One-Pot Mediterranean Chicken Orzo Recipe | Club Foody

 

With back to school 📚 and people returning to work with regular schedules, everyone looks for convenient, easy recipes. The most popular ones are certainly the famous ‘one-pot’ meals, which are usually budget-friendly and require minimal cleanup after a long day at work.

One that is incredibly delicious is my One-Pot Mediterranean Chicken Orzo! With a gorgeous combination of ingredients along with marinated chicken thighs and pasta, this is a satisfying meal your family will love. It makes cleanup 🧼 a breeze, plus it reheats very well!
 
What goes into this dish are the typical fall ingredients found on the grocery shelves or at your farmer’s market 👩‍🌾👨‍🌾: onions, bell peppers, zucchini, and tomatoes. To this Southern European recipe, I like to add some sliced black olives, which bring earthy flavor, saltiness, and color to the dish.
 
After being quickly sautéed until no longer pink, the marinated chicken thighs 🐓 are transferred to a bowl using a slotted spoon and set aside. It’s important not to fully cook the protein, as it will return later to the skillet to finish the process – don’t worry, the thighs will be juicy, and tender.
 
The onions are added to the skillet and quickly sautéed for a couple of minutes. I like using them 🧅, especially when there’s some fat and liquid left behind in the pan, as they soak it up. Next, are the bell peppers. I use red and yellow, but if you have green or orange in your crisper, use them up.
 
What makes this One-Pot Mediterranean Chicken Orzo even more interesting is its flavor profile. While recipes 📃, in general, are oriented toward one specifically, this dish can be switched between Italian or Greek, depending on what you have on hand.
 
For an Italian flair, Italian seasoning and Parmesan cheese are used, or swap them for Greek seasoning and feta cheese. The rest remains the same, as the ingredients are used in both cuisines. One that is not a traditional Italian spice is smoked paprika, although in modern recipes, chefs 👩‍🍳👨‍🍳 are using it more often.
 
Orzo pasta goes in, and the mixture simmers for 17 to 20 minutes, or until the liquid is mostly absorbed. David and I prefer it when there’s barely any, so I always go for the full 20 minutes ⏰, but cook yours to your liking… after all, this is your one-pot meal!
 
When time is up, the heat is turned off, and the cheese 🧀 goes in. As I mentioned above, add the one for the version you chose. For the finishing touch, I sprinkle on chopped parsley, an ingredient I use a lot in my recipes. It provides powerful antioxidants, a large amount of vitamins, which supports kidney health, and more.
