Homemade Chorizo - A Great Mexican Sausage! | Club Foody


I’m pretty adventurous in the kitchen but one thing I never imagined making at home was sausages. The reason why I started making them is because one year I put the meat grinder attachment for my stand mixer that also included a sausage stuffer on my Christmas list and… TADA! Santa left it under the tree…
 
For the next few months, I was staring at it and wasn’t too sure how to proceed. I went to my butcher, asked him how to make links and after a quick “do this and that”, I went home with meat and casings.
 
On my 1st attempt, the sausages were good but not excellent. They were a little weak in the flavor department. The second time I made them, I already got the hang of it which means that everyone can make sausages at home…
 
Besides andouille, bratwurst, merguez, saveloy, garlic, chipolata, hot Italian, kielbasa, and many more, there is one kind that I like to make… my Homemade Chorizo! Reasonably spicy and packed with flavor, this meat is a great ingredient to add to many recipes such as my Soufflé Mexican Omelet, Spanish Paella, etc.
 
This Homemade Chorizo, like the others, is easy to make. The only thing you have to keep in mind is don’t be shy when it comes to seasoning as the meat will absorb a lot of the flavor from the spices, making them less flavorful, so use more than you think you should. If you want it hotter, use dried guajillo chile instead of pasilla-ancho and add some cayenne pepper… that should do it!
 
As BBQ season is almost here, this is a good time to start stocking up on links, patties or simply ground sausage. How cool would it be to brag about your Homemade Chorizo to your friends at your next backyard party…

Mango Chutney Recipe - Tasty, Sweet & Tangy Condiment! | Club Foody


When I moved to Toronto, I was thrilled by the cultural diversity. I had recently sold both my business and my house in Hull, Québec, so it was interesting to discover the GTA. Through my immersion at my new location, I met some awesome people and Tony was one of them.
 
I remember when Tony first approached me. I was sitting at the outdoor patio of a very popular restaurant located in Yorkville. I was waiting for the server to come and take my order. Elegantly dressed, Tony walked by my table and sat a couple tables away, facing me. After the waiter came over, Tony got up, introduced himself, asked if he could join me and that is how we became friends…
 
No, no, no, nothing in the romantic department… just good pals!
 
Tony’s roots are East Indian and because of him, I was introduced to many delicious new dishes. I always enjoyed spicy food (more now than ever) so it was very easy for Indian cuisine to become one of my favorites.
 
One day, I asked Tony to show me how to cook this flavorful cuisine and to my surprise, he wasn’t as knowledgeable as I had thought. He asked his mother to come over to his place and show us a few dishes. That is when I was introduced to Mango Chutney! OMG! What a great condiment!
 
It’s an amazing chutney to have in your kitchen. It’s tangy, sweet with a bit of kick but not enough to be overpowering and take over the dish. This Mango Chutney is so versatile because it can be used in recipes such as Hawaiian Chicken Curry, as a spread in sandwiches, topping for burgers & hot dogs, or served along with a cheese tray, pâté, cured meat and so on…
 
There are certain recipes you cannot miss out on and this Mango Chutney is one of them. It’s a condiment that definitely has the right to be in your refrigerator…

Beef Meatloaf Recipe - Moist, Flavorful & Delicious! | Club Foody

There are fast-food recipes, healthy recipes, dessert recipes, elegant recipes and every day recipes which we like to call… “comfort foods”.
 
As a passionate home cook, I enjoy creating different recipes and push myself to excel in different categories using different ingredients, techniques and flavors. This is so much “fun” for me. There’s such great personal satisfaction when I create a recipe mixing herbs, spices and ingredients and obtain delicious end results with a “new” dish.
 
Nonetheless, I also enjoy making recipes that aren’t fancy or complicated. Recipes that we grew up with that we call “comfort foods”. Depending on where we’re from and what our parents served us, these are our “every day recipes”.
 
In North America, who didn’t grow up eating Meatloaf? This dish is popular in the United States as well as in Canada but interestingly enough, meatloaf is also common in many other countries worldwide. Everyone likes to call theirs the “best” meatloaf and we all add our own list of special ingredients that makes them unique.
 
My Beef Meatloaf is like most Canadian recipes except I add a couple of ingredients that differ from the rest. I use my own Onion Soup Mix simply because that’s the way I am (if I can make it at home, why buy it?) and I also use a key ingredient that keeps the meat moist and juicy.
 
I could have posted this recipe in Club Foody’s early years but I didn’t because I thought it was too “pedestrian” to share with you. The reason why I’m sharing my Beef Meatloaf now is because David insisted I publish it. As hard as it is to believe, this is one of David’s favorite comfort food recipes that he really enjoys. When we spent over a month in the Palm Springs area last October, he made a special request for this dish along with my Mixed Mashed Potatoes and Green Beans with Chili-Orange Oil of course! Men can be hard to understand sometimes… lol!
 
This Beef Meatloaf recipe is quick and easy to make with terrific flavor. This is “comfort food” at its best and everyone in your family will love it… even when you’re vacationing somewhere!

Seafood Cocktail Sauce • Tasty and Versatile! | Club Foody


When I was back in Toronto running my event planning company along with my part-time bartending job, it wasn’t hard to know a lot of people. Everywhere I went in the GTA, I was assured to see someone I knew or who knew me.

When I was putting a dinner party together at my place, I ended up with a large group a several times. Having a few friends over is one thing but when there’s a group of 15-20+, the menu has to be more “convenient” if I may say. Not that I didn’t serve great food but I definitely have to think about the logistics of making it. Preparing a quick & easy, delicious and not too complicated meal was the way to go.

One time I was entertaining a large group of people and for an appetizer, I decided to serve shrimp cocktail; easy, uncomplicated, fast and a favorite with my guests. It was a perfect choice until I ran out of that lovely sauce that is served with it. Acting quickly, I had to make one from scratch and that is when I started making my own Seafood Cocktail Sauce!

Like most homemade recipes, this sauce is far better than the ones from the store. It’s tastier, fresher and you can make this Seafood Cocktail sauce as hot or mild as you want. It’s super-fast to make and much more economical. This homemade version is a fraction of the cost of what you would pay at the store so why not make it from scratch.

Like I often say – “Homemade is far better!” and this recipe is no exception. After quickly mixing a few ingredients together… tada… you have an incredible Seafood Cocktail Sauce to serve your guests.

Kiwi Vodka Sorbet - A Great Palate Cleanser! | Club Foody


Everywhere I’ve lived, I always like to host dinner parties at my place… anything from casual to formal and everything in between. I love doing that. When it comes to casual, semi-casual or a semi-formal dinner, for me it’s easy breezy. When I really want to put on a “big” dinner, I need a little bit more organization.
 
I plan my menu carefully, then select the wines to pair with the courses and finally the desserts. This is usually between a 5 to 8 course dinner. I never went further than an 8 course meal. A traditional 8 course meal typically includes; hors d’oeuvres, soup, appetizer, salad, main course, palate cleanser, dessert and mignardise (small bite-sized dessert).
 
Now what I prefer to do is this; hors d’oeuvres, soup, appetizer, salad, main course, cheese and dessert. Technically cheese is only served during a 12 course meal. I choose adding cheese instead of mignardise because in my opinion this is just too much “sugar”. Did I ever mention that I have a love affair with cheese? Yes, I do! Actually I also have a nickname given to me by friends and family… Minnie Mouse!
 
Now back to the formal dinner. After the main course, serving a palate cleanser is the way to do it properly. It rinses the mouth and gets your palate ready for the next two courses which are cheeses and desserts. Here’s a great recipe you will love to use at your next formal dinner… my Kiwi Vodka Sorbet!
 
This is a very light recipe plus it is also super quick and easy to make. As the title mentions, there’s vodka in it but it’s not really noticeable unless you drizzle a little over just before serving this kiwi vodka sorbet. If there will be children at the reception, you can always substitute lime juice.
 
With many holidays and events coming up, you’ll probably serve a formal dinner sometime soon and to make it successful, everything is about the details including this Kiwi Vodka Sorbet palate cleanser. Adding this little touch alone will make your guests feel extremely special and thankful…

Kiwifruits - How to Peel Quickly - Tips & Tricks | Club Foody

I don’t think there’s a fruit that I don’t enjoy. They all have their own specific flavor. Some of them are sweet while others are slightly bitter with or without seeds. Throughout the year, I like to buy what the season has to offer and during the winter I like to buy kiwifruits though I still buy them all year round. I really love their unique taste while David is not so crazy about them. I find them… refreshing!
 
Years ago while I was living in Windsor, I was helping a girlfriend of mine to prep her winter fruit salad by peeling, cubing and slicing them. I thought I was doing a good job until I got my hand on the kiwis. When she saw how I was handling them, she stopped me right away and showed me her way. In seconds, the fruit was peeled… that was a cool trick!
 
In this video tutorial, I’ll share her trick with you… Kiwifruits – How to Peel Quickly! This is an easy way to rapidly prep this fruit. I know that most of you are cutting the ends off and then peeling the fuzzy skin off with a knife… I was doing it the same way back then BUT now there’s another way to do it. Besides a sharp knife, you’ll need another utensil; a tablespoon… how easy is that?

Mille-Feuille - Scrumptious French Pastry! | Club Foody


It seems that in every family there’s someone who’s a baker. In mine, it was one of my aunts that was very talented when it came to baking. She was making cakespastries, pies, biscuits, petit fours, tarts, ice creampuddings, custards, cookies, chocolate bars or any other sugary confections anyone could imagine. She was talented… it was in her blood!
 
She showed me a few of her recipes such as St. Honoré Cake, Crème Brûlée, Boston cream pie, Pecan Butter Tart, Baklava, Truffles, Tiramisu, and many more. Today I’m sharing one of them with you that she taught me… Mille Feuille!
 
This French pastry is simply an OMG! There’s a beautiful custard filling between layers of flaky puff pastry, topped with icing and chocolate stripes… yummy! Besides Chocolate Éclairs, this Mille-Feuille is another one of my ultimate favorite pastry desserts!
 
This recipe is a quicker version of the “real” thing. I don’t show you how to make puff pastry from scratch nor do I top it with fondant. In the near future I will show you how to make homemade puff pastry which honestly isn’t that complicated. Now for the fondant, I’m sorry but I won’t be any help as I’m not too sure how to make it…
 
When I host a dinner or other special occasion, this is one of the pastries I like to serve. The taste is phenomenal and what better time to indulge ourselves than making this lovely Mille-Feuille at your next event!

Pancetta Vegetable Frittata - Great Egg Dish! | Club Foody


When I cook a meal, I’m usually pretty good to portion out the correct amount for the number of people I will be serving. Of course, if someone decides to eat less, I will end up with some leftovers. Most of the time I don’t mind having extra food sitting in my refrigerator but when it comes to cooked vegetables… not so much! The next day, most of them are soggy, less flavorful and visually not so appealing…
 
I don’t like to eat something that I don’t enjoy just for the sake of not throwing it in the garbage. The day after “cooked vegetables” is definitely my best example of this unless you make this yummy recipe… my Pancetta Vegetable Frittata!
 
This is an egg dish that I love to make either when I’m stuck with leftover cooked vegetables or when I want to empty my crisper. It is so tasty and easy to make. Another plus about this pancetta vegetable frittata is that it can be served for breakfast, brunch, lunch or dinner… it all depends on what you’re serving it with.
 
In the video I cooked all the vegetables (except the potatoes) as I’m progressing with the recipe but when using up leftovers, the recipe goes much faster. You can prep it in 5 minutes and cook it for 15… not bad for such a tasty meal that’s ready in just 20 minutes!
 
With Easter coming, you’ll probably have people spending the weekend with you, this is an amazing recipe to make. You’ll be surprised how incredibly colorful and flavorful this Pancetta Vegetable Frittata is!

Tandoori Chicken Recipe • Oven Baked Goodness! | Club Foody

When I was living in Toronto, I had a couple of East Indian friends, Tony and Siva. They were both fun to hang out with. We sure had a lot of good laughs together. Although they were westernized in their way of dressing and thinking, they still kept their culture and tradition… When you really think about it, we all do…
 
One thing that was fun to do especially with Tony was to go out. We always tried new places, new food, and new neighborhoods. Also Tony helped me to discover more about Indian cuisine by going out to his favorite spots. Now if his mother was coming as well, we were assured that this particular evening would turn into a “party”… she was absolutely amazing!
 
As much as the Brampton area outside of Toronto has a high concentration of East Indian, Pakistanis and other cultures from the Middle East, so does Surrey and Delta in British Columbia. It’s great because finding ingredients is much easier.
 
I enjoy their cuisine for many reasons; it’s spicy, flavorful and generally quite easy to make. Besides my Indian Butter Chicken, I couldn’t resist to share another one of my takes on an Indian recipe… my Tandoori Chicken. I love this dish! It’s straight forward, spicy, easy to prep and the results are incredible!
 
The traditional Tandoori Chicken is prepared in a cylindrical clay oven and obviously I don’t own one nor am I thinking of getting one. The next best thing to get pretty close to the real thing is to oven bake the chicken. By the time the drumsticks are cooked perfectly and the skins darken, the results are very delicious!
 
I won’t lie to you and say that this dish isn’t spicy but it is also packed with incredible flavors. I like to serve my Tandoori Chicken with rice such as my Indian Basmati with Dry Fruits and some Indian Naan Bread to tame down the heat. Don’t be afraid to give this dish a try… your taste buds will definitely thank you.

Rustic Italian Pizza Dough - A Creative Crust! | Club Foody


David and I enjoy having homemade pizza at least once a month. It’s so easy to make plus it’s economical. What’s great about making your pie at home is you can create new taste sensations with ingredients sitting in your refrigerator. It’s also a great way to use up any leftovers.
 
Now if you really want to go the whole nine yards, making your own pizza dough is absolutely amazing. Contrary to what people might think, it’s not difficult at all and it is so rewarding. I love the smell of dough while it’s proofing and going step by step to the final product… awesome!
 
As you might guess, I like variety and of course I wouldn’t be satisfied with only one dough recipe therefore I had to create others like this one… my Rustic Italian Pizza Dough! This pie dough is incredible! With sun-dried tomatoes and other popular ingredients used in Italian cooking, this is a unique recipe you won’t find at your local pizzeria.
 
The secret to making good pizza dough is to not rush anything. You have to let it rise a couple times and the entire process takes about 2 hours. When it’s time to roll it out, if the dough starts shrinking, take a break and let the gluten settle down.
 
Besides today’s Rustic Italian Pizza Dough, a few years ago, I shared another one with you … my Easy-Cheesy Herb Pizza Dough. It’s also a lovely recipe but as I mentioned earlier, there are more dough recipes that I’ve created like my Ancient Multigrain, Healthy Cauliflower and Mushroom Lovers plus a couple more that I’m still working on… so stay tuned.
