Hawaiian Teriyaki Burgers Recipe • BBQ Heaven! | Club Foody

 

As much as I like nice elegant dishes like Coq au Vin, Chateaubriand, Rack of Lamb with Herbes de Provence, Beef Wellington, Lobster Newberg and so on, during the summer time, I’m completely the opposite. First, I absolutely love barbecued food! Anything David and I can grill, goes straight on the “barbie”.
 
One of my summer favorite grilled foods is burgers! You won’t ever see me eating one at a fast food chain restaurant but at home during the barbecue season, we make them almost once a week. I’ve shared several delicious recipes with you like Chipotle Stuffed Bronto BurgersItalian Burgers with Tomato SlawSmoky Pork BurgersMexican BurgersBlue Cheese Burgers, and California Burgers. Now, here’s another mouthwatering recipe to add to the list… Hawaiian Teriyaki Burgers!
 
OMG! This one is my husband’s favorite although he does enjoy the others very much as well… lol! This burger is stuffed with onions, white sharp Cheddar cheese, finely chopped pineapple and my popular Teriyaki Sauce! The combination is phenomenal! Of course, I serve these patties with my homemade Hamburger Buns
 
To make these Hawaiian Teriyaki Burgers even more delicious, I reserve about 2 tbsp. of the teriyaki sauce and combine it with an equal amount of Miracle Whip®. This is the topping sauce that I spoon over the cooked burgers that are garnished with a grilled pineapple slice. What’s left from the teriyaki sauce is used to baste the patties while grilling them on the barbecue. Let me tell you that these burgers are extremely flavorful!
 
Summer time is about enjoying the outdoors as well as cooking on the barbecue. With these Hawaiian Teriyaki Burgers, each bite is packed with yumminess and a great choice for the season. Mixed Tomato Salad Recipe • Colorful, Healthy and Delicious! | Club Foody

 

Besides enjoying the nice warm weather and outdoor activities, summer is also about appreciating the fresh produce available during this particular season. A wide variety of fruits and vegetables are abundantly displayed in the grocery bins tempting us to buy more that we usually do. Moreover, it seems that people tend to eat more salad during the hot months of the year which is a nice healthy eating habit to have.
 
I can’t stop repeating myself by mentioning how important it is to eat a little salad every day. It’s healthy plus it helps the body function better. Salads don’t have to be restricted only to lettuce. This featured recipe is another tasty example of enjoying a salad without the lettuce. Here’s my Mixed Tomato Salad! This is an amazing side dish! With a beautiful combination of ingredients like shallots, basil leaves, bocconcini, etc., this is a tasty salad to make! It pairs so well with many proteins and it’s a delicious change from a regular garden salad.
 
I use a variety pack of cherry tomatoes because the different colors make it more appealing. You can use strictly red if you want but let’s not forget that we always eat with our eyes first so why not serve a rainbow of colors like this Mixed Tomato Salad!
 
There’s a quick vinaigrette that pairs very well with it. It’s an equal amount of extra virgin olive oil, balsamic vinegar and granulated sugar. To this, I add just a little bit of hot paprika which gives the salad a hint of spice without compromising on the freshness of the ingredients.

Greek Ouzo Pork Kebabs Recipe • Elevate your Grilled Pork! | Club Foody

 

Summer is my favorite season for many reasons and when it comes to food, eating and cooking outside is something I really enjoy! I love barbecuing and just the smell of food grilling on the BBQ, triggers my appetite! It can be FishBurgers, Steaks, LambChickenVeggies and Fruits, and so on…
 
David and I like kebabs. They’re colorful, easy to make and so flavorful. I’ve already shared several recipes including BBQ Beef Shish KebabsCreole Shrimp & Andouille SkewersChicken Chapli Kebabs, and Turkish Kebabs. Here’s another incredible one to add to this yummy list… my Greek Ouzo Pork Kebabs!
 
This is definitely an OMG!
 
The meat is marinated in a delicious herb-oil mix for hours before being skewered along with green peppers, cherry tomatoes and onions. The marinade is also kept for basting the kebabs when grilling. The ingredient that wraps this dish up so amazingly well is Ouzo which is added to the basting sauce just a couple minutes before using it…

Blueberry Cake Recipe • Simply Delicious! | Club Foody

Almost every year, my husband and I visit our local farmers market and buy fresh produce including berries. We love them and always purchase a lot so I can freeze the fruit and use them throughout the year for diverse recipes; from sweet to savory like JamsPies, spicy sauces and Beverages.
 
David and I enjoy desserts but only once in a while. The reason is it’s just the two of us at home so we have to eat everything by ourselves. When I entertain, that’s a different story. I always bake something like Chocolate ÉclairsMille-FeuillesSoufflésCakesPiesPavlovaTartsMousses, and so on.
 
So far I’ve shared a few of my cake recipes (more to come) and here’s another one to add to the list… my Blueberry Cake! This is such a scrumptious and very easy sweet treat to make. There’s a burst of flavor in every bite! To make it even more delectable, I like to drizzle on some Crème Anglaise… WOW! It brings this dessert to a whole new level of yumminess!
 
I use a springform pan for this Blueberry Cake recipe. Here are a couple of tips to successfully unmold it. After it cools off, run a knife between the cake and the pan to separate it from the sides. Then open the latch and lift the form from the pan. You can leave the cake on the bottom of the pan or gently remove it by sliding the cake onto a serving dish using both hands.
 
During the season, Blueberry Cake is a lovely way to enjoy this amazing fruit! It’s a great dessert to serve to your family & friends during the summer time. Now if you freeze some blueberries, you can savor this incredibly delicious sweet treat all year round. Guava Fruit • How to Handle - Tips & Tricks | Club Foody

 

Since my early 20s’, every time I’ve had the chance to try a new ingredient, you bet I’ll give it a shot! Thanks to global trading, we’re now able to savor produce, herbs, spices and ingredients from all over the world. Throughout the years, I’ve tried many so called “exotic” produce like black radishes, Broccolini, Romanesco broccoli or gai lan aka Chinese broccoli, white asparagus, purple yams, black garlic, dragon fruits, cherimoyas, kumquat, passion fruits, pomelo, star fruits, and many more…
 
Among them, there’s one that I really like which grows in tropical and subtropical regions and it’s Guava Fruit! This fruit is simply delicious! There are different varieties of this tasty fruit and here are some listed below…
– Tropical Yellow aka Mexican Cream has white flesh. It’s sweet and as the name indicates, it’s also creamy. I like making dessert with this kind.
– Pineapple Guava native to South America is perfect for making jams with its sweet-tangy flavor.
– Red Malaysian’s flesh is red giving sweetness to the pulp with a touch of floral aroma to it.
– Tropical White is sweet with a nice aroma. With a pale yellow flesh, this is ideal for smoothies.
– Strawberry Guava has a distinct taste of this popular berry. I enjoy adding some to my Fruit Salad or even as a topping for my Pavlova.
– Lemon Guava, like the one above, has a pronounced flavor of lemon with some sweetness to it.
– Red Indian Guava has a strong sweet scent to it. Despite its name, this variety is native to Florida.

If you’re not familiar with this lovely fruit, here are a few tips on How to Handle Guava Fruit. Pick one that is ripe and soft because it will be sweeter. If there are some little brown spots on the rind, it’s fine but it won’t keep as long as the ones that don’t have any and may go bad quicker. After rinsing the fruit very well, you can eat the entire fruit including the seeds and the rind (remove the brown spots prior to eating). If you decide not to eat the skin, peel it and scoop the flesh like you would with an avocado.
 
Guava Fruit is packed with nutritional benefits. It’s very high in fiber and potassium, an amazing source of vitamin C, vitamin A, vitamin B3, B6, and more. It’s diabetes-friendly, an immune system booster, it has anti-aging properties, decreases the risk of cardiovascular disease as well as cancer, etc.

Sopa Ajoblanco Recipe • Tasty White Spanish Gazpacho! | Club Foody

 

As much as I love grilled food on the barbecue, when the mercury rises way up, I don’t have a big appetite, I don’t feel like cooking and what I want is something to cool me off… something easy to make, uncomplicated and delicious all at the same time…
 
There’s a list of dishes that I like to serve during the hot summer months like sandwiches which we enjoy a lot as they’re fast to prepare. Ceviche de Pescado or Scallop Pineapple Ceviche are other great choices as well as soups. WHAT? A soup? Sure… why not! Of course, they’re not hot, but chilled!
 
I’ve shared many of my summer soup recipes with you including Chilled Avocado SoupVichyssoiseChilled Roasted Pepper SoupSpanish GazpachoChilled Leek & Fennel Soup, etc. As you know, the traditional Gazpacho is made with tomatoes but here’s the white version… Sopa Ajoblanco!
 
This chilled soup is incredible! As the title suggests, the ingredients used for this dish are white; bread, heavy cream, chicken broth, blanched almonds, garlic, salt and white pepper. The only ingredient that is slightly darker is sherry vinegar but even adding it, after blending the ingredients, you end up with a nice velvety white soup… absolutely gorgeous!
 
This Sopa Ajoblanco from the region of Granada and Andalucía is so flavorful and refreshing! It’s easy to make but not quick as there are some ingredients that have to be prepped overnight; almonds are soaked in water making the soup creamier and the crustless bread cubes are dried out. The next day, we simply proceed with the recipe. I add another layer of yumminess by adding heavy cream to the dried out bread cubes which is totally not traditional but… I love it!
 
Blanched almonds are a popular ingredient often used in Spanish cuisine for sweets like Polvorones, Tarta de Santiago, Tecula Mecula, and more including savory recipes such as Romesco Sauce, Almendras Fritas, Catalan Picada, Espinacas con Garbanzos, etc… We all know that almonds aren’t cheap and when it comes to buying them blanched, they’re even more money. Sopa Ajoblanco often referred to as White Gazpacho is an elegant cold soup perfect to serve on a hot summer day. Topped with toasted bread, chopped blanched almonds and garnished with grapes and olive oil drops, this is certainly a must try this season…

Shrimp Po' Boy Recipe • A Twist on a Flavorful Sandwich! | Club Foody

 

New Orleans has been on my bucket list forever and last year we were scheduled to go down there at the beginning of May. Unfortunately, Covid-19 hit and we were forced to cancel our trip. Although I was disappointed, my positive attitude took over and I consoled myself by thinking that when we go to the Big Easy, it will be one of the best trips ever!
 
I’ve posted many Creole and Cajun inspired recipes including Homemade Andouille SausageNew Orleans GumboCajun PoutineShrimp Maque ChouxRed Beans and Rice (Slow Cooker), Creole Shrimp & Andouille SkewersOysters Rockefeller, and many more. Here’s another incredible one to add to this delicious list… my Shrimp Po` Boy!
 
What a sandwich! The taste of this classic is amazing! I marinate the shrimp for 30 minutes before skewering them… That’s right! My version of this fabulous well known sandwich is grilled not fried! It’s healthier, more flavorful plus who wants to fry food in the middle of the summer and heat up the kitchen?
 
When I make the marinade, one of the ingredients I use is my homemade Creole seasoning. It’s a delicious condiment that is very easy to make. It has some zip to it giving another dimension of flavor to the Shrimp Po` Boy…
