Cherry Simple Syrup Recipe - Tips & Tricks | Club Foody

Simple Syrup is definitely a must for your bar but besides being used to make cocktails, it’s also a great condiment for baking and cooking. As the name suggests, it’s simple to make – water and granulated sugar, that’s all! Besides the basic one, there is a long list of different syrup flavors that can be made like Ginger Syrup, Mint Syrup, Thai Chile Syrup, Blueberry Syrup, Rosemary, Mango, Lime and on and on including this featured one… Cherry Simple Syrup!

I love using it to enhance Vodka & Soda, in the making of my Canard aux Montmorency, in Cherry Lemonade, one of my summer favorites… Cherry Cola Float, or even Cherry Popsicle. It can turn into a nice glaze for pork like tenderloin and chops, lamb, ham, chicken, etc.

I’m very particular when it comes to cherries and the kind I use is Bing. They’re dark, juicy and delicious. They give exactly the right taste to my Cherry Simple Syrup. Here’s the recipe…

Cherry Simple Syrup ingredients…
– 1/2 cup fresh or frozen cherries, pitted and halved
– 1/2 cup water
– 1/4 cup granulated sugar, or as needed (see Footnote)

Combine all the ingredients in a medium pot over medium-high heat. As soon as it starts simmering, reduce the heat to medium-low and let the mixture simmer gently for 20 minutes, breaking up the cherries with the tip of a wooden spoon, a potato masher or even a meat chopper.

When cooking time is up, remove from the heat and let it rest for 10 minutes.

Transfer the mixture to a fine sieve sitting over a bowl and with the back of a spoon, press down on the fruit to extract as much juice as possible. Store the syrup in an airtight container and transfer to the fridge until ready to use. Makes about 1/2 cup.

Make this Cherry Simple Syrup while Bing cherries are in season. Stored in the refrigerator, it keeps very well for months. Add another dimension to your cocktails, savory recipes, desserts, over pancakes or when you want to add this amazing fruit to a dish…
Bon Appétit!

Footnote: Simple syrup usually has the same amount of sugar and water. In this case, because I use Bing Cherries and they’re so sweet, I reduce the amount of sugar used.

Spicy Strawberry Orange Sauce Recipe • A Must Have! | Club Foody

When it comes to sauces, I have a vast repertoire of them. I have one for everything. A sauce can elevate a protein to a new level of yumminess. Sauces enhance dishes and for any home cook, it’s important to have a lot to choose from. Besides the famous 5 French Mother Sauces that I’ve been posting one by one over the last 6 years, there are other ones that are just fabulous like Sweet Chili, Romesco, Indonesian Peanut, Seafood Cocktail, Gyoza, Mushrooms, and many more. Now let’s add this featured one to the list… my Spicy Strawberry Orange Sauce!

This recipe is incredible! It goes so well with many proteins like chicken, pork, lamb and even fish and seafood! These berries are mostly found in desserts or sweet treats although I do use them for my Strawberry Butter and Strawberry Salad. It’s very easy to make and a great way to enjoy them.

I created this recipe because I had too many strawberries in the fridge and although I used my Berries • How to Keep Them Longer trick, I knew I had to roll up my sleeves and come up with something. That night, we were having wings and I thought it would be amazing to make a “new” sauce for them. Tada! Let’s make a Spicy Strawberry Orange Sauce!

Like most sauces, this one is pretty straight forward. With only 8 ingredients, this scrumptious recipe takes just 35 minutes to make. One of the ingredients is my Strawberry Jam which has great flavor – you know that homemade is better than store bought plus there are no preservatives and artificial sweeteners.

Berry season is here and besides making a nice milkshake with them or ice cream, you should definitely give this Spicy Strawberry Orange Sauce a try this summer. It’s so delicious and an original creation to add to your folder. After you taste it, this will become your go-to summer sauce recipe…

Philly Cheesesteak Recipe • A Tasty American Sandwich! | Club Foody

A sandwich! It’s probably the most convenient finger food there is. It can be enjoyed for lunch as well as dinner along with a salad, fries or simply by itself. There are so many different ways to prepare them like with meat, poultry, seafood, fish, or just with tomatoes, eggs, and so on.

The United States has a few delicious ones. I think of a Pimento Cheese Sandwich they serve at Augusta, the New Orleans’ Shrimp Po` Boy or Muffaletta Sandwich, Lobster Rolls from Maine, the famous Reuben Sandwich from New York, the Denver Omelet or this one… Philly Cheesesteak!

David and I enjoy this American classic a lot. It’s made with eye of round roast – ribeye can be another alternative -, caramelized onions and sautéed peppers & mushrooms then topped with melted cheese on a hoagie bun. This is totally an OMG!

In the video, I have my thin slices of beef but normally, I have them paper thin. The best way to really have them super thin is to cover the piece of meat with plastic wrap or foil and freeze it for 45 minutes. This will make the task easier unless you have a good butcher that you can ask to slice it for you.

I like to marinate the meat just to revive it. Soaking the meat in a herb & spice mixture with beef broth helps to re-tenderize the meat. It brings back the moisture and adds more flavor to the beef. When it’s time to warm up the beef slices, I also pour the marinade in the skillet and cover so it creates lots of steam just like when I make my Leftover Steak Fajitas. When you bite into your Philly Cheesesteak sandwich, you won’t believe how moist and tender the meat is.

When I make my French Onion Soup Gratinée, it takes forever to caramelize the onions. Here we’re making a sandwich so by starting on medium heat, coating them nicely with the oil and clarified butter then reducing the heat down to medium-low, it expedites the process as long as we stir them often so they get soft without browning.

Let’s talk about the cheese. I know that the “traditional” recipe calls for provolone. It melts nicely… that’s all I have to say. On the other hand, I’m all about flavors and in my opinion, this cheese doesn’t do justice to my taste buds therefore I prefer using Gouda. Like I mention often, recipes can be modified to your liking and this is exactly what I do by not using provolone.

With moist and tender thinly sliced roast beef, caramelized onions and sautéed vegetables along with melted Gouda, this Philly Cheesesteak is a great comfort food at its best! It’s a delicious way to use up your leftover meat. Enjoy this classic American sandwich anytime.

Clam Casino Spread Recipe • A Tasty Spin on a Classic! | Club Foody

When you have people over for dinner, it’s always nice to serve them an appetizer prior to the main course and the same goes for when your friends or family stop by in the afternoon or evening… something to munch on, right!

Throughout my “foody” years, I’ve made a ton of dip and spread recipes. I always try to do something different each time: from Muhammara, Roasted Red Pepper Hummus to Pumpernickel Spinach Dip, Jalapeño Bacon Cheese Dip, Beer Cheese Dip which can be turned into a spread, and so on including this tasty featured one… Clam Casino Spread!

This is a tasty spin on an old classic which is the famous Clams Casino served in their half shells. Both recipes are easy to make. What makes the Clam Casino Spread more appealing is it’s less fancy… something you want to serve during a casual setting. Although the ingredients are similar, there’s still a variation between them.

Bacon is one of the common ingredients and I prefer using my oven method. Why? Because there’s no mess! If you prefer cooking the slices on the stove top, by all means, go ahead. When cooked (either method), discard most of the fat but keep about 1 tablespoon to sauté the veggies. When it’s time to serve, try to keep some crumbled bacon for garnish…

As with any respectable spread, cheese is a big component. In this recipe, I use one package of light cream cheese. Many recipes out there call for 2… I prefer to stick to one and add some sour cream. It makes the spread more “spreadable”.

Served with crackers of your choice (I like water crackers), pretzels, tortilla chips or even vegetable sticks, this Clam Casino Spread is a crowd pleaser! It’s the perfect dish to serve at your next dinner party or other gatherings with your friends. Not only easy to make, it can be made ahead of time and kept in the refrigerator until needed…

Greek Salad Dressing Recipe • Tasty & Versatile! | Club Foody

When the weather warms up, it seems like everyone is happier. We want to be out and about, enjoy the outdoors, being more physically active and eat healthier. Salads tend to be eaten more so during the warmer months. I totally understand why with the abundance of fresh produce during that time.

Depending on the salads, we might use vinaigrettes or dressings. So we eat better and healthier but some will go ahead and buy these condiments at the store instead of making them from scratch. It takes a few minutes to make homemade and they definitely taste better than the commercial ones. A few more good reasons to make them in the comfort of your kitchen is you’ll be saving a lot of money plus you’re in control of the ingredients – less salt, add more zip to it, etc. Also the ingredients are fresh and there are no preservatives or artificial colors & flavors… healthy bonus!

I have many of them to choose from like my Catalina Dressing, Roasted Red Pepper Parmesan Vinaigrette, Thousand Island Dressing, Italian Vinaigrette, Russian Dressing, and many more including this featured one… Greek Salad Dressing!

This dressing is so earthy as well as wholesome! With great ingredients, you can enjoy this flavorful condiment anytime you want! When making this recipe, I use my Greek seasoning. Same thing here… By making your own spice blend from scratch, you can recycle your spices before they go off plus there’s more intensity in the blend without the insane amount of salt added in the commercial ones. It’s a win-win situation all the way!

For my dressings or vinaigrettes, I like to make them in a 2-cup measuring cup because when it’s time to serve, it’s easier to pour over the salad. Of course, if you have guests over, I’m sure you’ll be transferring this healthy Greek Salad Dressing into a decent serving boat.

I love eating salads because they’re so good for us. With the appropriate condiment like this Greek Salad Dressing, it will make this healthy meal even healthier. Besides greens, I use it on my Greek Tuna Pasta Salad as well as my regular Greek Salad. Tasty and versatile, this condiment can also be used as a marinade for pork or chicken…
Bon Appétit!

Baked Salmon with Dill Sauce Recipe • Quick, Easy & Tasty! | Club Food

Who doesn’t like a 30 minute or less meal? Of course we all do! With our crazy busy schedules, many nights it can be a challenge when it comes to preparing dinner. I have a wide variety of delicious recipes like my Zucchini Pork Penne, Orzo with Chicken & Asiago, Chipotle Chicken Tortilla Pizza, Prawn Saganaki, and many more including a bunch of salads and sandwiches.

One protein that is usually pretty quick to make is fish. I’m thinking of Mediterranean Fish Fillet with Tapenade, Pacific Coast Salmon on the BBQ, Panko Breaded Fish Fillet, Grilled Fish Tacos, Red Snapper en Papillote, Sole Almondine or Meunière, Tarragon Limoncello Halibut, Filet-O-Fish Sandwich, etc. as well as this featured one… Baked Salmon with Dill Sauce!

This recipe is just fabulous! I season the fillet with lemon pepper and salt then transfer it to the oven for 15 minutes although it can also be grilled on the BBQ. While it’s baking, I make the sauce… see, that’s how fast it is. It’s a nice recipe to enjoy when time is in short supply or when we just feel lazy and don’t want to spend too much time prepping and cooking.

Of course, what really makes this dish is the sauce. I use a few ingredients including Miracle Whip. I’m always surprised when people lift their noses to this particular ingredient. Yes, mayo is good, but Miracle Whip adds some extra zip to the recipe. Can you make it and substitute mayo? Sure but don’t blame me when your Baked Salmon with Dill Sauce still needs more oomph…

Flaky, light and so flavorful, this is the perfect quick recipe to make. I like to serve my Baked Salmon with Dill Sauce along with Herb & Butter Rice, some steamed vegetables and a few lemon wedges… yummy!
