Besides enjoying the nice weather and the outdoors, summer is also about eating fresh produce. As I’ve pointed out many times, it seems that people tend to eat more salads during this season… Hey, I don’t blame them because everything tastes so fresh. Although I usually serve salad several times a week, during the summer time, I make some almost every day.
Depending on what kind of salad you’ll be making, some need a dressing or vinaigrette while others don’t. When there’s a beautiful garden salad on the table, what makes it even nicer is to serve it along with a homemade dressing.
I’ve shared a few of them with you and today, here’s another one to add to the list… my Catalina Dressing! Colorful and very tasty, this is perfect for your salads! It’s incredibly easy to make and within 5 minutes, your homemade dressing is ready to be enjoyed… it’s that quick!
I bet you have all the ingredients sitting in your cupboard to make this delicious Catalina Dressing from scratch which makes it budget-friendly! It’s so convenient that there’s no need to buy it from the store plus, like any homemade recipe, it’s definitely more flavorful!
A friend of mine asked me if Catalina dressing is the same as French dressing sometimes referred to as Catalina French Dressing. There are a few differences between the two; French is more a pale orangey color and because mayonnaise is used to make it, the texture is creamier versus Catalina which is made with oil. With the addition of tomato, ketchup and paprika, the color is also darker red.
Making this recipe is very easy. The only thing that has to be considered is when emulsifying the oil, it has to be done slowly otherwise it will separate from the other ingredients. Another point I’d like to bring up here is recipes are a “guideline” which means you have the option to adjust it to your liking. Isn’t that wonderful! I know, I’m being sarcastic but seriously, you can adjust it…
