat them, I couldn’t understand why… they are so yummy!

 
My parents had a garden after my brother was born. It wasn’t the “Green Acres” one but still, it was a decent size. Did it help me enjoy them even more? Perhaps for the freshness but I was already hooked way before that!
 
When it comes to David, he grew up on a farm and his parents were self-sustaining. Obviously they had an abundance of fresh produce around. To make a long story short, we’ve both always enjoyed them and do a rotation of different ones in our menu.
 
Asparagus is one of them and it can be prepared and used in so many ways. Although I tend to be a purist when it comes to my veggies, once in a blue moon, I like to change things up a little. There’s a tasty side dish I like to make with them and it is my Asparagus with Maltaise Sauce!
 
This dish is incredibly delicious! The orange flavor from the sauce complements the asparagus perfectly. This is the kind of side dish that pairs so well with many proteins. My favorite pairing of this Asparagus with Maltaise Sauce is with a nice juicy steak… yummy!
 
To make this sauce, you need to know how to make Hollandaise first; it’s one of the 5 French Mother Sauces. It is not complicated at all… just slightly technical. Now from this sauce, there are a few secondary ones that can be made such as Béarnaise, Choron, Foyot, Mousseline, Chantilly, Dijon and Maltaise. With all these flavorful sauces, it’s important to know how to make a proper Hollandaise…
 
Next time you have a bundle of fresh asparagus and want to elevate it, simply make this amazing recipe. From start to finish, including steaming the vegetable, you can serve this great Asparagus with Maltaise Sauce side dish in less than 5 minutes… not many tasty recipes can be prepared this quickly.

Shrimp Salad Sandwich Recipe • Light & Tasty Seafood! | Club Foody

During the coldest months, I cook up a storm, trying to get ahead of my crazy schedule – I’m still working on eventually being 6 months ahead… it’s quite hard to do, let me tell you. Anyway, I cook a lot from September to May. When June arrives with its warm weather, I focus on barbecue recipes until the mercury rises even more then I switch to quick and light meal recipes.

 
Besides salads, sandwiches are the next best thing to make when it’s too hot outside. I’m a foody and as much as I like creating and making “fancy” meals, I love my sandwiches like Tuna MeltEasy Chicken QuesadillasMonte CristoCroque-monsieur Montréal Style, Lobster Roll (coming in 2021) and many more, including this one… my Shrimp Salad Sandwich!
 
David and I like this sandwich a lot! It’s easy to make, incredibly delicious and it hits the spot. I could serve this on a French BaguetteDinner Rolls, or even Hamburger Buns but I prefer them on Croissants. When I feel like having a healthier version, I like to serve it on a bed of lettuce with some fresh cherry tomatoes and slices of cucumber.
 
In this Shrimp Salad Sandwich recipe, I use Miracle Whip as well as Mayonnaise. Why these two? While Miracle Whip has a sweet, spicy taste to it, mayo is tangy and has more of a creamy texture. The blend of these two is simply amazing. Sometimes I like to change it up and use Kewpie Mayo (Japanese condiment) instead. Both ways are just delicious!
 
Even when it’s too hot outside to cook, no one should compromise on not having a nice meal. Next time you either feel tired or it’s too hot to start the oven or the “barbie”, make this incredible Shrimp Salad Sandwich. You’ll be surprised how flavorful it is…

Caribbean Smoothie Recipe • Refreshingly Delicious! | Club Foody

I’ve been trying very hard to eat breakfast. I’m much better than what I used to be. It’s somehow ironic because I love breakfast foods so it shouldn’t be a problem to enjoy my first meal of the day. It has nothing to do with laziness but simply because I don’t take the time. I also get up early and start drinking coffee. After a few cups, I don’t really feel like eating anything.

 
Nowadays, I reduce my caffeine consumption considerably and make an effort to eat something, anything. It can be a fruit, beveragecereals or some bread. It seems that smoothies are what I go for more often. It’s fast and so healthy just like this recipe… my Caribbean Smoothie!
 
It’s unbelievable that such a simple recipe can be so delicious. With a great combination of ingredients, this beverage is so tasty! Actually, this Caribbean Smoothie is one of my favorites! I like to use almond milk with coconut. I find it gives that little extra tropical flavor which enhances this healthy drink so remarkably.

Turkish Kebabs Recipe • Above Ordinary BBQ! | Club Foody

When summer arrives, my priorities change. Instead of being inside, cooking and working, I do the same while being outside. My “outdoor” desk is the patio table, taking my laptop outside along with all the stuff I need to work with and I like to use the BBQ in lieu of the oven. Why suffer inside with the heat while we can use the “barbie” outside.

 
I really enjoy grilled foods and the flavor that it gives them. Made with ground lamb and seasoned with a beautiful spice blend and a hint of mint, this is such an incredible recipe to serve this summer! I like to pair this tasty dish with tomatoes that I grill on the barbecue, some flatbread along with sliced onions. I also make a lovely yogurt sauce for these Turkish Kebabs. It brings some freshness to this hearty meal.
 
Of course we all have our summer favorite grilled foods but it’s a nice delicious change to try these Turkish Kebabs! It’s easy to make and the flavor is simply incredible! It is a mouthwatering summer food that I’m positive you’ll be quite pleased with…

Snap Peas • How to Freeze - Tips & Tricks | Club Foody

I love creating new recipes so there’s a continuous rotation of lovely dishes. Many times though I have to be careful of the ingredients I buy because I might use them for just one recipe although I try my best to add them to another dish. In case I don’t, like with certain produce, I have to find solutions to preserve them longer until needed. A way of doing this is to freeze it. That’s exactly what I do with this produce…

After making a stir fry, I usually don’t use them right away and that includes bean sprouts which I will show you my little kitchen tip on how to extend their shelf-life in the near future. Instead of throwing them out, this is what I do to keep them longer… Snap Peas • How to Freeze. It’s quick to do and the beauty of this is you can use them later on.
 
I detest throwing food in the garbage can. For the prices we pay for our foods, we shouldn’t be wasting any or at least very little. I’m very savvy when it comes to that and whatever I can salvage for later use, using methods such as freezing, blanching, and others, I’ll go an extra step to do so. Chilled Leek & Fennel Soup Recipe • Tasty Summer Soup! | Club Foody

David and I are definitely summer people but to a certain extent. When it gets way too hot and humid, we don’t really like it plus I become miserable with my “hot flashes”… sad to say but that’s reality! Therefore the AC works full blast and we stay inside until it cools off a bit. When it comes to eating something, obviously a cold meal helps as well.

 
I like my salads and sandwiches during the hot summer months but I also enjoy making soup. What? That’s right… soup! Evidently, I’m talking about cold, chilled soups like Spanish GazpachoChilled Roasted Pepper SoupClassic VichyssoiseChilled Avocado Soup, Cream of Asparagus (coming summer 2021), and this featured one… my Chilled Leek & Fennel Soup!
 
Just like the other cold ones, this recipe is incredibly delicious and satisfying! The blend of leek and fennel along with other fresh ingredients gives this soup a lovely flavor. It takes next to no time to prepare and after chilling it for a few hours, you’ve got yourself an amazing dish to enjoy.
 
Some of you might not know how to prep these two main ingredients. In the past, I’ve posted two kitchen tips & tricks; one on Fennel Bulb – How to Cut and the other How to Trim, Cut & Clean Leeks… so check them out.
 
One ingredient that I like to garnish this Chilled Leek & Fennel Soup with is crumbled cooked bacon. Trust me on this one… don’t skip it! It wraps this dish up so beautifully!
