Chicken Nuggets Recipe • Tender & Delicious Finger Food! | Club Foody

Who wants to spend a lot of time in the kitchen cooking when it’s hot outside? Certainly not me! I use the barbecue and if I have to cook anything in the kitchen, it has to be fast. There’s a vast variety of “less than 30 minute” recipes that I’ve already posted like Baked Salmon with Dill Sauce, Croque-madame, Steak Oscar, Cauliflower Fried Rice, Salade Lyonnaise, Veal Marsala, Maple Ginger Scallops, etc.

When it comes to chicken, I have so many to choose from: Sweet Chili Chicken Bites, Cashew Chicken, Club Sandwich with Chipotle Mayo, Japanese Chicken Soba Noodles, Chicken (or Turkey) à la King, Chicken in Creamy Jalapeño Cheese Sauce, Chicken Chop Suey, Orzo with Chicken & Asiago, and many more including this featured one… Chicken Nuggets!

Yeah, yeah, you can go to McDonald’s and order some… I know, it’s faster but if you want to make good quality ones packed with deliciousness, this is the recipe! With a flavorful batter, this dish can be made in less than 25 minutes. The prepping is what takes time. After your mise en place is done, cooking takes only 4 minutes, that’s all!

I prefer my Chicken Nuggets to any fast food chains out there! My batter is so tasty. It’s made with great ingredients like seasoned Panko breadcrumbs, hot sauce, smoked paprika, garlic & onion powder, and others. Also, I know my meat is freshly cut and hasn’t been sitting there for a while… that alone gives me a good reason to stay away from those food chains and make them at home.

These Chicken Nuggets is one of my go-to recipes especially if I’m running out of time. Served with homemade French Fries and my delicious Honey Mustard Dipping Sauce, this is a great meal that everyone in your family will enjoy… If you enjoy McDo, I have another recipe that is better than theirs as well and it’s my homemade Filet-O-Fish Sandwich!
Bon Appétit!

How to Store Celery for Weeks - Tips & Tricks | Club Foody

There’s one thing that drives me “nuts”… wasting food! With inflation, the cost of food went up dramatically. David and I are not independently wealthy and I always try to salvage what’s left in the fridge by creating recipes or freezing it. As much as I try to not throw food in the garbage, I sometimes have to do it.

There’s a vegetable that costs less money when buying it whole instead of just the ribs and after trying many ways to keep it longer like separating the ribs and plunging them in a long Tupperware container filled with water, I finally got it! In this episode of How to Store Celery for Weeks, you’ll be surprised how long it lasts!

I’ve been doing it for a couple decades therefore it didn’t dawn on me to share it until one of my girlfriends asked me what was in my crisper. I told her and right away her reaction was – “no way”! She told me that hers never last more than 5 days before the ribs become limp.

How to Store Celery for Weeks is so easy. After drying them with paper towels to remove any moisture, they need to be wrapped tightly in aluminum foil, unwashed and uncut, and stored back in the crisper as usual. That way, the celery stalk maintains its freshness for 3 to 4 weeks. Now if the celery ribs are washed and cut into pieces, I rely on the water method by putting them in water – and of course, back in the fridge.

How does it work? Simple… Every vegetable emits ethylene gas and this is how they ripen faster. For an example, to accelerate avocado ripening, place it in a brown paper bag with a banana… the same applies with so many other fruits & vegetables. Now to let the gas escape from the celery and keep it fresh at the same time, aluminum foil is the solution.

I think this vegetable is underrated. It’s used in so many recipes and it’s certainly a must for home chefs. Now with this quick & easy How to Store Celery for Weeks trick, you’ll be happy to unwrap it and find it fresh like the day you bought it. After getting some, make sure to rewrap it tightly each time. This is another easy way to save money…

Watermelon Strawberry Smoothie Recipe • Quick & Tasty! | Club Foody

We all know by now that drinking plenty of water is very good for us and also important especially when it’s hot and humid outside or when working out because it regulates our body temperature. What I like to do first thing in the morning is to press a full lemon in a very large cup (trust me, my cup is oversized), fill it up with water and warm it up in the microwave. It’s a good way to rehydrate after fasting overnight. Throughout the day, I drink more water.

As much as we have to drink between 2 ½ to 4 liters of water per day for several health reasons, it gets boring. Another healthy beverage that I like to incorporate in our diet is a smoothie! Most recipes out there are loaded with vitamins, nutrients, fibers, etc. Of course, one a day by itself replacing a meal is sufficient otherwise we might have too many calories as well as elevating our blood sugar.

I have many smoothie recipes like Tropical Sunshine, Berry Fusion, Pomegranate Avocado Detox, Polynesian, Green Smoothie, Kiwi Raspberry, Caribbean, and many more including this amazing one… Watermelon Strawberry Smoothie!

This is so refreshing and quite tasty! The combination of these two fruits is perfect! Like any other smoothie, it’s super quick and easy to make. To this, I add vanilla yogurt and the brand I really enjoy is Activia® – no, nobody pays me for saying that! Also depending on how sweet the fruits are, I like to add about a tablespoon of agave nectar to my Watermelon Strawberry Smoothie if needed. You can use honey but I find agave lighter.

Brighten up your mornings by making this delicious Watermelon Strawberry Smoothie! The flavor is so “summery”! With only 3 (or 4) ingredients, this is the perfect light beverage to start your day but nothing is stopping you from enjoying it for a mid-afternoon treat!
Cheers!

Fig Jam Two Ways Recipes • A Tasty & Versatile Condiment! | Club Foody

Decades ago, I started canning because I was craving some of my parents’ recipes like Sweet & Savory Ketchup, Bread & Butter Pickles, Homemade Sweet Relish, and others. I was only making savory recipes at first as my parents never made sweet jams. When I began feeling comfortable with the canning process, I slowly ventured into sweet recipes.

My first “sweet” recipe was my Fig Jam Two Ways! I wanted to make my Duck Breasts with a nice savory sauce and the idea of making a fig balsamic for it sounded amazing! As I never made it before, I only used 1 pound in case it needed some tweaking… it was perfect the first time! Left with another pound, I decided to simply make a regular jam. Voilà! I broke into sweet jam making!

These Fig Jam Two Ways recipes are incredible! I love this fruit and having the choice to go either sweet or savory is even more attractive. I love my Strawberry, Apricot, Black & Blue, Raspberry, and Plum Jam in the morning but this “sweet” one is a delicious change. My Fig Newton Cookies filling can be substituted with the regular jam recipe, bonus! Use the balsamic one to make a nice glaze or a sauce for your protein. Sweet or savory goes very well as a topping for goat cheese on crostini.

These two recipes are pretty much the same… they differ slightly with the ingredients and also the cooking time. The regular jam takes 5 to 10 minutes longer to cook versus the savory one which takes only 20 minutes. The processing time in a boiling water bath is 10 minutes and the resting time is 12 hours for both. Each recipe yields 2 jars of 250 ml.

Fig Jam Two Ways are yummy and easy recipes to enjoy this fruit! With one sweet and one savory jam, you have a choice of condiments to pick from. This is a tasty change from your everyday regular jam…

Grilled Shrimp Summer Salad Recipe • Summer on a Plate! | Club Foody

Living here in British Columbia, we can pretty much barbecue all year round but obviously more so during the warm weather! I love the smell of food grilling on the “barbie”. Just that alone triggers my appetite plus the last thing I want is to warm up my kitchen in the middle of the summer.

Another thing in our house that goes on annually, are salads… I love making them! It’s a healthy way to add some good nutrients & vitamins into our diet. Many people think that salads are boring… I’m the opposite. I have such a delicious selection of recipes to choose from like Jicama Mango Pepper, Crab Louie, Spring Pea, Julienne, Caesar, Salade Lyonnaise, Waldorf, Bacon Wedge, and so on.

During the summer time, I have a few that are always on my list like Moroccan Potato or Creamy Bacon Potato, my Greek Tuna Pasta or the Classic Pasta, Cran-Apricot California Salad, Creamy Coleslaw, Mixed Tomato, Tabbouleh, etc. Another recipe perfect for this season is my Grilled Shrimp Summer Salad!

This salad is so flavorful! There’s cucumber, red pepper, onion, mango, avocado and of course, prawns! I also make a lovely dressing for it using my Sweet Chili Sauce recipe. Before the shrimp go on the BBQ, I brush on a flavorful basting sauce made with butter, my homemade Fish Rub and hot sauce which I’m particular about it – I like to use Frank’s Chili Lime which gives a beautiful taste.

Many of the ingredients listed for the Grilled Shrimp Summer Salad can be substituted. The lettuce can be green leaf, Romaine, iceberg or even Boston. For the dressing, when it comes to the grapeseed oil any other flavorless one can replace it like Canola, Safflower, etc. I use honey but agave nectar is another delicious alternative. I add dry roasted peanuts to my salad but if there is someone in your family who’s allergic, just omit them, it’s not a big deal!

One ingredient that needs special attention is avocado. After prepping it and cutting it into cubes, it’s important to toss them with ½ tablespoon of freshly squeezed lime juice to prevent them from browning. I’m so used to doing it that I forgot to film it but please don’t forget otherwise the presentation won’t be as appealing.

This mouthwatering Grilled Shrimp Summer Salad is so colorful, vibrant and very healthy. I serve it as a meal and believe me, it’s plenty! If I have to describe this dish, I would say “it’s summer on a plate!”

Tarator Soup Recipe • Tasty Cold Cucumber Soup! | Club Foody

When the mercury rises above our comfort levels, most of us don’t really feel like eating anything heavy. We usually opt for either a salad or a sandwich which is fine. When it’s hot outside, I like to make soups… of course not hot but cold ones. I prep it the night before or early that morning and let it chill as long as possible. Later on or the next day, dinner is ready!

Throughout the years, I’ve been sharing many “cold” soups like Chilled Leek & Fennel Soup, Spanish Gazpacho, Chilled Avocado Soup, Sopa Ajoblanco • White Gazpacho, and others. Now, here’s another delicious one… my version of Tarator Soup!

You’re wondering what it is, right? Originally from Bulgaria, this is a soup made with yogurt, cucumber cut into very small pieces, garlic, fresh chopped dill, crushed walnuts, and water. Depending on the region, some make it even less elaborate by substituting yogurt for water and vinegar.

As you know me, I like to elevate my dishes. The first thing I replaced was water. Do you know what water tastes like? Nothing! It tastes nothing therefore I use vegetable broth instead… much better! I also added freshly squeezed lemon juice which brings some freshness to the Tarator Soup. Then it needed a “je ne sais quoi” so I threw in a little bit of red onions… not too much so it doesn’t take over. Last but not least, I emulsified walnut oil as well as grapeseed oil to give more depth to it. When I was done with it, it was awesome! It has nice layers of flavor in perfect harmony!

This is an incredibly refreshing soup for this season. It takes less than 15 minutes to prepare and then simply chill it for 16 to 24 hours. When it’s time to serve the Tarator Soup, garnish it with some chopped toasted walnut, a little dill and a few drops of walnut oil for a gorgeous presentation. Voilà, you’ve got yourself a nice light meal to enjoy during the hot summer months!
Bon Appétit!
