Coconut Rice Recipe • An Aromatic Side Dish! | Club Foody

Depending on the main dish, I often like pairing it with rice. It can be just plain or flavored. There ‘s African Jollof Rice, Spanish Rice, Middle Eastern Pilau Rice, Spanakorizo from Greece, Saffron Rice, Dirty Rice, Mexican Rice, Lebanese Mujadara, Herb & Butter Rice 🍃🧈, and many more.

One that is always a hit is my Coconut Rice! This side dish is just fabulous! Its rich, creamy texture combined with its sweet and fragrant aroma pairs well with many proteins as well as curries and stews. This is restaurant quality 🏆.

In the video, I started by toasting the coconut flakes. When the camera 🎥 is not in play and the rice is simmering, this is when I toast them. Tossing constantly, it takes 5 minutes to turn the flakes into a beautiful golden color. These enhance the dish by improving the flavor, adding more aroma and crunch.

The rest is quite simple.
A full-fat can of unsweetened coconut milk, water 💦, granulated sugar, and salt is added to the saucepan before bringing to a low boil. From there, the rinsed and well-drained rice is dropped into the mixture, brought to a full boil, covered, and cooked for 17 minutes on low or until the liquid is absorbed.

I mentioned above a ‘full-fat’ coconut milk. Don’t use the refrigerated coconut milk sold in cartons. It’s watered down and is meant to be drunk, added to coffee ☕, or poured over cereals. Of course, cream of coconut is extremely sweet and syrupy and is used in desserts or cocktails like piña coladas.

When I make my Coconut Rice, I add a small amount of granulated sugar. The reasons are that the sugar boosts the coconut 🥥 flavor and also balances the savory profile. On the other hand, you can omit the sugar when serving it with a sweet sauce.

When the rice is cooked and you lift the lid, don’t panic! There will be some coconut cream 🥛 on the surface. As the fat separates from the water during the cooking process, the water will be absorbed while a small amount of cream will rise to the top. Simply fluff the rice until redistributed evenly.

This aromatic Coconut Rice 🍚 is a lovely recipe to try soon! It pairs perfectly with grilled meats, fish, seafood, chicken, etc., as well as curries and stews. Fluffy and fragrant, this side dish takes only 30 minutes and will certainly elevate everyday meals.
Bon Appétit! 🍽
