I enjoy canning and when I start to run out of my preserves, I roll up my sleeves (that depends on which season it is) and make a new batch. It’s a constant rotation of great easy recipes like my Bread & Butter Pickles, Mint Jelly, Pickled Ginger, Strawberry Jam with Orange Zest, Spicy Red Pepper Jelly and Black & Blue Jam… just to name a few.

Today, I’m sharing one of my all-time favorites… Citrus Marmalade! I enjoy spreading it on my toast, bagel or croissant in the morning – I’m getting better at having breakfast more often… I also use this fruit preserve for other recipes like my Sweet & Spicy French Toast, Marmalade Popsicles, Marmalade Glazed Ostrich, Easy Marmalade Dressing, and many more…

This flavorful Citrus Marmalade has just the right balance of sweetness and tartness. With a beautiful mix of citrus fruits, juices and sugar, this delicious jam is simply delightful…

Homemade Dijonnaise Recipe • Great Versatile Condiment! | Club Foody

Living in Toronto, I was used to cooking with certain ingredients but since moving to the West Coast, there are certain ones that can be hard to find or even worse… not available at all! Tired of feeling like I was looking for a needle in a hay stack, is when I decided to make them myself such as Red Jalapeño Peppers Stuffed with Cream Cheese & Feta, Merguez, Creton, Homemade Mixed Spice ~ Épices Mélangées, Tourtière as well as my Homemade Dijonnaise!

I never thought that making this condiment from scratch was so easy. The flavor is definitely much better than the commercial ones. It elevates your recipes just from the freshness of the ingredients especially when making your Mayonnaise from scratch. Like my Chutney, Sweet & Savory Homemade Ketchup and others, this Homemade Dijonnaise is another great condiment recipe…

I use my Homemade Dijonnaise recipe in many dishes such as my Caesar Salad, Creamy Bacon Potato Salad, Chicken à la Dijonnaise, sauce for pork, Deviled Eggs, and many more. It’s also a nice ingredient for marinades and salads dressings or even using it as a sandwich spread.

You don’t have to live in the middle of Timbuktu to force yourself to make this lovely condiment. It’s so worth it to take that little extra step and make your own. It’s a great condiment to have on hand because it’s so versatile plus you’ll be saving a lot of money by making it from scratch. I’m positive you’ll be happy with the results of this fresh and creamy Homemade Dijonnaise…

Extract the Most Juice from Citrus Fruits • Tips & Tricks | Club Foody

All year round there are citrus fruits in our kitchen. One of the first things I drink in the morning is freshly squeezed lemon juice in hot water… it’s so refreshing. From savory to sweet, in many of my recipes I use citrus juice which gives such a great flavor to the dish. I also use some in beverages such as my Homemade Lemonade.

Today I’m not reinventing the wheel! We all know how to extract juice but if you want to Extract the Most Juice from Citrus Fruits, here are some kitchen tricks for you…
  • First, the fruit has to be at room temperature.
  • A method I like to use is placing it in a bowl of hot water from the tap (not boiling) and let it sit for about 1 minute.
  • Another one is the microwave. Place your citrus fruit in a microwave-safe bowl and microwave for 15 to 30 seconds on High (depending on the size of the fruit; i.e. lime is about 15, lemon between 20 to 25 and orange about 25 to 30 seconds). This is great especially when making Key Lime Pie and you need to extract as much juice as possible.
  • The fruit can also be rolled back and forth on the counter, applying heavy pressure with the heel of your hand. This helps to burst the segments inside. I like to use this classic technique if I just need a little bit of juice and don’t use a juicer.
  • Of course, here’s the obvious method… a juicer! There are three to choose from; one is a manual citrus juicer with the reamer. There’s the hand held press juicer and the other is a power juicer. You can find them in the “SHOP” section of Club Foody.
  • And last but not least is using a fork on the flesh of half of fruit and moving back and fork twisting the utensil.

When cooking, you definitely want to extract the most juice from citrus fruits and with these tricks, you’ll definitely be able to get more out of it!

Croque-monsieur Montréal Style • French Sandwich | Club Foody

A sandwich is a sandwich you might say but depending on which country you visit, each has their own favorites. For example if you land in Cuba, you’ll have to taste their Medianoche or the famous Tripleta in Puerto Rico. When going to Italian bars, don’t be surprised to see Tramezzino served while enjoying a fine glass of “vino rosso”. In Asia, there’s the popular Báng mì from Vietnam, Katsu in Japan or Rou jia mo in China.

I can go on and on but if we focus on one specific country such as France, there are a few famous ones you’ll find like Croque-monsieur or Croque–madame and Jambon beurre. There’s also a Club Foody twist on one of them… my Croque-monsieur Montréal Style!

What’s different from the “original” one? Not much except I add one more deli meat; Montréal smoked meat… yeah baby! Also some chef’s use butter… I use béchamel sauce – inside and outside… (you’ll understand when watching the video). I know, I know! It’s not conventional and that’s why I said that I put a spin on this classic…

This Croque-monsieur Montréal Style is so flavorful and with the added ingredients, it makes this sandwich taste even better. When the weather is pretty warm and you don’t feel like cooking a complicated meal, this is the perfect recipe for you. I like to serve it with a nice salad and drizzle on some lovely homemade vinaigrette.

This summer don’t compromise on flavor and try this Croque-monsieur Montréal Style sandwich. As simple as it may sound, you’ll be pleasantly surprised by its flavor and understand why this is a popular item at most of the French Bistro’s in Paris, Québec or… at Club Foody (now I have to open up a resto…)
Bon Appétit!

Piña Colada Ice Cream • Tropical Delight | Club Foody

When we go on vacation to tropical destinations, we like trying cocktails that we would have never had back home such as Mai Tai, Piña Colada, Blue Hawaii, Singapore Sling, etc. They are delicious, packed with flavor and set the tone for a relaxing and fun vacation!

I like them all and although I enjoy them when we are away, back home I usually drink the same old stuff. To break the pattern, I wanted to take one of them and create a recipe with it. The one I chose was Piña Colada because that’s the one I’d most likely end up drinking when I’m at a tropical destination. After many, many, many – did I mention “many” – attempts, I finally got it right!

In this episode, I’m sharing my Piña Colada Ice Cream with you! Well, I can go on and on about how tasty, creamy, velvety and beautiful this ice cream is, which by the way it is, but the most important factor I really wanted to share is this cold treat tastes exactly like a Piña Colada!

This original cold treat is perfect on hot summer days. It is also a delicious change when entertaining. Instead of the same old flavors of a banana split which are chocolate-strawberry-vanilla, make it different with this Piña Colada Ice cream and other original flavors like my Passion Fruit Ice Cream recipe…
Bon Appétit!

Note: In this recipe, I added rum so perhaps you want to reconsider serving this ice cream to minors.

Scallop Pineapple Ceviche • Light and Flavorful! | Club Foody

Who doesn’t like eating outside on a patio… certainly not me! That is one thing about summer that I really adore. The fresh air with a warm calm breeze, watching the sunset go down and just enjoying the weather while eating… priceless! To me, having a meal outside is a form of relaxation that I really appreciate.

When it’s nice outside and people are eating on a patio, grilling foods on the barbecue is quite obvious. There’s no need to start the oven inside and heat up the house. Burgers, hot dogs, steaks, chicken, kebabs, and so on are the popular ones we’ll all be enjoying this season but sometimes it’s nice to have a change. Something light, fresh and very tasty… something like a ceviche…

In the past, I shared my delicious Ceviche de Pescado (Fish Ceviche) with you and this time, here’s another one of my creations… my Scallop Pineapple Ceviche! Oh my! This dish is so flavorful. When I made this recipe the first time, I wanted to achieve the perfect harmony of heat and slightly sweet with a little tang in the background without taking away from the delicate flavor of the scallops. It was bang on!

Another reason why I love serving this Scallop Pineapple Ceviche to friends and family is because it doesn’t require any cooking. Are the scallops raw? NO… absolutely not! When submerging the seafood in citrus juice, the acidity will actually cook the scallops and turn the flesh opaque and firm. This method has been used since colonial times.

Heat kills bacteria whereas citric acid won’t, so it’s very and I mean very important to use fresh scallops. If you’re not sure about how fresh they are, quickly “blanch” the seafood for 90 seconds.

This Scallop Pineapple Ceviche is the perfect dish to make for your guests during the hot summer months. It’s a great appetizer to serve along with tortilla chips. It can also be a main course if you want to enjoy a light meal… out on the patio with a glass of white wine – definitely Zen!
Bon Appétit!

Vietnamese Iced Coffee • Cold and Creamy Coffee! | Club Foody

I love my coffee. After drinking a tall glass of water then hot water with freshly squeezed lemon juice, I move on to having coffee. I can drink it until mid-afternoon. It keeps me going throughout the day with all the tasks I have to do. During the summer, it’s another story. My coffee consumption reduces considerably especially when it’s hot outside unless I make myself a cold one…

Here in Canada, we have a popular fast food chain called Tim Hortons that makes Iced Coffee which is quite popular during the summer months. I really enjoy it but there’s another one that I came across years ago when I was living in Toronto that I find even more delicious and it’s Vietnamese Iced Coffee!

There are two different kinds of Vietnamese Iced Coffee but the one I’m featuring in this episode is called “cà phê sữa đá” which is made with sweetened condensed milk. The other one is made without the milk, making it obviously less sweet.

It’s very simple to make but what you need is called a “phin cà phê” which is basically a coffee filter. The alternative method that I will show you in the video is using a French press. I find that either one works perfectly well for Vietnamese Iced Coffee.

Now let’s talk about the actual coffee. You can use espresso or any other preferred coffee grains. I prefer using Arabica coffee also known as Arabian coffee but as I said use what you like.

This rich, creamy, cold beverage is great on hot summer days. It’s so easy to make and you’ll be amazed with the results. This Vietnamese Iced Coffee is something you definitely have to try this season… Another great cold beverage recipes you should also try is my Lemon Iced Tea, Agua de Jamaica, and Homemade Lemonade.
Bon Appétit!

Pickled Ginger • aka Sushi Ginger or Gari... | Club Foody

Do you enjoy sushi or sashimi? If you do and like to order a few different kinds from your local Japanese restaurant then you certainly need an important Japanese condiment that will cleanse your palate between eating different types. It is called “gari” also known as sushi ginger or Pickled Ginger!

Technically “gari” is more of a pale yellow color versus pink unless you get your hands on some young ginger that has pink shoot which will tint the pickles naturally. Using young ginger is preferable because the flesh is tender and the ginger is sweeter.

Unless you’re at the Asian supermarket at the right time, your chances of getting some young ginger is pretty slim. Do you stop making Pickled Ginger from scratch if you cannot find young ginger? Of course not… but you might have to add a special ingredient.

When I make “gari” from scratch, I add an ingredient that will make my pickled ginger pink… radishes! I slice them as thin as my mature ginger and place them at the bottom of the jar. The secret is to leave them long enough to color and tint the ginger and then remove them so their flavor doesn’t sabotage the taste of the ginger. I’d say no longer than 12 hours…

It is up to you to substitute food coloring for the radishes. You can still use a natural food coloring like the one in my video that I presented a few months ago or go with the commercial variety. I personally don’t use the manufactured food coloring, but you’re in charge of your own “gari”…

A couple more factors why you should be making Pickled Ginger is you’ll be saving money but also ginger has some anti-microbial properties which are great when eating raw food like sushi and sashimi. Next time you make or order sushi/sashimi, or decide to make my Asian Chicken Salad recipe make this homemade palate cleanser. It’s a super easy recipe that I’m sure you love!

Edible Cheese Bowls Recipe • A Fun Way to Enjoy Salad! | Club Foody

I’ve loved salads since childhood. My parents made sure to serve us salads as a side a few times a week… Maybe that’s why I enjoy them so much. I was surprised when my cousins or other kids didn’t like salads. I couldn’t understand why they didn’t like the freshness and colorful ingredients.

One of my aunts had a few picky eaters and to remedy that problem, she started making edible cheese bowls to make salads more interesting. This is where I got the recipe from… well not the exact recipe as I had to put my own little touch to it, of course!

The difference between my Edible Cheese Bowls and the ones from my aunts is I like to add a few extra ingredients depending on my mood. One day I can make them “garlicky” and another give an Italian flair. The flavors for my bowls also depend on the type of salad I’ll be serving… that makes sense, right? Also I like to change the kind of cheese; either I use sharp Cheddar, Gruyère or Monterey Jack…

In the video, I only make one bowl because I’m using a large tortilla bowl maker but if you use a regular cereal bowl with a flat bottom (no ridges), then you could make 2 or more bowls with this recipe depending on the cheese density you want your bowls to be. Also I mention “shredded not grated” because the cheese has to be coarse in order to make these bowls. To shred cheese, use the big holes on your cheese grater. The cooking time I prefer is around 8 minutes but if you want your cheese bowls darker, leave them for a minute or two.

Here’s some food trivia…
Did you know that edible tableware has been around since the 16th century? That’s right! It was considered a sign of wealth… hmmm, interesting!

I like making edible cheese bowls… they’re fun plus I’m in love with cheese! Another reason why you should make them is if you are entertaining a large group of guests you might run out of bowls. Now with this recipe, you’ll never be short of “bowls”… but come to think of it, you might be short of cheese… lol!
Bon Appétit!
